3 medium cucumbers
2/3 cup reduced-fat cream cheese
2 teaspoons lemon juice
1 teaspoon hot pepper sauce
1 package (8 ounces) imitation crabmeat, chopped
1/3 cup finely chopped sweet red pepper
2 green onions, sliced

Steps:

  • Peel strips from cucumbers to create striped edges; cut each cucumber into 16 slices, about 1/4-in. thick. Pat dry with paper towels; set aside., In a small bowl, beat the cream cheese, lemon juice and pepper sauce until smooth. Fold in the crab, red pepper and onions. Place 1 heaping teaspoonful onto each cucumber slice. Serve immediately.

Crabmeat and pasta are tossed with a creamy seasoned sauce in this great chilled salad.

1 (12 ounce) package uncooked pasta shells
½ cup light sour cream
½ cup light mayonnaise
1 tablespoon lemon juice
1 tablespoon honey mustard
1 tablespoon chopped fresh dill
½ teaspoon salt
¼ teaspoon ground black pepper
1 pound cooked crabmeat
½ cup diced red bell pepper
½ cup diced green bell pepper
½ cup chopped green onions

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta shells 10 to 12 minutes, until al dente, and drain.
  • In a bowl, blend the sour cream, mayonnaise, lemon juice, honey mustard, and dill. Season with salt and pepper.
  • In a large bowl, toss together the cooked pasta, sour cream mixture, crabmeat, red bell pepper, green bell pepper, and green onions. Cover and chill until serving.

This is a very quick and cool summer salad, but it's also good year-round. Serve cold or at room temperature.

2 cups thinly sliced and peeled cucumber
salt to taste
¼ cup white balsamic vinegar
2 tablespoons olive oil
1 teaspoon white sugar
½ teaspoon dried dill weed
2 tomatoes, chopped, or more to taste

Steps:

  • Spread cucumber slices in a thin layer on a large platter. Sprinkle salt generously over the cucumber. Let salt soak into cucumber slices for about 30 minutes.
  • Transfer cucumber to a colander and rinse with cold water; drain thoroughly and transfer to a dry surface. Pat cucumbers dry with paper towel.
  • Whisk vinegar, olive oil, sugar, and dill together in a large bowl. Add cucumber slices and tomatoes; toss to coat.

We serve this Cucumber, Corn, and Crab Salad on whole-grain toast as an open-face sandwich, but it is also delicious mounded on a bed of crisp salad greens for a summer meal.

1 1/2 cucumbers, peeled, seeded, and cut into 1/4-inch dice
Coarse salt
1 pound jumbo lump crabmeat, picked over and rinsed
2 ears corn, kernels cut from cob
1/2 small red onion, finely diced
1 avocado, peeled, pitted, and cut into 1/4-inch dice
Cucumber Vinaigrette
Freshly ground pepper

Steps:

  • Sprinkle cucumber lightly with salt, and place in a fine sieve set over a medium bowl. Cover with plastic wrap, and place in refrigerator 30 minutes. Rinse and drain well; discarding liquid.
  • Combine crabmeat, corn, onion, avocado, cucumber, and 1/2 cup cucumber vinaigrette in a large bowl, and stir to combine. Season with salt and pepper. Store in an airtight container in refrigerator until ready to serve.
