Steps:
- Chop pecans and prunes together in a blender or food processor, stir in the sugar, cinnamon, cloves and lime juice. Use as a filling for cookies or pastries.

MY GRANDMA'S NATURAL REMEDY FOR CONSTIPATION (STEWED PRUNES)
My sweet grandma used stewed prunes as a natural laxative, but my mom likes to eat them as a simple and healthy dessert because slow simmering softens and thickens dried plums into a sweet syrupy goodness. Healthier than taking Ex-lax.

Steps:
- In a small saucepan, place prunes, water, and orange juice. Bring to boil, cover, and simmer for 30 minutes.
- Prunes will absorb most of the water, and the remaining water will thicken into a consistency of syrup. If there is a lot of liquid remaining, simmer, uncovered, for a few minutes until sauce reduces.
- Transfer hot prunes and syrup to a bowl. Pour cold milk over the prunes to cover. Eat with a spoon.
- HINT: This remedy should work within 24 hours and can be safely eaten as often and as long as needed.
- NOTE: If you do not have constipation and just like the taste of stewed prunes, you may add 1/8 teaspoon of ground cinnamon to the prunes mixture before cooking (Cinnamon, oranges, and prunes pair well together.) However, do not add the cinnamon if you are using this for constipation because cinnamon is used as a natural cure for diarrhea and will have the opposite effect of a laxative.
- One cup prunes contains 1274 mg of potassium, which prevents muscle cramps, and 12 grams of fiber to relieve constipation.
PRUNES STUFFED WITH WALNUT CANDY

- 1. Put a small bowl of cold water next to the stove. Melt the butter in a heavy saucepan. Add the sugar and bring to a boil over low heat, stirring constantly, until the sugar dissolves and starts to bubble. Add the orange juice and bring to a brisk boil, stirring, until the mixture makes a soft ball in cold water, about 5 minutes. (Test by dropping a very small amount of the syrup off the spoon into the water, and if it holds together when you pinch it, its ready, or if it registers 236° on a candy thermometer. 2. Remove the pan from the heat and cool the syrup without stirring, until lukewarm, 6 to 8 minutes. Stir in the confectioners' sugar until completely blended. The mixture will be thick and stiff. Stir in the nuts and vanilla. 3. Using your hands, form the nut mixture into small rounds to stuff into the prunes. Arrange on a plate. PRUNES STUFFED WITH WALNUTS IN ORANGE JUICE

- Make the hole in each prune a little wider with your finger and stuff each with a walnut half. Put them in a pan, cover with orange juice, and simmer over low heat for 20-30 minutes, or until they are soft, adding a little water if they become too dry. Serve chilled as they are, or with the topping.
- For the optional topping, whip the cream until it thickens, and add sugar and rose water. Pour all over the prunes and chill together before serving, or pass round in a bowl for people to help themselves.
- Variation
- Instead of orange juice, use a half-and-half mixture of water and red wine. This was done in Jewish households.
PORK LOIN STUFFED WITH PRUNES
Steps:
- Preheat oven to 325 degrees. Soak prunes in wine, if you wish, for as long as possible. Drain prunes, reserving wine. With a long sharp knife, make a slit in the center of the loin and stuff it with prunes (reserve prunes that won't fit into pork).
- In a large casserole heat butter. When foaming subsides add the onion or leek, celery and carrot. Cover and cook for 5 to 8 minutes or until the vegetables are tender. Remove them with a slotted spoon and reserve for later. Add vegetable oil to the casserole and heat. When hot, add the loin and brown on all sides, including the ends. When pork is browned, remove it to a plate. Discard all fat from the casserole, but leave behind any drippings. Return cooked vegetables to the bottom of the casserole. Add the meat on top and add any prunes which didn't fit into the loin.
- Cover loin with reserved white wine you soaked the prunes in, broth, bay leaf and garlic. Put a lid on casserole and set in oven. Cook for 1 and 1/2 to 2 hours or until pork juices run a clear yellow (difference in time depends on how thick the loin is; internal temp is 165 degrees). Remove casserole from oven and remove the pork and let rest while you make the sauce. Strain the juices into a "degreasing" cup or heat-resistant cup. Discard aromatic vegetables and prunes. The fat will rise above the juices; discard it. Return juices to casserole and boil down until thickened. Finish with a tablespoon of butter or not as you wish. Slice pork into thin slices, serve with saffron rice, sugar snap peas and spoon sauce over the top.
PRUNES POACHED IN RED WINE
Steps:
- Tie the orange zest and peppercorns in a piece of cheesecloth and place in a large saucepan. Add the orange juice, wine and sugar and stir to combine. Place over medium heat and simmer for 10 minutes. Remove from heat and add the prunes. Refrigerate overnight. Serve at room temperature, spooned over vanilla ice cream.

This moist cake was a favorite of mine as a child - probably because it meant I could have cake for breakfast! Moist, spicy and delicious any time of day!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch tube pan.
- In a large bowl, mix the shortening and sugar with an electric mixer until smooth. Mix in the eggs one at a time, then stir in the vanilla and prunes. Sift the flour, allspice, nutmeg, cinnamon, salt, baking powder and baking soda into a large bowl or onto a sheet of waxed paper. Stir in the dry ingredients 1/3 at a time, alternating with the buttermilk. Mix in the walnuts if using. Pour batter into the prepared pan.
- Bake for 50 minutes in the preheated oven, or until a toothpick inserted in the crown of the cake comes out clean. Cool on a wire rack for at least 10 minutes before inverting onto a serving plate.
