QUICK NAAN (BREAD MACHINE)



Quick Naan (Bread Machine) image

This naan is ready in 40 minutes! I like this recipe better than Recipe #41503. For best results, follow directions carefully. They seem long but aren't, I am just describing what I saw on TV exactly. UPDATE: Made this with sour cream instead of yogurt. Much, much better!!

1 cup warm water
1 1/4 teaspoons salt
1 1/2 teaspoons honey
2 1/2 tablespoons oil
1/3 cup yogurt
4 cups flour
1 1/2 teaspoons yeast

Steps:

  • If the yogurt is cold, heat it for 15 seconds in the microwave.
  • Add ingredients to your bread machine according to the manufacturer's directions.
  • After 5 minutes, check your dough (see NOTE).
  • After another 5 minutes (10 minutes total in the machine) take the dough out and divide into 8 pieces. Turn each piece in flour, cover, and allow to rest on a tray for 20 minutes.
  • Meanwhile, heat your oven to 500°F.
  • If you have a pizza stone, allow it to heat in the oven, otherwise, put heat-resistent metal cooling racks in the oven. Baking sheets do not work very well.
  • With your fingers, flatten each piece of dough into a tear-drop shape, 1/2 inch thick.
  • Moisten hands, then turn naan briefly in your hands to moisten it, and place it on the stone/rack; bake for about 4 minutes.
  • Brown tops using the broiler.
  • Wrap naan in a towel while you make the rest.
  • NOTE: Dough should be somewhat sticky, and you might get a small amount stuck to your finger. It shouldn't stick to the pan at all. If it isn't sticky enough, add 1 T water. If it sticks to the pan, add 1 T flour, till you reach the correct consistency.

  • Stir together butter and garlic. Place naan on grill rack; grill over medium-high heat until bottom is golden brown, about 2 minutes. Flip and brush top with garlic butter. Grill until golden brown on bottom. Remove; cut each naan in half.

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., When cycle is completed, turn dough onto a lightly floured surface. Divide into six portions; shape into balls. Roll each ball into a 1/4-in. thick oval. Let rest for 5 minutes., Brush tops with water. In a greased large skillet, cover and cook dough, wet side down, over medium-high heat for 1 minute. Turn dough; cover and cook for 30 seconds longer or until golden brown. Repeat with remaining dough.

Though restaurant naan is usually cooked in the intense heat of the tandoor oven, you can pull off this homemade version using a hot cast iron skillet. When cooked at the proper temperature, the naan will develop blistered bubbles with a lovely golden-black char. Reward yourself for a job well done by sopping it in copious amounts of curry.

½ cup warm water
1 teaspoon white sugar
1 (.25 ounce) package active dry yeast
¼ cup butter
2 cloves garlic, minced
¼ cup plain yogurt
2 cups bread flour, or more as needed
1 teaspoon kosher salt
¼ cup chopped cilantro

Steps:

  • Combine water, sugar, and yeast in a bowl. Let stand until yeast softens and forms a creamy foam, about 15 minutes.
  • In the meantime, heat butter in a pan over medium heat until melted and sizzling. Quickly mix in garlic. Remove garlic butter from heat and set aside until ready to use.
  • Add yogurt, bread flour, salt, and 1 tablespoon of the garlic butter to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms. Knead by hand until dough pulls away from the sides of the bowl, adding more water or flour as needed. Turn dough out onto the counter and continue kneading into a smooth ball, 3 to 4 minutes.
  • Place dough in a large bowl. Coat with a few more drizzles of garlic butter. Cover and let rise until doubled in volume, about 2 hours.
  • Punch down dough and turn out onto the counter. Shape into a rough rectangle and cut into 6 pieces. Roll each piece into a ball and lightly dust with flour. Cover with plastic wrap and proof until slightly puffy, 15 to 20 minutes.
  • Roll each piece into an oval about 1/8 inch thick. Sprinkle some cilantro on top and press lightly to adhere.
  • Preheat a cast iron skillet until very, very hot, about 5 minutes. Cook each naan until large bubbles form, 1 to 2 minutes. Flip over, press gently, and cook until bubbles on the bottom are charred, 2 to 3 minutes more.
  • Brush naan with more garlic butter before serving.

Inspired by Recipe #254744 and The New Vegetarian Grill by Andrea Chesman. (Cooking time is time in bread machine plus time dough rests and grill time).

1 cup warm water
1 1/4 teaspoons salt
1 1/2 teaspoons agave nectar
2 1/2 tablespoons coconut oil
1/3 cup vegan sour cream or 1/3 cup soy yogurt
4 cups all-purpose flour
1 1/2 teaspoons yeast
1 head roasted garlic (I roast mine in the toaster oven for about 25 minutes, wrapped in oil-greased foil)
coconut oil, extra for brushing naan

Steps:

  • Squeeze out roasted garlic and mash into paste.
  • Add water, agave, oil, yogurt or sour "cream", garlic paste, flour, salt, and yeast to bread machine and set to dough setting. Do not allow to rise.
  • NOTE: I am at high elevation in a very dry climate, and tend to need more water (I usually use about 1 1/4 cups for this recipe); you can check dough after 5-10 minutes to make sure it is smooth and slightly tacky. If it is crumbly, add a bit more water.
  • After dough has been kneaded fully, remove from bread machine and cut into 8 pieces. Roll each piece into a ball, then cover and let rest for 20 minutes.
  • Roll out each piece of dough with a rolling pin into an oval and coat both sides with oil. (You can stack the rolled out pieces on a plate once they have been oiled).
  • Grill over medium fire for 2-3 minutes on the first side until bottom is browned and top begins to puff up, and 1-2 minutes on the second side until browned.

  • Add the honey to the olive oil to allow for easy pouring. Add the water, yogurt, olive oil and honey in a mixing bowl and stir to combine. Add the all purpose and whole wheat flour, salt, and baking powder. Stir to combine with a with a spatula to help incorporate the ingredients together.
  • If you want a softer dough, omit the whole wheat flour and replace that amount with all purpose flour.
  • Use a Kitchenaid mixer with the dough hook attachment. Mix the dough on low speed (Speed 1) for about 2 minutes until the dough forms a ball. Turn the mixer up to speed 2 and mix for an additional 3 minutes or until the dough can be stretched but tears apart easily (see video for illustration).
  • Lightly flour a work surface and flour your hands. Place the dough on the surface to fold. Don't dump flour on top of the dough, as you will add unnecessary flour inside the dough. Fold each of the corners toward the center to help strengthen the dough (see photos or video for instruction). Flip the dough over and place back in the mixing bowl to rise. Cover with a moist paper towels or a moist clean kitchen towel.

Turn and cook for a further 1-2 mins or until golden brown and puffed. Transfer to a plate a cover to keep warm. Repeat with remaining naans and butter mixture. Serve naans with any remaining butter mixture.
