ULTIMATE BBQ SAUCE
Smoky, sweet, zesty and savory, this homemade BBQ sauce has it all! Ready in 15 minutes with the perfect balance of flavors, it's just what your backyard barbecue needs!

- Place all the ingredients in a medium saucepan and stir together. Bring to a boil, then reduce the heat to a simmer and cook for 15 minutes. If you prefer the sauce thinner, stir in a little water. If you prefer it thicker, let it simmer a little longer. Let the sauce cool completely before storing in the fridge.This BBQ sauce can be eaten right away but for best results let it chill overnight to allow time for the flavors to meld.Store it in the fridge in sealed non-reactive container where it will keep for 2-3 weeks.Makes about 2 1/2 cups.

- For the lemon curd: Fill a saucepan just over one-quarter full with water and bring to a simmer over medium-low heat. In heatproof bowl that fits over the saucepan, combine the lemon juice and cornstarch and whisk well to combine. Place the bowl on top of the saucepan and add the butter and sugar. Whisk constantly until the sugar is dissolved, and then add the eggs slowly, a bit at a time, continuing to whisk until the mixture thickens. Remove from the heat and stir in the lemon zest. Let cool, and then place in the fridge to chill and firm up.
- For the raspberry sauce: Combine the prosecco, sugar and raspberries in a large saucepan and bring to a simmer over medium heat. Stir to mash up the berries a bit. Simmer until the liquid is reduced and syrupy, 5 to 10 minutes. Set aside.
- For the puff pastry: Preheat the oven according to package instructions. Unfold the puff pastry on a lightly floured surface. Cut the pastry into 16 squares or cut 16 rounds using a cookie cutter. Place the pastry on a baking sheet and brush each with the egg wash. Bake according to package instructions.
- For the whipped cream: Whip the heavy cream with the limoncello, sugar and lemon zest.
- To serve, place 2 pastry pieces on a plate and top with lemon curd, raspberry sauce and whipped cream. You will have some leftover lemon curd.

SWEET & SPICY BARBECUE SAUCE

- In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute. Stir in the chili powder, cayenne and pepper; cook 1 minute longer. , Stir in the ketchup, molasses, vinegar, Worcestershire sauce, mustard and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, for 30-40 minutes or until sauce reaches desired consistency. Cool for 15 minutes. , Strain sauce through a fine mesh strainer over a large bowl, discarding vegetables and seasonings. Store in an airtight container in the refrigerator up to 1 month. Use as a basting sauce for grilled meats.

A hot-sweet sauce that is good on just about anything. You can use any kind of cola in this recipe, just don't use diet cola. It makes the sauce bitter.

- In a sauce pan over medium heat mix all ingredients together, just until well blended and honey and molasses are melted. Do not boil.
- This will make enough bbq sauce for about 3 racks of ribs. In a covered roasting pan, pour bbq sauce over ribs and bake at 200 degrees for about 3-4 hours, basting and turning often.
PIG PICKIN SAUCE BY MEAN CHEF
Adopted recipe. Please note that this is not a sweet BBQ sauce at all. If you are looking for a "Memphis" or "Kansas City" style sauce, with tomatoes and molasses or brown sugar, please look elsewhere or you will be disappointed. Eastern North Carolina is where you would find the original inspiration for this. Traditionally, a whole hog is cooked and this style of sauce is used both for the mop and on the side. I really like this stuff, it's a nice change from sweet sauces and makes a dynamite mop, as well. Keeps in a covered container in the fridge almost indefinitely.
