A delicious autumn cocktail to enjoy after dinner or with dessert. You can adjust the consistency to be thicker (add more pumpkin) or thinner (add more milk) as you see appropriate.

1 graham cracker, crushed
1 tablespoon honey
⅓ cup milk
2 tablespoons pumpkin puree
¾ (1.5 fluid ounce) jigger vanilla flavored vodka
½ (1.5 fluid ounce) jigger creme de cacao
1 pinch pumpkin pie spice
1 cup crushed ice

Steps:

Place graham cracker crumbs in a shallow dish. Coat rim of martini glass with honey, and dip into graham cracker crumbs to coat.
Combine milk and pumpkin puree in a cocktail shaker, and shake to combine. Pour in vodka and creme de cacao, and add ice. Shake well, and then strain into prepared martini glass. Garnish with a sprinkle of pumpkin pie spice.

1 (1.5 fluid ounce) jigger vanilla flavored vodka (such as Stoli®)
1 (1.5 fluid ounce) jigger Irish cream liqueur (such as Bailey's®)
1 (1.5 fluid ounce) jigger pumpkin flavored liqueur (such as Hiram Walker®)
1 cup ice cubes
1 pinch ground cinnamon
1 pinch ground nutmeg

Steps:

Pour the vanilla flavored vodka, Irish cream liqueur, and pumpkin flavored liqueur into a cocktail shaker over ice. Cover, and shake until the outside of the shaker has frosted. Strain into a chilled martini glass, and garnish with a sprinkle of ground cinnamon and ground nutmeg to serve.

2 ounces* vodka
1/2 ounce heavy cream (or coconut milk, for vegan)
1/2 ounce (to 1 ounce**) pure maple syrup
2 tablespoons canned pumpkin puree
1/4 teaspoon pumpkin pie spice
1/4 teaspoon vanilla extract
Graham crackers, for the rim

Steps:

Crush a graham cracker with your fingers, and place it on a plate. On another plate, add a small pool of maple syrup. Run the rim of a martini glass in the maple syrup first, rotating the glass so the rim is evenly coated. Then roll the rim in the crushed graham crackers until evenly coated.
Place all ingredients in a cocktail shaker. Add a handful of ice and shake until cold. Strain the drink into the prepared martini glass.

1 fluid ounce spiced rum (Captain Morgans is great)
1/2 fluid ounce pumpkin spice syrup
nutmeg
cinnamon
whipped whipping cream

Steps:

Fill your martini shaker with crushed ice and use a chilled martini glass.
Put all ingredients in shaker and shake for a minute or so.
Pour into glass. Grind a little nutmeg on top.
You can also rim the glass with cinnamon sugar and put in a cinnamon stick.
Enjoy!
