I have had this recipe for a long time, and always enjoy making it. You can also do the same thing with beef or pork.

½ cup fresh bread crumbs
2 tablespoons minced garlic
2 tablespoons chopped fresh rosemary
1 teaspoon salt
¼ teaspoon black pepper
2 tablespoons olive oil
1 (7 bone) rack of lamb, trimmed and frenched
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon Dijon mustard

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Move oven rack to the center position.
  • In a large bowl, combine bread crumbs, garlic, rosemary, 1 teaspoon salt and 1/4 teaspoon pepper. Toss in 2 tablespoons olive oil to moisten mixture. Set aside.
  • Season the rack all over with salt and pepper. Heat 2 tablespoons olive oil in a large heavy oven proof skillet over high heat. Sear rack of lamb for 1 to 2 minutes on all sides. Set aside for a few minutes. Brush rack of lamb with the mustard. Roll in the bread crumb mixture until evenly coated. Cover the ends of the bones with foil to prevent charring.
  • Arrange the rack bone side down in the skillet. Roast the lamb in preheated oven for 12 to 18 minutes, depending on the degree of doneness you want. With a meat thermometer, take a reading in the center of the meat after 10 to 12 minutes and remove the meat, or let it cook longer, to your taste. Let it rest for 5 to 7 minutes, loosely covered, before carving between the ribs.

100g unsalted butter , melted and warm
500g white onion , sliced
1 rosemary sprig
1kg Desiree or Maris Piper potatoes

Steps:

  • Heat about a quarter of the butter in a large pan, set over a medium heat. Sweat the onions with a little salt and the rosemary sprig. Slowly cook on a gentle heat with a lid on for about 20 mins. Remove rosemary and set aside.
  • Heat oven to 190C/170C fan/gas 5. Peel the potatoes and immediately cut into wafer-thin slices directly into a bowl containing the rest of the warm butter. Season with salt and pepper. The thinner the potatoes, the better the dish will be. Do not wash them once they are sliced, as you want all of the starch to stick the potatoes together.
  • Line an ovenproof, non-stick frying pan with a round of baking parchment. Layer potatoes neatly into the dish in a circle, slightly overlapping. The bottom of the pan will become the presentation side. Continue to pile in half of the potatoes, then add the melted onions. On top of the onions continue with the potatoes until all used up. Set the pan over a medium heat and gently begin to colour the bottom of the dish for 5 mins, then transfer to the oven and cook for 45-50 mins until the potatoes are soft.
  • Remove from the oven and leave to rest for 10 mins. Invert onto a serving plate, then slice into wedges with a very sharp knife.

This Welsh onion cake is simple to make and layered with buttery, crispy, sliced potatoes and onions, with some grated cheese.

100 g butter
4 large potatoes
2 onions
100 g cheese

Steps:

  • First pre-heat your oven to around 180 degrees fan / Gas Mark 6. BUT, if you are already using your oven to roast your Sunday lunch, just maintain that temperature - this Welsh onion cake is hardy and can cope with whatever temperature you throw at it!
  • Firstly slice all of your potatoes as thinly as you can (but don't worry yourself too much if they are a bit thick - I don't use a mandolin or anything like that). I don't peel my potatoes either - it's up to you if you want to.
  • Slice your onions thinly and grate your cheese.
  • Generously butter your dish.
  • Layer your buttered dish with a layer of potatoes (I use up the halves and scraps of potato for this bottom layer, which won't really be seen).
  • Add a layer of sliced onions and some grated cheese, then season with salt and pepper.
  • Repeat with more layers of potato, onion, cheese and seasoning (I normally get 2 layers of each plus a final one of potatoes).
  • Try to save the nicest looking whole slices of potato to top the dish, as this will be the layer you see when you take the dish to the table (if you care about that kind of thing!).
  • Top the Welsh onion cake with a few knobs of butter and cover loosely with tin foil.
  • Bake for one hour covered, and then for a further 30 minutes uncovered, leaving you with soft potatoes and onions underneath a buttery, crispy layer of potatoes (my favourite bit).

1 rack of lamb , French trimmed with the fat scored
2 tbsp vegetable oil
1 onion , finely sliced
400g new potato , sliced
½ bunch thyme , a few sprigs reserved to garnish
3 garlic cloves , finely sliced
200ml chicken or lamb stock (fresh if possible)
asparagus , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat a small roasting tin, and coat the lamb with 1 tbsp of the oil and some sea salt. Place the lamb, skin-side down, in the tin until the fat has turned brown, then sear all over. Transfer to a plate.
  • Add the onion to the tin and cook for about 10 mins until soft. Stir in the potatoes, thyme, garlic and stock, and press down with a spoon. Put the lamb on top and roast in the oven for 25-30 mins until the potatoes are tender and the lamb cooked to your liking.
  • Leave to rest under some foil for about 10 mins. Slice the lamb into cutlets and scatter with the reserved thyme sprigs. Serve with a spoonful of the potatoes and some simply cooked asparagus, if you like.

This is a dish that my wife made for us on Valentine's Day one year. It was the best lamb that I've ever tasted. I added the red wine reduction for even more awesomeness! I serve with roasted Brussels sprouts.

2 tablespoons olive oil
1 medium onion, chopped
1 stalk celery, chopped
1 (750 milliliter) bottle Cabernet Sauvignon
2 medium tomatoes, chopped
1 medium Granny Smith apple, cored and chopped
½ cup balsamic vinegar
3 tablespoons salted butter
3 cloves garlic, chopped
1 (14.5 ounce) can great northern beans, drained
¼ cup salted butter
4 cloves garlic, minced
1 tablespoon dry white wine, or to taste
½ cup fresh bread crumbs
3 tablespoons olive oil, divided
2 tablespoons minced garlic
2 tablespoons chopped fresh rosemary
1 tablespoon Dijon mustard
1 teaspoon salt, or to taste
¼ teaspoon black pepper, or to taste
2 (8 bone) racks lamb, trimmed and frenched

Steps:

  • Heat olive oil for red wine reduction in a large saucepan over medium heat. Add onion and celery; saute until slightly brown, 8 to 10 minutes. Add Cabernet, tomatoes, apple, vinegar, butter, and garlic; simmer until sauce has reduced and is thick enough to coat the back of a spoon, 15 to 30 minutes. Strain and keep warm.
  • At the same time, combine beans, butter, and garlic for bean puree in a small saucepan over medium heat. Cook for about 25 minutes, then puree with an immersion blender, adding white whine to thin if needed.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Combine bread crumbs, 2 tablespoons olive oil, garlic, rosemary, mustard, 1 teaspoon salt, and 1/4 teaspoon pepper in the bowl of a food processor; pulse gently until blended.
  • Heat remaining 1 tablespoon oil in an oven-proof skillet over high heat. Season lamb with salt and pepper and sear racks on both sides until browned, about 3 minutes per side. Coat racks liberally with bread crumb mixture.
  • Transfer to the preheated oven and cook until an instant-read thermometer inserted into the center reads at least 145 degrees F (68 degrees C), 12 to 15 minutes. Allow racks to rest before cutting into 2-rib servings.
  • Place ribs in the center of serving plates. Drizzle reduction sauce on and around the ribs and spoon the bean puree into slight mounds on 3 sides outside the reduction.

800 g floury potatoes (such as King Edwards or Maris Piper)
100 g melted butter
400 g white onions, sliced
2 racks of lamb, each with 6 bones
1 sprig rosemary

Steps:

  • Preheat the oven to 200C/gas 6.
  • Peel the potatoes and slice very finely with a mandolin or sharp knife.
  • Toss with the melted butter and season with plenty of salt and black pepper.
  • Brush a shallow ovenproof dish with a little a little more melted butter.
  • Layer the potato and onion in the dish, starting with potato and finishing with a neat layer of overlapping potato slices.
  • Drizzle any remaining butter over the top.
  • Cover the dish with foil and bake in the oven for 1 hour.
  • Meanwhile, take the lamb out of the fridge to come to room temperature.
  • After the onion cake has had an hour in the oven, remove the tin foil.
  • Sit the lamb racks on top with their bones interlaced and tuck the rosemary sprig in the middle.
  • Return to the oven for 15-25 minutes, depending on the size of the racks and how you like your lamb cooked.
  • By now the potatoes should be beautifully tender and browned on the top.
