3 tablespoons packed brown sugar
1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon vanilla

Steps:

  • In large bowl, beat ingredients with electric mixer on medium speed until well combined. Pour spread into serving dish.
  • Cover; refrigerate at least 1 hour to blend flavors.
  • Serve spread with breads, crackers or apple slices. Store in refrigerator.

1 sheet refrigerated pie crust
1 package (8 ounces) cream cheese, softened
3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
FILLING:
1-2/3 cups heavy whipping cream
1-1/2 cups canned pumpkin
2 large eggs, room temperature, lightly beaten
3/4 cup sugar
1-3/4 teaspoons pumpkin pie spice

Steps:

  • Preheat oven to 350°. Unroll crust into a 9-in. pie plate; flute edge. In a small bowl, beat cream cheese, confectioners' sugar and vanilla until smooth. Spread into crust. , In another small bowl, whisk filling ingredients until smooth. Pour over cream cheese layer. Cover edge loosely with foil. Bake until a knife inserted in the center comes out clean, 70-80 minutes. Cool on a wire rack. Store in the refrigerator.

Two 8-ounce packages cream cheese, at room temperature
1 tablespoon pumpkin pie spice
1 1/2 cups plus 1 tablespoon confectioners' sugar
One 15-ounce can pumpkin puree
1 tablespoon pure vanilla extract
Pinch of kosher salt
1/2 cup heavy cream
1 tablespoon cinnamon sugar
One 1-pound box ginger cookies, such as Ginger Snaps

Steps:

  • Beat the cream cheese in a medium bowl with an electric mixer on high speed until light and fluffy, about 2 minutes. Add the pumpkin pie spice and 1 1/2 cups of the confectioners' sugar and beat until combined, about 1 minute. Add the pumpkin puree, vanilla and salt and beat until fully combined, 1 more minute. Transfer the filling to a 9-inch pie plate and refrigerate, covered, 2 hours and up to overnight.
  • Before serving, beat the cream in a medium bowl with an electric mixer on high until soft peaks form, about 2 minutes. Add the remaining tablespoon of confectioners' sugar and beat until combined. Dollop the cream around the edge of the pie in a circle. Sprinkle the top with the cinnamon sugar.
  • Serve with ginger cookies for dipping.

1 cup milk, plus
1 tablespoon milk, divided
1 tablespoon sugar
1 (8 ounce) carton Cool Whip
1 (9 inch) graham cracker crust
1 (15 ounce) can solid-pack pumpkin
2 (3 1/2 ounce) boxes instant vanilla flavor pudding and pie filling
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

Steps:

  • In a large bowl, using a wire whisk, beat cream cheese, 1 tablespoon of milk, and sugar; beat until smooth.
  • Gently fold in half of the Cool Whip.
  • Spread onto the bottom of the graham cracker crust.
  • Pour remaining milk into another large bowl.
  • Add pumpkin, pudding mixes, and spices.
  • Beat with a wire whisk for 1 minute or until well blended.

  • Stir together milk and 1/2 cup reserved cream cheese mixture in a small bowl until smooth. Dollop cream cheese mixture by the spoonful over pie. Pull a knife or wooden pick through mixture to create a swirled pattern. Cover edges with aluminum foil.
