- Combine peaches and teriyaki sauce in cooker and stir. Dip chicken in sauce, then set on top of peaches or use a cooker insert rack and set chicken on top of rack. Lock lid, cook on HIGH for 10 minutes, quick release cooker, remove chicken and set aside. Thicken liquid and peaches by combining cornstarch with 2 T water, then stir into cooker on high or brown, with lid off, until the thickness you desire. Return chicken to sauce to fully coat before serving. Goes great with instant white rice making this a tasty Caribbean/ Asian flair dish. Grilled peach slices make a nice garnish.

- In a large skillet over medium heat, brown chicken in oil and butter; remove and keep warm. Stir in the peaches with juice, brown sugar, orange juice and soup mix to the skillet. Bring to a boil; cook and stir for 2 minutes. Reduce heat; return chicken to the pan. , Simmer, uncovered, for 15-20 minutes or until a thermometer reads 170°. Serve with rice if desired.

PRESSURE COOKER CHICKEN WITH 40 CLOVES OF GARLIC
Typically, chicken with 40 cloves of garlic needs to cook for a long time to mellow out all that garlicky sharpness, but in this recipe, a pressure cooker softens and sweetens the garlic in record time. Still, 40 cloves is for the most dedicated garlic lovers, so feel free to reduce the quantity if you like; the recipe will work all the same. The addition of beans to the classic dish makes it a one-pot meal. The chicken skin won't be crisp at the end of cooking, so if that bothers you, discard it afterward - it will have done its duty, imparting deep chicken flavor to the dish - or you could place the thighs on a baking sheet and set them under the broiler to brown just before serving.

- Season the chicken generously all over with salt and pepper. Turn on the sauté setting of a 6- to 8-quart electric pressure cooker and warm the oil. Add the chicken, skin-side down, and sear until the skin is browned and releases easily from the pot, 6 to 8 minutes. (If you have more than 4 thighs, you may need to do this in two batches.) Using tongs, remove the chicken.
- Add the garlic and sauté, stirring constantly, until just softened, about 2 minutes. Add the red-pepper flakes, and toast, stirring constantly, about 30 seconds, then add the white wine and vinegar. Stir well, scraping up all the browned bits. Turn off the sauté setting.
- Stir in the beans and thyme. Season lightly with salt and generously with pepper. Nestle the chicken thighs on top, skin-side up. Cook on high pressure for 12 minutes.
- Allow the pressure to reduce naturally for 10 minutes, then release the remaining pressure manually. Squeeze in the lemon juice and fold in the scallions and parsley. Serve the beans and chicken in shallow bowls.

- Place the peaches in a food processor and process to a smooth puree. Add the oil and honey and process briefly to blend; transfer to a large resealable plastic bag. Add the chicken pieces and close, squeezing out the air. Chill for 15 minutes (or you can do it the day before).
- Prepare the grill (gas grill at medium; charcoal grill arranged for indirect heat), heat a grill pan over medium heat, or preheat the broiler. Remove the chicken pieces from the bag and place on a plate. Season lightly with salt and pepper and transfer to the grill. Cover and cook until charred underneath, 4 to 5 minutes. Turn and cook until charred and firm when poked with a finger, 4 to 5 minutes more.

This is a scrumptious recipe for a warm summer evening when you've JUST canned up a batch of fresh peach jam. The original recipe called for apricot jam, but we always have peach, so that's what I used--a great substitute.

- Preheat oven to 375 degrees.
- Add flour, salt and pepper to storage bag and shake chicken breasts to coat.
- Place butter and cooking oil in frying pan and add chicken; brown on each side.
- Place browned chicken in a greased casserole dish.
- Mix orange juice, vinegar, brown sugar, basil and nutmeg together and pour over chicken breasts.
- Cover and bake for 1 hour and 15 minutes basting often.
- Removed from oven; place peach halves between chicken pieces and baste.

- Toss chicken with garlic powder, salt, and pepper to combine. With pressure cooker lid off, heat butter on high or brown setting, until melted and sizzling. Place seasoned chicken in cooker, browning on both sides, then pour in chicken stock. In a small combine, garlic, honey and soy sauce. Pour mixture over top of chicken in pressure cooker. Secure lock pressure cooker's lid and set for 8 minutes on high. Perform quick release to release the cooker's pressure, then serve immediately.

- Combine the flour, salt, pepper, and paprika in a shallow dish. Dredge chicken pieces. Set flour mixture aside.
- In a skillet, heat oil over medium heat, and brown chicken pieces. Transfer browned chicken pieces to an oiled baking dish. Set aside.
