A variation on a classic dessert. These mint-chocolate brownies come out perfect every time, and people will go crazy over the subtle hint of mint, and the chunks of chocolate they'll bite into. They are a guaranteed crowd-pleaser!

Ingredients

¾ cup unsifted all-purpose flour
¼ teaspoon baking soda
¼ teaspoon salt
¾ cup white sugar
⅓ cup unsalted butter
2 tablespoons water
1 teaspoon vanilla extract
1 teaspoon mint extract
2 large eggs
12 (1 ounce) squares semisweet chocolate, cut into 1/2-inch chunks

Steps:

Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking pan.
Combine flour, baking soda, and salt in a medium bowl.
Combine sugar, butter, and water in a pot over medium heat; bring to a boil. Immediately remove from the heat and add 1/2 of the semisweet chocolate, vanilla extract, and mint extract. Stir until smooth and chocolate has melted. Transfer to a large bowl and allow to cool for 10 minutes.
Add eggs, 1 at a time, to the chocolate mixture, beating well after each addition. Gradually add flour mixture and mix until smooth. Fold in remaining chocolate. Spread batter into the prepared baking pan.
Bake in the preheated oven until top is dry and edges have started to pull away from the sides of the pan, about 30 minutes. Let cool completely before slicing.

2 cups white sugar
½ cup cocoa powder
1 teaspoon vanilla extract
4 eggs
1 ½ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
½ cup walnut halves

Steps:

Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
Combine the melted butter, sugar, cocoa powder, vanilla, eggs, flour, baking powder, and salt. Spread the batter into the prepared pan. Decorate with walnut halves, if desired.

1/4 cup butter or 1/4 cup margarine
32 chocolate-covered mint candies (about 3 ounces)
1 cup flour
1/4 teaspoon baking soda
1/8 teaspoon salt
2/3 cup sugar
1/3 cup unsweetened cocoa
1 large egg
1 large egg white

Steps:

Preheat oven to 350°F.
Coat bottom of an 8-inch square baking pan with cooking spray.
Combine butter and mints in a 2 cup glass container; microwave at high 30 seconds or until soft.
Stir until smooth; set aside.
Combine flour, baking soda, and salt in a bowl, set aside.
Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed until well blended.
Add mint mixture and beat well.
Add flour mixture and beat at low speed just until blended.
Pour batter into pan and bake at 350°F for 20 minutes or until a toothpick inserted in center comes out clean.
Cool completely.
