PEAR & BLUEBERRY COBBLER

2 cups fresh blueberries
2 cups peeled and chopped fresh pears
1 tablespoon sugar
2 tablespoons fresh squeezed lemon juice
1/2 cup brown sugar
1/2 cup old-fashioned oats
1/2 cup flour
1/2 teaspoon cinnamon
6 tablespoons cold butter (diced)

Steps:

  • 1) Preheat oven to 350 degrees. Spray four individual ramekins with cooking spray, place them on a parchment lined sheet pan and set aside.
  • 2) In a medium bowl mix the blueberries, pears, sugar, and lemon juice until the fruit is well coated. Set aside while you make the topping.
  • 3) In a food processor pulse the brown sugar, oats, flour, cinnamon, and butter until well combined and mixture begins to come together into chunks.
  • 4) Pour fruit evenly among the four ramekins and sprinkle the topping evenly over each one. I like my topping piled high! Bake for about 30 minutes or until fruit is bubbly and topping is lightly browned. Let sit for a few minutes before serving, or serve at room temperature. Great with vanilla ice cream!

The easiest dessert that everybody loves. I got the idea from my mom and she got it from my grandma. The thing I changed is, I don't use a cake mix. I use items from my pantry, and I add blueberries.

4 cups canned sliced peaches with juice
1 cup frozen blueberries
¾ cup all-purpose flour
½ cup white sugar
1 teaspoon baking powder
½ cup butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9x9-inch glass baking dish.
  • Pour peaches into the prepared dish, and sprinkle the blueberries over the peaches. In a bowl, whisk the flour, sugar, and baking powder until thoroughly combined. With a pastry cutter, cut the butter into the flour mixture to make a crumble, and spread the crumble mixture over the fruit.
  • Bake in the preheated oven until the fruit is bubbling and the topping is golden brown, 45 minutes to 1 hour. Allow to cool; filling will thicken as it cools.

3 cups frozen blackberries (about 15 ounces; do not thaw)
1 1/2 large pears, halved, cored, thinly sliced (about 2 cups)
2/3 cup plus 3/4 cup sugar
3 tablespoons dry red wine
2 teaspoons finely grated tangerine peel or orange peel
1/2 teaspoon ground cinnamon plus additional for sprinkling
1 cup all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup whole milk
1/2 cup (1 stick) unsalted butter, melted
1/2 teaspoon almond extract
Powdered sugar
Vanilla ice cream (optional)

Steps:

  • Preheat oven to 350°F. Butter 2 1/2- quart baking dish with 2-inch-high sides. Gently toss berries, pears, 2/3 cup sugar, wine, peel, and 1/2 teaspoon cinnamon in medium bowl.
  • Whisk flour, baking powder, salt, and remaining 3/4 cup sugar in another medium bowl. Add milk, melted butter, and almond extract; whisk until blended. Spread batter in prepared dish. Place berry-pear mixture atop batter (do not stir). Sprinkle with additional cinnamon.
  • Bake cobbler until crust is set in center and brown at edges, about 1 hour. Cool 30 minutes. Dust with powdered sugar; serve warm with ice cream, if desired.
  • GOOD TO KNOW:
  • Why not stir the fruit into the batter? Left undisturbed, the batter puffs up around the fruit during baking, forming a crusty edge.

Cobbler is a term often used to describe a baked fruit dessert with a topping - but this is a true cobbler with crunchy biscuit dough dropped on top.

8 Bartlett pears (about 4 pounds)
2 1/2 pints blackberries (about 5 cups)
2 tablespoons fresh lemon juice
1/2 cup plus 2 tablespoons granulated sugar, plus 3 teaspoons for sprinkling
3 teaspoons granulated sugar for sprinkling
3 tablespoons cornstarch
1 1/2 tablespoons brandy
2 1/2 cups all-purpose flour
1/2 cup plus 2 tablespoons packed light brown sugar
1/2 teaspoon salt
2 teaspoons baking powder
3/4 teaspoon cinnamon
10 tablespoons cold unsalted butter (1 1/4 sticks), cut into small pieces
1 cup milk
3/4 cup heavy cream, chilled

Steps:

  • Heat oven to 375 degrees. Cut pears in half lengthwise; remove stem, core with melon baller, and peel. Slice each half lengthwise into 6 1/2-inch-thick slices and place in a large bowl. Add blackberries, lemon juice, 1/2 cup plus 2 tablespoons granulated sugar, cornstarch, and brandy. Toss gently to combine and transfer to a 3 1/2-quart baking dish.
  • In a large bowl, whisk together flour, brown sugar, salt, baking powder, and cinnamon. Using two knives, cut the pieces of butter into flour mixture until it resembles coarse meal. Add the milk and stir with a fork until the dough just comes together. Do not overmix.
  • Drop 1/3 cup dough onto the fruit, and repeat, covering the surface of the fruit with "biscuits" that are just touching. Sprinkle the top with remaining 3 teaspoons granulated sugar and bake until golden brown and juices are bubbling rapidly, about 1 hour. Remove from oven and let cool slightly on a wire rack. Serve with cold heavy cream on the side.

I've made a number of cobblers and crisps in my day. I thought I'd stick to a baking concept that I was familiar with and experiment with flavors. I've never made one, or tried one, with these 3 flavor combinations. I bought 4 pears at the store last week, not really intending to use them for this recipe...but since nobody took them in his lunch this week (Bill...*ahem*)...I used them to make this dessert! I still had a large bag full of fresh blueberries in the freezer, so I was in luck!

1 cup frozen blueberries or 1 cup fresh blueberries
1 tablespoon butter or 1 tablespoon margarine, for dotting
3/4 cup flour
3/4 cup sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons butter or 3 tablespoons margarine
1 egg
1 teaspoon vanilla
3 tablespoons milk
sprinkles ginger

Steps:

  • Preheat the oven to 350°F and grease a deep dish pie plate, 9" square or round baking dish.
  • Combine the pears, lemon juice, cinnamon, ginger, flour and salt in a mixing bowl. Toss well. Add the frozen or fresh blueberries and toss again. Set aside and prepare the batter.
  • In a small mixing bowl, lightly whisk the flour, sugar, baking powder and salt. Add the butter, egg, vanilla and milk and whisk until a batter forms.
  • Pour the pears and blueberries mixture into the greased baking dish. Add a few small dollops of butter atop the pears.
  • Pour the batter over the top, spreading lightly. It will spread as it cooks.
  • Bake at 350°F for 40-50 minutes, or until batter has cooked through and begins to turn golden on top.
  • Serve warm with ice cream, whipped cream or as is.
