- Preheat oven to 350°. In a large bowl, combine sugar and oil until blended. Add eggs, 1 at a time, beating well after each addition. Combine flour, baking soda, cinnamon, nutmeg, salt and cloves; add to egg mixture alternately with pumpkin, beating well after each addition. , Transfer to a greased 10-in. fluted tube pan. Bake 60-65 minutes or until toothpick inserted in the center comes out clean. Cool 10 minutes before inverting onto a wire rack. Remove pan and cool completely. Dust with confectioners' sugar.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- Put softened cheese, butter, and sugar in mixing bowl. Cream together well. Beat in eggs one at a time until blended. Mix in pumpkin.
- In another bowl combine flour, soda, baking powder, salt, cinnamon, cloves, and walnuts. Stir until thoroughly mixed. Pour all at once over batter. Stir just enough to moisten. Turn into greased 9x5x3 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 60-70 minutes until inserted toothpick comes out clean. Cool 10 minutes in pan. Remove to rack to finish cooling.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 8-1/2x4-1/2-inch loaf pan.
- Combine flour, baking soda, nutmeg, cinnamon, cloves, baking powder, and salt together in a large bowl.
- Beat eggs, white sugar, brown sugar, and vanilla extract in a large bowl with an electric mixer on high speed until combined, about 30 seconds. Beat in pumpkin and oil. Add flour mixture; mix until batter is blended and smooth.
- Pour batter into the prepared loaf pan.
- Bake in the preheated oven until the top is dark brown and a toothpick inserted into the center of the bread comes out clean, about 70 minutes. Let cool in the pan, about 30 minutes. Invert onto a wire rack and slice it into 1-inch thick slices.

PUMPKIN LOAF CAKE

- Preheat oven to 350 degrees F. Lightly grease the sides and bottom of an 8 ½ by 4 inch loaf pan. Set aside.
- In a medium mixing bowl, whisk together the sugars, eggs and vegetable oil until smooth.
- Add the pumpkin puree, buttermilk and vanilla to the egg mixture and whisk until combined.
- Place a fine mesh sieve / sifter over the bowl with the egg and buttermilk mixture. Add the flour, baking soda, salt and spice to the sieve and sift over the bowl with the egg mixture. Use a rubber spatula to gently fold the dry ingredients into the egg and buttermilk mixture. Blend until smooth.
- Pour the batter into the prepared pan and sprinkle with turbinado sugar, if using.
- Bake at 350 degrees F for 50 to 55 minutes or until the center is set and firm to the touch, and the cake is lightly browned and cracked down the middle.
- Remove and allow the cake to rest for 10 to 15 minutes, then remove to a wire rack to cool. Drizzle with icing if desired.

- Preheat the oven to 180C/160Fan/350F/Gas mark 4. Grease and line a 9 x 5 inch loaf tin.
- Place the flour, bicarbonate of soda, baking powder, salt, cinnamon, ginger, cloves, nutmeg and cardamom in a large mixing bowl. Whisk the ingredients together.
- In another large bowl, whisk together the brown sugar, pumpkin puree, oil, eggs and vanillla.
- Add the dry ingredients to the pumpkin mixture and using a rubber spatula or wooden spoon, stir until just combined and no pockets of flour remain.
- Pour half the mixture into the tin, then sprinkle the cinnamon sugar all over the top, keeping back two teaspoons worth for sprinkling over the top. Sprinkle with the remaining 2 teaspoons cinnamon sugar and the pumpkin seeds, if using.
- Bake for 60-70 minutes or until a skewer inserted in the middle of the cake emerges clean. Let the pumpkin bread cool completely in the pan on a wire rack before slicing.
