6 slices Italian bread, about one-third of a 1 lb. loaf (1/2 inch bias slices)
1/3 cup refrigerated basil pesto
3 ounces thinly sliced prosciutto
1 (14 ounce) can artichoke hearts, drained and thinly sliced
1 (7 ounce) jar roasted red peppers, drained and cut into strips
12 ounces cooked chicken or 12 ounces turkey, cut into bite size strips, about 2 1/4 cups
4 -6 ounces shredded provolone cheese

Steps:

  • Preheat oven to 450°F.
  • Lightly spread pesto on one side of each bread slice.
  • Top slices with prosciutto, artichoke slices, red pepper strips, and chicken strips.
  • Place sandwiches on a large foil lined cookie sheet.
  • Cover loosely with foil.
  • Bake about 8 minutes or till nearly heated through.
  • Uncover sandwiches and sprinkle with cheese.
  • Bake 4 to 5 minutes more or till cheese melts.

1/2 cup mayonnaise
1/3 cup roasted red peppers, finely chopped
1 tablespoon fresh lemon juice
2 to 3 pepperoncini, finely chopped
1 clove garlic, grated
Kosher salt and freshly cracked black pepper
1(12 to 14-inch) loaf ciabatta bread, sliced in half lengthwise
5 ounces herbed goat cheese
1/4 pound prosciutto, thinly sliced
1/4 pound salami, thinly sliced
1 cup marinated artichoke hearts, drained and sliced
2 cup loosely packed arugula
Balsamic vinegar, as needed
Kosher salt and freshly cracked black pepper

Steps:

  • For the spread: Combine the mayonnaise, roasted red peppers, lemon juice, pepperoncini and garlic in a small mixing bowl and whisk until combined. Season the spread with salt and pepper and set aside. For the sandwich: Scoop out the center of each bread half, creating a hollow space for all the ingredients. Spread the herbed goat cheese on both sides of the bread and then add the roasted red pepper and pepperoncini spread. On the bottom half of the bread, lay the slices of prosciutto, salami and top with the artichokes. Top with the arugula, drizzle with balsamic vinegar and season with salt and pepper. Place the top half of the bread on top and wrap tightly in plastic wrap. Place the sandwich on a baking sheet and top with another baking sheet. Place a heavy pan (like cast iron) on the top baking sheet and store in the refrigerator, for at least 4 hours and up to overnight to allow the flavors to marry together. (If you can't fit 2 sheet trays in your refrigerator, just use the heaviest pan you have.) To serve, unwrap the sandwich and slice into 8 to 10 individual servings.;

If you prefer to serve prosciutto without the mayonnaise, the spread here can be replaced by tomato slices sprinkled with a little chopped rosemary.

1/2 cup mayonnaise or low-fat mayonnaise
1 tablespoon minced fresh rosemary or 1 teaspoon dried
1 tablespoon fresh lemon juice
4 6-inch long sections crusty Italian bread, split lengthwise
2 6-ounce jars quartered marinated artichoke hearts, drained
12 thin prosciutto slices
8 ounces Bel Paese cheese rind removed, sliced

Steps:

  • Preheat broiler. Mix mayonnaise, rosemary and lemon juice in small bowl. Season generously with pepper. Spread mayonnaise over cut sides of bread. Place bottom slices on broilerproof pan. Arrange artichokes over bread, dividing equally. Top with prosciutto slice, then with cheese slices.
  • Broil sandwiches about 6 inches from heat source until cheese melts and is golden, about 3 minutes. Close sandwiches; cut sandwiches in half and serve.

4 ciabatta* rolls (about 4 inches square) or a long loaf (about 20 inches) French or Italian bread
about 1/2 cup rosemary fig confit
1/4 pound thinly sliced prosciutto
1/4 pound Brie, cut into thin slices
For rosemary fig confit
1 cup dried Calimyrna figs, chopped fine
1/2 cup dry white wine
1/2 cup water
3 tablespoons honey
1 teaspoon chopped fresh rosemary leaves
*Ciabatta rolls are available at some specialty bakeries.

Steps:

  • Make sandwiches:
  • With a serrated knife halve rolls horizontally or cut loaf diagonally into 4 pieces, halving each piece horizontally.
  • Spread cut sides of bread with confit and make 4 sandwiches with prosciutto and Brie.
  • Make rosemary fig confit:
  • In a 1 1/2-quart heavy saucepan stir together ingredients and simmer, covered, 20 minutes. Remove lid and simmer mixture, stirring occasionally, until most liquid is evaporated and mixture is thickened. In a food processor coarsely purée fig mixture. Confit may be made 5 days ahead and chilled, covered.
  • Bring confit to room temperature before using. Makes about 1 1/4 cups.

1/3 cup sun-dried tomatoes (not packed in oil)
8 slices Italian bread (1/2 inch thick)
8 spinach leaves

  • In a large skillet, saute the artichokes, pepper and onion in oil until tender; stir in cheese. Remove from the heat., In a food processor, combine mayonnaise and tomatoes; cover and process until finely chopped., Spread four bread slices with half of the mayonnaise mixture; layer with a spinach leaf, artichoke mixture and remaining spinach. Spread remaining bread with mayonnaise mixture; place on top. Butter outsides of sandwiches., On a griddle, toast sandwiches for 2-3 minutes on each side or until bread is lightly browned.
