QUICK AND EASY JAMBALAYA



Quick and Easy Jambalaya image

This recipe is a quick and easy way to enjoy jambalaya without spending too much time in the kitchen. It has just enough spice to give it a kick without making it too spicy. I use turkey kielbasa to make this recipe a little more healthy. I also suggest making your own home-mixed Cajun seasoning to avoid too many unnecessary additives.

8 ounces smoked sausage, sliced into 1/4-inch rounds
1 tablespoon canola oil
1 celery stalk, diced
1 yellow bell pepper, diced
½ onion, diced
1 (10 ounce) can chunk chicken breast, drained and flaked
1 ½ teaspoons Cajun seasoning
1 (16 ounce) can chicken broth
1 (16 ounce) can diced tomatoes
2 cups instant brown rice

Steps:

  • Bring a large pot of water to a boil. Boil sausage until hot, 8 to 12 minutes; drain.
  • Heat canola oil in a pot over medium-high heat; saute sausage, celery, bell pepper, and onion in hot oil until vegetables start to soften, about 5 minutes.
  • Stir chicken and Cajun seasoning into the vegetable mixture. Pour broth and tomatoes into the pot; bring to a boil, add the rice, and stir. Return mixture to a boil, reduce heat to medium-low, cover pot, and simmer mixture until for 5 minutes. Remove cover, stir, and continue to simmer until the rice has absorbed the liquid and is tender, about 5 minutes more.

  • Cut sausage into 1/2-inch slices. Melt butter in a 5 to 6-quart pan over medium-high heat. Add sausage, onion, red bell pepper, green bell pepper and garlic; cook, stirring occasionally, 5 minutes or until vegetables are soft and sausage is lightly browned.
  • Stir in tomatoes, pepper sauce, black pepper, crushed red pepper flakes and salt to taste. Bring to a boil; add shrimp. Cook 3 minutes or until shrimp are cooked and opaque in center.
  • Gently stir in hot rice and cook 3-5 minutes or until heated through.

1 pound boneless, skinless chicken breast halves
Kosher salt and freshly ground pepper
3 celery stalks, finely chopped
1 medium onion, finely chopped
1 green bell pepper, stemmed, seeded, and finely chopped
1 pound andouille sausage, cut into 1/2-inch pieces
2 garlic cloves, minced
2 cups homemade or low-sodium store-bought chicken stock
3/4 teaspoon Old Bay seasoning
1 can (14 ounces) crushed tomatoes with juice
1 cup long-grain rice

Steps:

  • Heat oil in a Dutch oven over medium-high. Season chicken with salt and pepper. Cook until golden brown, about 5 minutes per side. Cut into 3/4-inch pieces; set aside.
  • Add vegetables to pot. Cook, stirring, 5 minutes. Add sausage; cook 3 minutes. Add garlic; cook 1 minute. Stir in stock, Old Bay, tomatoes, and 1/2 cup water; bring to a boil. 1 whole chicken, (3 to 4 pounds), rinsed and patted dry
1/2 medium onion, plus 2 chopped medium onions
3 whole garlic cloves, plus 3 minced garlic cloves
1/4 cup coarse salt
2 (14-ounces each) whole peeled tomatoes
1 tablespoon ground allspice
1 tablespoon dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
1 tablespoon hot sauce
1/4 cup vegetable oil
1 1/2 cups chopped celery
1 green bell pepper, ribs and seeds removed, chopped
1 red bell pepper, ribs and seeds removed, chopped
1 pound andouille sausage or kielbasa, sliced into 1/2-inch-thick pieces
2 cups long-grain white rice
1 pound medium shrimp, (about 30), peeled, deveined, and tails removed

Steps:

  • In a large stockpot, combine chicken and enough cold water to just cover the chicken. Add 1/2 onion, 3 whole garlic cloves, and 2 tablespoons salt. Bring to a boil over high heat; reduce heat to medium, and cook for about 1 hour. Allow to cool. Remove chicken from pot; remove meat, discarding skin, and shred. Set aside. Strain broth, discarding solids. Set aside.
  • In a large Dutch-oven, combine 3 cups of the chicken broth, tomatoes, allspice, thyme, basil, oregano, and hot sauce over medium heat. Bring to a simmer, breaking up the tomatoes with the back of a wooden spoon.
  • Meanwhile, heat 3 tablespoons vegetable oil in a large skillet over medium-high heat. Add celery, chopped onions, bell peppers, and minced garlic. Cook until softened, 5 to 7 minutes; add to Dutch-oven.
  • In the same skillet, heat remaining 1 tablespoon oil over high heat; add sausage, and cook until heated through, about 5 minutes. Transfer to Dutch-oven. Add shredded chicken, rice, and remaining 2 tablespoons salt; simmer, covered, for 15 minutes. Add shrimp, and simmer, covered, until rice is tender, about 5 minutes. Remove from heat; let stand for a few minutes, and serve.

Add the sausage, prawns and shrimp, pour in the white wine and bring to a simmer. Stir in the white rice, crawfish and butter. Season with the lemon juice and add cayenne, salt and black pepper to taste.

2 Polish sausage

1/2 onion
1/2 green pepper
4 slices cooked bacon
4 ounces round steaks, cooked
1 chicken breast, cooked

1 tablespoon garlic powder

Steps:

  • Cook the rice as directed on the bag.
  • Slice the uncooked sausages, place them in a pot of water and cook for 10 minutes.
  • While the rice and sausage is cooking, slice or dice the onion and green pepper and add them to a casserole dish.
  • Tear up the bacon, steak, and chicken and add it to the dish.
  • Once the sausages are done add them to the dish.
  • When the rice is done, add all the spices to the rice and stir well mixing them into the rice.
  • Finally add the rice to the casserole dish and mix it into the other ingredients.
  • Microwave: Place a sheet of plastic wrap over the dish and heat it in the microwave for 8 minutes on full power.
  • Remove the dish from the microwave and serve in bowls or on plates.
  • Oven: Preheat the oven to 400 degrees.
  • Place the dish in the oven and let cook for 10 minutes.
