Time 25m

Yield 4 serving(s)

Number Of Ingredients 10

8 pork chops, boneless, 3-4 ounces each (1/4 inch thick)
8 slices prosciutto
1/2 cup all-purpose flour
4 tablespoons vegetable oil
6 garlic cloves, sliced thin
1 cup chicken broth, low sodium
1 tablespoon lemon juice
1 teaspoon fresh sage, minced
2 tablespoons unsalted butter
salt and pepper

Steps:

  • Pat pork chops dry with paper towels. Lay 1 slice prosciutto on each chop. Cover chops with plastic wrap and, using meat pounder, pound each until 1/8 inch thick. Dredge cutlets in flour, shaking to remove excess flour.
  • Heat 2 tablespoons oil in large skillet over medium-high heat until just smoking. Add half of cutlets, prosciutto side down, and cook until light golden brown on first side, about 3 minutes. Flip cutlets and cook until just cooked through, about 1 minute. Transfer to plate, tent with foil, and repeat with remaining oil and cutlets.
  • Add garlic to empty skillet and cook until fragrant, about 30 seconds. Add broth and simmer, scraping up browned bits with wooden spoon, until reduced by half, about 5 minutes. Add accumulated pork juices back to pan and whisk in lemon juice, sage, and butter. Season with salt and pepper and pour sauce over cutlets. Serve.

Time 45m

Yield 4 serving(s)

Number Of Ingredients 12

1 pork tenderloin, trimmed
8 -10 pieces prosciutto, thinly sliced
black pepper, fresh cracked
fresh thyme sprig
2 tablespoons vegetable oil
1 1/4 cups chicken broth
2 tablespoons flour
2 garlic cloves, minced
2 teaspoons fresh thyme, minced
1/4 cup lemon juice, scant
3 tablespoons chives, minced
salt & pepper

Steps:

  • Adjust your oven rack to the middle position and preheat your oven to 450. Line a baking sheet with foil and set a wire rack on top of it.
  • Rinse and pat dry the pork tenderloin. Season with fresh cracked black pepper and overlay with thyme. Then wrap tenderloin in prosciutto.
  • Heat 2 tblsp oil over medium heat in a skillet or braiser. Brown each side of your tenderloin, approximately 5-7 minutes per side. Transfer meat to wire rack set in foil lined baking sheet. Bake until meat registers 145 degrees, approximately 15-18 minutes.
  • Meanwhile, deglaze pan used to brown tenderloin by pouring in the chicken stock. Bring to a simmer. Then whisk in the flour until sauce begins to thicken. Whisk in garlic, thyme, and lemon juice. Cook until sauce is desired thickness, whisking often (approx. 5-10 minutes). Off heat, stir in the chives and a dash of salt & pepper.
  • Allow tenderloin to stand for a few minutes before slicing. Serve topped with pan sauce.

Yield Makes 6 to 8 main-course servings

Number Of Ingredients 8

12 thin slices prosciutto (about 1/4 lb)
16 large fresh sage leaves
2 (1-lb) pork tenderloins
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon extra-virgin olive oil
