CASHEW SAUCE

1/2 cup cashew butter, recipe follows
3/4 cup coconut milk
1/4 teaspoon cayenne pepper
Salt, optional
2 tablespoons honey
1/3 cup walnut oil
10 ounces (approximately 2 cups) roasted cashews
1/2 teaspoon salt

Steps:

  • Whisk the butter, milk, and pepper together in a medium saucepan over medium heat. Taste and add salt, if desired. Heat until sauce is warmed through. Serve over grilled chicken, pork, or rice.
  • Place the honey in a microwave-safe container and heat in the microwave for 15 seconds. Remove from the microwave and add the oil to the container. Place the nuts and salt in the bowl of a food processor and pulse for 5 seconds. Then, while the processor is running, very slowly drizzle in the honey and oil. Process until an emulsion is formed and the mixture is smooth; this will take approximately 45 seconds to 1 minute. If the mixture is too thick and doesn't spread easily, add a little more oil.

4 cloves garlic, minced
4 tablespoons brown sugar
2 tablespoons fish sauce
4 teaspoons soy sauce
2 teaspoons toasted sesame oil
1 medium lime, juiced
1 tablespoon chili-garlic sauce
1 (14 ounce) can coconut milk

Steps:

  • Put cashew butter in a bowl. Whisk garlic, brown sugar, fish sauce, soy sauce, and sesame oil together. Add lime juice and chili-garlic sauce.
  • Bring coconut milk to a simmer in a pot over medium heat. Pour warm coconut milk into the cashew butter mixture and whisk until smooth. Taste and adjust as needed. Transfer to a serving dish.

1 cup all-purpose flour
½ cup butter, softened
¼ cup white sugar
½ teaspoon sea salt
1 cup butter, softened
½ cup brown sugar
⅓ cup honey
1 ½ teaspoons sea salt
½ teaspoon pure vanilla extract
¼ cup heavy whipping cream
1 ½ cups salted cashews

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch glass baking pan with parchment paper.
  • Combine flour, 1/2 cup butter, white sugar, and 1/2 teaspoon salt in a bowl. Press crust mixture into the bottom of the prepared pan.
  • Bake in the preheated oven until crust is golden brown, about 20 minutes. Let cool.
  • Clip a candy thermometer to the side of a saucepan over medium-high heat. Melt 1 cup butter in the saucepan. Add brown sugar, honey, 1 1/2 teaspoon sea salt, and vanilla extract. Cook and stir until mixture reads 220 degrees F (104 degrees C) on the thermometer, 2 to 3 minutes.
  • Stir heavy cream slowly into the honey mixture. Add cashews. Cook, stirring occasionally, until mixture begins to harden and reads 238 degrees F (114 degrees C), 4 to 5 minutes. Pour topping over the crust. Let cool until firm to the touch, at least 1 hour. Lift out of the pan and cut into 1-inch pieces.

1 tablespoon cornstarch
1 1/2 teaspoons honey
2 tablespoons soy sauce
6 tablespoons low sodium chicken broth
2 tablespoons vegetable oil
1 medium onion, thinly sliced
3 garlic cloves, minced
1 tablespoon fresh ginger, grated
1/2 teaspoon crushed red pepper flakes
1 1/4 lbs chicken breasts, boneless skinless
6 ounces snow peas, trimmed (about 2 cups)
1 large red bell pepper, seeded and cut into strips
1/2 cup cashews, unsalted
2 teaspoons sesame oil (optional)

Steps:

  • In a small bowl, whisk 1 tbs water wit hcornstarch until smooth. Whisk in honey, soy sauce, and broth.
  • Warm oil in a large skillet over high heat. Add onion, garlic, ginger, and crushed red pepper; cook for 30 seconds, stirring constantly.
  • Add chicken and stir-fry until opaque, 5-6 minutes. Add snow peas, bell pepper and cashews, and continue stir-frying for 1-2 minutes. Stir reserved sauce and pour it in to skillet. Cook for 1-2 minutes longer, stirring constantly, until sauce is bubbling and has thickened. Drizzle with sesame oil and serve over rice if desired.

2 tablespoons peanut oil
1 1/2 teaspoons salt
2 garlic cloves, minced
1/2 teaspoon ground ginger
1/4 teaspoon black pepper
1 1/2 cups water
3 teaspoons cornstarch
3 teaspoons water
3/4 cup honey
3/4 cup cashews
2 green onions, sliced thinly

Steps:

  • Heat salt, garlic, ginger and pepper in oil.
  • Add water and honey and boil until honey dissolves.
  • Mix cornstarch with 3 tsp water until dissolved.
  • Slowly stir cornstarch water in honey mixture and whisk until desired consistancy.
  • Just before sauce is desired thickness, add cashews and green onions.
  • Serve immediately.
