Easy Gluten Free Crisp image

This easy skillet fruit crisp is delicious with any combination of fresh or frozen stone fruits, apples, pears or berries!

5-6 apples, peaches, pears, etc. (OR 32 ounces sliced, frozen peaches)
½ - 1 cup frozen cranberries or other berry of choice
¼ cup gfJules® Gluten Free All Purpose Flour
¼ cup coconut palm sugar OR brown sugar (reduce or eliminate if fruits are very sweet)
1 tsp. cinnamon
½ tsp. nutmeg
1 cup (135 gr) gfJules® Gluten-Free All Purpose Flour
¾ cup coconut palm sugar OR brown sugar (you may reduce for lower sugar)
1 cup Certified Gluten Free, Purity Protocol Oats
1 tsp. cinnamon
¼ tsp. sea salt
½ cup cold butter or non-dairy alternative (Green Valley Organics® Lactose Free Butter or Earth Balance® Buttery Sticks)

Steps:

  • Preheat oven to 400° F. Prepare an cast iron skillet or 8×8 or 9×13 baking dish by oiling the bottom and sides lightly (a smaller pan will yield a thicker crisp and will need to bake longer). In a large bowl, stir to combine all filling ingredients. Set aside while preparing the topping. Combine all dry topping ingredients in a large bowl, then cut in the butter using a pastry cutter or an electric mixer or large food processor. The mixture should be like clumpy gravel in texture when the butter is incorporated. Pour the fruit filling mixture onto the bottom of the prepared pan and sprinkle with the topping until covered evenly. Bake for approximately 30 minutes, or until the fruit is bubbling and the topping is lightly browned. Serve warm as it is, or top with ice cream or non-dairy "ice creams". Serves 8.

6 -8 tart apples, peeled, cored, and sliced (such as Granny Smith)
2 -3 teaspoons lemon juice
1/4 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon butter
1 cup flour
1 cup brown sugar
1/2 cup butter
vanilla ice cream or fresh whipped cream

Steps:

  • Toss apples with lemon juice, sugar, and cinnamon; turn into an 8x8" baking pan that has been lightly coated with no-stick cooking spray; dot with butter.
  • Cut together flour, brown sugar, and butter until crumbly; sprinkle evenly over apples.
  • Bake at 350° for 30-40 minutes until apples are tender; serve warm with vanilla ice cream or fresh whipped cream.
  • VARIATION: This recipe can be made diabetic-friendly by substituting Splenda for the granulated sugar and substituting 1/2 cup Splenda for 1/2 cup of the brown sugar - the remaining 1/2 cup of brown sugar is still used.

1 tablespoon sugar
2 tablespoons water
1 teaspoon cornstarch
1 teaspoon ground cinnamon

1/4 cup brown sugar
1 teaspoon cinnamon
2 tablespoons softened unsalted butter

Steps:

  • Preheat the oven to 350. Coat a pie dish with cooking spray. In a large bowl, toss together the apples, sugar, water, cornstarch, 1 teaspoons cinnamon, and nutmeg until well combined. Set aside.
  • Make the oatmeal topping: In a bowl, gently combine: almond flour, oats, brown sugar, 1 teaspoons cinnamon, and butter until crumbly.

1 cup gluten free rolled oats
2/3 cup almond flour
2/3 cup brown sugar
2/3 cup pecan halves (chopped)
1/2 teaspoon kosher salt
6 tablespoons unsalted butter
2 1/2 pounds mixed apples
1/4 cup pure maple syrup or honey
2 tablespoons bourbon (or rum or water)
1 1/2 teaspoons ground cinnamon
1 tablespoon freshly squeezed lemon juice
1/2 tablespoon cornstarch
Vanilla ice cream (frozen yogurt, or Greek yogurt, for serving)

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish with non-stick spray.
  • In a medium bowl, stir together the oats, almond flour, brown sugar, pecans, and salt.
  • In a microwave-safe bowl in the microwave (or a saucepan on the stove), melt the butter. Pour over the top of the oat mixture. With a fork or rubber spatula, stir until the crumbs are evenly moistened.
  • To a large mixing bowl, add the apples, maple syrup, bourbon, cinnamon, lemon juice, and cornstarch. With a big spoon, stir to combine.
  • Scoop the apples and any liquid that has collected at the bottom of the bowl into the prepared baking dish into an even layer. It will be very full. Nudge the apple slices around a bit so that they lay fairly flat.
  • With your hands, squeeze chunks of the crumb mixture together to create clumps of assorted sizes, and place them on top of the apples. Scatter any remaining crumb mixture over the top.
  • Bake the crisp until the apples are tender (you may need to use a fork to peek down underneath that generous topping and check on the apples) and the crumb topping is crisp and deep golden brown, about 45 to 55 minutes. Check the crisp halfway through, then periodically during baking; if at any point, the topping browns more quickly than you would like, tent the pan with foil to protect the crust, then continue baking as directed. Serve warm with a big scoop of ice cream.

1 cup crushed gluten free cookies
2 Tablespoons melted butter
2 Tablespoons brown sugar

Steps:

  • Combine apples, 4 Tablespoons butter, 1/3 cup brown sugar, cinnamon, lemon juice, and salt in a saucepan.
  • Stir over medium heat until butter is melted.
  • Cook for 5 minutes over medium low heat.
  • Divide into 4 ounce canning jars or small dishes.
  • Combine cookies, 2 Tablespoons melted butter and 2 Tablespoons brown sugar in food processor until just combined.
  • Divide between jars.
  • Bake at 350 degrees for 10 minutes.

  • Preheat oven to 475 degrees F.
