QUICK SKILLET BREAD
I just tried this recipe yesterday and it was great! Its from a food friend named Knoxcop. She is a master baker, so I knew the recipe would be delicious! This bread would be perfect to use with biscuits and gravy! You can add any topping you like! I added crispy fried smoked pork pieces!

Steps:
- 1. In a heavy 12 inch skillet (prefer non stick) heat 1 tablespoon of your fat.
- 2. Sift flour, soda and salt together.
- 3. Quickly stir in buttermilk until just moistened.
- 4. Place batter into the melted fat, spreading batter across pan.
- 5. Place lid onto skillet.
- 6. Cook bread, covered, over low to med heat for about 10-12 minutes.
- 7. Lift one side of the bread gently, with large turner, and flip. But add remaining Tbls. of oil to skillet before the flip.
- 8. This is when you add your toppings if desired!
- 9. Continue to cook other side for 10-12 minutes,
- 10. Cut into wedges and serve.

- In a large mixing bowl, whisk together the flour, yeast, and the salt. You can also add in spices or herbs of choice here. I like to add about 1 1/2 tbsp of fresh rosemary.
- Add the warm water to the bowl. Make sure the water is just warm and not hot. Stir with a spoon or rubber spatula until well combined. It will be a very wet dough, almost like a thick batter.
- Cover with plastic wrap or a towel and let sit at room temperature until about double in size. This will take about 45 minutes for rapid rise yeast, and an hour and a half with active dry yeast.
- Do not punch down the dough. Add about 1 TBSP of oil to the bottom of a cast iron skillet or any other oven safe skillet (a 10" or 12" skillet works well).
