Steps:
- Mix together the conch, peppers, onion, carrot, celery and egg in a bowl. Add flour, buttermilk, baking powder, sugar, basil, garlic powder, oregano, salt and 8 ounces water. Let stand, refrigerated, for 4 hours.
- Heat oil to 325 degrees F in a deep-fryer or Dutch oven fitted with a deep-fry thermometer.
- Scoop Ping-Pong-size balls of batter and drop into the oil. Keep fritters from floating with a mesh screen. Remove after 5 minutes. Let rest for at least 2 more minutes.
QUICK-FRIED CONCH

- cut the conch meat into large thin slices.Dip into boing wanter but ladle out at once. Strain off the water. Cut fungus into halves,garlic into slices and scallions into small lengths. Dip the cabbage heart into boiling water and cool in cold water. Take it out and cut into slices. Put soup stock, salt, gourmet powder, Shaoxing wine and corn starch in a bowl and make juice. Pour peanut oil in the pan. When the oil begins to smoke, scald the conch meat in the oil. Leave 50g of oil. Take out immediately to strain off the oil. Leave 50g of oil in the pan and heat. Put in scallions and garlic and fry until sweet smelling. Add cabbage heart and fugus and stir. Put in the conch meat, vinegar and gourmet powder and the prepared juice. Stir several times. Ladle out and place on a plate.
CRISPY PAN FRIED BAHAMIAN CRACKED CONCH WITH CITRUS SAUCE
Steps:
- Combine spiced rum, orange juice, lemon juice, lime juice, and sugar and reduce on high heat until syrupy. Slowly add butter until thick. Keep warm.
- Dip the conch in flour, then egg wash, then in bread crumbs. Cook on medium heat in canola oil until golden. Season with salt and pepper. Serve with citrus sauce and garnish with cilantro and fresh flowers if available.

Steps:
- Pour chicken broth into a large mixing bowl.
- Wash chicken pieces and pat dry. Place chicken pieces into the broth and let soak while preparing flour mixture.
- Mix flour, garlic powder, onion powder, seasoned salt, lemon-pepper seasoning, salt, basil, oregano, and cayenne pepper together in a large, shallow dish until well blended.
- Heat 2 inches oil in a deep saucepan over medium heat.
- Remove one piece of chicken at a time from the broth and dredge in the flour mixture until evenly coated. Lower a few pieces of coated chicken carefully into the hot oil. Fry until golden brown and juices run clear, about 10 minutes per side. Transfer to a paper towel-lined plate to drain. Repeat with remaining chicken.

- Heat the oil in a large pot or deep fryer to 365 degrees F (185 degrees C).
- In a bowl, mix the flour, egg, and milk. Season with cayenne pepper, seasoned salt, salt, and pepper. Mix in the conch meat, onion, bell pepper, celery, and garlic.
- Drop the batter by rounded tablespoons into the hot oil, and fry until golden brown. Drain on paper towels.
- In a bowl, mix the ketchup, lime juice, mayonnaise, hot sauce, salt, and pepper. Serve dipping sauce on the side with the fritters.
