HAM AND SPINACH QUICHE

Ham and Spinach Quiche image

Bump up the richness of this from-scratch quiche by adding Monterey Jack to the ham-and-spinach filling.

Provided by Food Network Kitchen

Time 3h

Yield 6-8

Number Of Ingredients 14

1 3/4 cups all-purpose flour, plus more, for dusting
2 tablespoons sugar
Fine salt
12 tablespoons (1 1/2 sticks) unsalted butter, diced and chilled
4 teaspoons cider or white vinegar
1/3 cup ice water, plus more if needed
1/2 cup thinly sliced red onions
1 cup shredded Monterey jack cheese
1/2 cup chopped ham
1/2 cup chopped thawed frozen spinach, squeezed dry
1 1/4 cups half-and-half
2 tablespoons chopped fresh parsley
3 large eggs
Kosher salt and freshly ground black pepper

Steps:

  • Pulse together the flour, sugar and 1/2 teaspoon salt in a food processor. Add about a 1/3 of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers; it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly; do not overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
  • Lightly dust a work surface with flour, roll the dough out into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Press a piece of foil over the chilled crust, fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
  • Adjust the oven temperature to 350 degrees F.
  • Sprinkle the onion evenly into the crust. Combine the cheese, ham and spinach in a small bowl and sprinkle it in an even layer over the onion.
  • Whisk together the half and half, parsley, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
  • Pour the custard over the filling and bake until the quiche is set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

QUICHE AUX EPINARDS (SPINACH QUICHE)

Quiche Aux Epinards (Spinach Quiche) image

This is Julia Child's recipe for Spinach Quiche. But of course, I couldn't leave well enough alone . . . just had to add bacon. Ham could also be substituted. Also added a little more cheese. Note: The partially cooked shell may be baked hours ahead of time and the filling prepared and refrigerated in the mixing bowl. Can even be made into tiny quiches for hot hors d'oeuvers.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 14

1/8 teaspoon pepper
1 (8 inch) partially cooked pastry shells (on baking sheet)

PAIGE'S QUICHE

Paige's Quiche image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h50m

Yield 8 to 10 servings

Number Of Ingredients 18

2 tablespoons salted butter
2 yellow onions, sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 homemade or store-bought pie crust (enough for a deep-dish pan), recipe follows
All-purpose flour, for rolling
1 1/2 cups heavy cream or half-and-half
8 large eggs
Kosher salt and freshly ground black pepper
2 cups grated fontina cheese
8 slices ham, cubed
3/4 cup vegetable shortening, such as Crisco
1 1/2 sticks (3/4 cup) cold salted butter
3 cups all-purpose flour
1 large egg
5 tablespoons cold water
1 tablespoon white vinegar
1 teaspoon kosher salt

Steps:

  • Set a large skillet over medium-low heat and add the butter. Fry the onions in the skillet, stirring occasionally, for about 10 minutes. Add the red and green bell peppers and continue to cook until the onions are deep golden brown, at least another 5 to 10 minutes (maybe longer). Set aside to cool.
  • Preheat the oven to 400 degrees F.
  • Roll out the pie crust on a floured surface and press it into a large, fluted, deep tart pan (or a deep-dish pie pan).
  • Whip the cream, eggs and some salt and pepper in a large bowl, then mix in the cheese, ham and onion-pepper mixture. Pour into the pie crust.
  • Put the pan on a rimmed baking sheet, cover lightly with aluminum foil and bake for 40 to 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, 10 to 15 minutes longer. (The quiche will still seem slightly loose, but will continue to set once removed from the oven.) Allow to sit for 10 to 15 minutes before cutting.
  • If using a tart pan, remove the quiche from the pan. Cut into slices with a sharp serrated knife and serve!
  • In a large bowl, gradually work the shortening and butter into the flour with a pastry cutter until it resembles a coarse meal, 3 to 4 minutes. In a small bowl, beat the egg with a fork and pour it into the flour/shortening mixture. Add the cold water, white vinegar and salt. Stir together gently until the ingredients are incorporated.
  • Separate the dough into 2 pieces and place each piece into a large ziptop bag. Using a rolling pin, slightly flatten each ball of dough into a disc (about 1/2 inch thick) to make rolling easier later. Seal the bags and place them in the freezer until you need them. If you will be using the dough immediately, it's still a good idea to put it in the freezer for 15 to 20 minutes to chill.
  • The dough can be wrapped in plastic wrap for storage; it will keep up to a week in the fridge or up to 6 months in the freezer.

SPINACH QUICHE

Spinach Quiche image

A classic quiche made fragrant by the nutty, warm flavor of the Kerrygold® Dubliner cheese. Buttery caramelized shallots, garlic, and oregano round out the flavor.

Yield 8 people

Number Of Ingredients 12

Homemade pastry dough or frozen 9-inch pie shell
2 tablespoons Kerrygold® salted butter
2 whole shallots, minced
2 cloves garlic, minced
1 (10-ounce) bag frozen spinach, thawed and squeezed to remove excess liquid
2 tablespoons dried oregano
1/2 teaspoon grated nutmeg
4 eggs
1 cup milk
1/2 cup heavy cream
4 1/2 ounces grated Kerrygold® Dubliner cheese, about 1 ½ cups
Salt and pepper

Steps:

  • If using homemade dough, roll out dough on a lightly floured surface with a lightly floured rolling pin into a 13-inch round. Fit dough into pie plate, letting excess hang over edge. Fold overhang inward and press against side of pie plate to reinforce edge. Prick bottom all over with a fork. Chill until firm, about 30 minutes.
  • Place from scratch or frozen pie shell in the pie pan. Line with foil and fill with pie weights. Bake until the shell is firm and the edges are just starting to get color, about 20 minutes. Carefully remove the weights and foil, and continue baking until the crust is golden all over, about 15 minutes. Set the crust aside and leave the oven on.
  • Heat the Kerrygold® salted butter in a large skillet over medium heat. Add the shallots and stir often until caramelized, about 10 minutes. Add the garlic and cook for 1 minute. Add the spinach, oregano, and nutmeg, and cook until the spices are fragrant and the spinach is wilted and its tannic flavor has mellowed, about 5 minutes. Season with salt and pepper and set aside.
  • Beat the eggs in a large bowl, then whisk in the milk and heavy cream. Fold in 1 cup (3 ounces) of the grated Kerrygold® Dubliner cheese, and the spinach. Pour into the prepared pie shell, and sprinkle the top with the remaining ½ cup cheese. Place on a baking sheet and bake for 45 minutes, or until the center of the quiche is just set and the top is lightly browned.

1/2 cup butter
3 garlic cloves, chopped
1 small onion, chopped
10 ounces chopped fresh spinach (can use frozen, thawed & drained)
