Steps:
- Add beans to medium saucepan with water to cover and bring to a boil.
- Reduce heat to low; simmer 4 to 6 minutes or until crisp-tender. Drain. Return beans to pan.
- Add vinegar, oil, and spices to pan, tossing with beans.
- Cook and stir over medium heat 1 to 2 minutes or until heated through.

GREEN BEANS WITH HERB DRESSING
This is a quick, easy and flavorful Thanksgiving favorite in our family, and can be served hot or cold (we prefer hot). Credit goes to Aunt Nell and Cousin Mandi for this one! Mix a chopped tomato into the green beans after steaming, if desired.

Steps:
- In a medium bowl, mix green onions, garlic, olive oil, lemon juice, salt, white sugar, mustard, basil, oregano, marjoram and pepper.
- Place green beans in a steaming basket. Steam in a medium saucepan over boiling water 5 minutes, or to desired tenderness.
- Place green beans in a medium serving dish. Pour dressing mixture over the beans.

- Steam the green beans for 7-9 minutes, just until soft. To accomplish this step, you have three options: 1/ Add the green beans to a steamer pot/basket (I have a pot like this, or use a steamer basket). 2/Fill a pot with about 2 cups of water, bring the water to a boil, add the green beans, and then cover the pot with a lid. The green beans will not be submerged in the water, so the steam will do the work. 3/ Fill the bottom of a pot with water, and bring the water to a boil. Place a large colander over the water, then place the green beans inside, and cover the pot with a lid.
- Once the green beans are soft, melt the butter in a skillet over medium heat. Once melted, add the minced garlic and transfer the beans to the hot skillet. The garlic will become fragrant thanks to the heat and can easily burn, so work quickly. I use tongs to do this. I also gently shake off any excess water before adding the beans to the skillet. Sauté the green beans in the butter and garlic for about 2 minutes, then add the fresh herbs and salt and pepper to taste.
