This Pulled Pork Breakfast Skillet combines juicy leftover pulled pork with potatoes and eggs all fried in a skillet on the stovetop.

2 tablespoons butter or ghee
2 gold potatoes (diced to 1/2" cubes)
2 cups pulled pork
1 cup spinach
4 eggs
salt & pepper (to taste)
garnishes such as green onions, fresh dill, red pepper flakes

Steps:

  • Heat butter in a cast iron skillet over medium high heat. Add diced potatoes and cook until tender, approximately 6 minutes, flipping them over half way.
  • Add pulled pork and stir to heat the pork through.
  • Reduce heat to low. Add spinach and stir. Make 4 wells in the pan for the eggs. Add additional fat to the wells if necessary.
  • Break in the eggs into the wells. Season with salt and pepper. Cover the skillet and cook on medium-low for approximately 2-3 minutes or until eggs have cooked to desired doneness.
  • Uncover and take off heat immediately to stop the eggs from overcooking.
  • Garnish with green onions, fresh herbs and red pepper flakes.
  • Serve immediately.

½ pound sage pork sausage (such as Jimmy Dean®)
1 ½ cups cubed red potatoes
½ onion, diced
1 tablespoon chopped garlic
1 cup sliced baby bella mushrooms
3 eggs
1 teaspoon parsley
½ cup shredded Mexican cheese blend
sea salt to taste
fresh cracked black pepper to taste

Steps:

  • Place sausage in a large cast iron skillet over medium heat; cook and stir until crumbly and starting to brown, about 5 minutes. Stir in potatoes; cook until starting to brown, about 5 minutes. Add onion and garlic; cook and stir until fragrant, about 3 minutes. Stir in mushrooms; cook until tender, about 5 minutes.
  • Push mixture to the sides of the skillet with a spatula to make space in the center. Crack eggs into the center and sprinkle with parsley. Sprinkle Mexican cheese blend around mixture on the edges. Cover skillet and cook until egg whites are set but yolk is still runny, 2 to 3 minutes. Remove from heat, pierce yolks and mix to combine. Season with salt and black pepper.

1/2 cup 2% milk
3/4 cup shredded cheddar cheese

  • In a large cast-iron or other heavy skillet, cook the potatoes, onion and green pepper in butter over medium heat until almost tender. 1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
1 tablespoon vegetable oil
6 eggs
⅓ cup heavy cream
6 bacons, sliced
1 cup cheddar cheese
1 tablespoon fresh chives, chopped
ketchup, Optional

Steps:

  • Preheat oven to 350˚F (175˚C).
  • In a medium bowl, season hash browns with salt, pepper, and paprika. Toss until fully incorporated.
  • In a medium skillet, cook six slices of bacon until crispy. Set bacon aside and remove excess fat from the pan.
  • Heat oil in skillet, then spread hash browns so they take the shape of the pan and form a nest.
  • Cook hash browns for roughly 7 minutes on medium so that the bottom forms a crispy crust.
  • In a medium bowl, whisk eggs, milk, chopped bacon, and cheddar cheese.
  • Pour egg mixture over hash browns and spread evenly.
  • Bake for 20 minutes, or until the surface is golden brown and eggs are cooked through.
  • Sprinkle fresh chives, slice, and serve while hot. (This dish is delicious with ketchup or hot sauce, but that's optional.)
