HONEY-BALSAMIC LAMB CHOPS

1/3 cup balsamic vinegar
1 garlic clove
2 tablespoons honey
3/4 cup vegetable or canola oil
Kosher salt and freshly ground black pepper
8 small lamb chops
2 tablespoons olive oil
1/2 tablespoon chopped fresh rosemary leaves

Steps:

  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  • In the bowl of a food processor, combine the balsamic vinegar, garlic, and honey. Pulse until blended. With the machine running, slowly pour in the vegetable oil until the mixture is smooth and forms a thick sauce. Season with salt and pepper, to taste.
  • Season the lamb chops with salt and pepper. Drizzle with the olive oil and sprinkle with rosemary. Grill the lamb chops for 2 to 3 minutes each side until medium-rare.
  • Arrange the lamb chops on a platter. Spoon the sauce over the top or serve the sauce on the side.

2 tablespoons minced fresh rosemary leaves
3 garlic cloves, minced
1/2 cup Dijon mustard
1 tablespoon balsamic vinegar
2 racks of lamb, "frenched" (see note)

Steps:

  • In the bowl of a food processor fitted with a steel blade, process the salt, rosemary, and garlic until they're as finely minced as possible. Add the mustard and balsamic vinegar and process for 1 minute. Place the lamb in a roasting or sheet pan with the ribs curving down, and coat the tops with the mustard mixture. Allow to stand for 1 hour at room temperature.
  • Preheat the oven to 450 degrees F.
  • Roast the lamb for exactly 20 minutes for rare or 25 minutes for medium-rare. Remove from the oven and cover with aluminum foil. Allow to sit for 15 minutes, then cut into individual ribs and serve.

2 tablespoons extra-virgin olive oil
4 tablespoons butter
1 rib celery, diced
1 medium-size onion, peeled and diced
1 carrot, scraped and diced
2 tablespoons chopped fresh rosemary leaves
1/4 pound lamb bones, in small pieces
1/2 cup plus 1 tablespoon balsamic vinegar
2 cups dry white wine
4 ripe, medium-size size tomatoes, diced
2 racks of lamb, frenched
Salt and freshly ground pepper to taste
Sprigs of fresh rosemary

Steps:

  • Preheat oven to 400 degrees.
  • In a large saucepan heat the oil and melt the butter. Stir in the celery, onion, carrot and rosemary. Add the lamb bones and saute 5 to 8 minutes, until the bones and vegetables have browned. Pour off excess fat.
  • Add the half cup of vinegar to the bones and vegetables and cook down until the vinegar just coats the bottom of the pan with a thin film.
  • Add the wine and tomatoes and simmer slowly about 30 minutes.
  • While the sauce is simmering, season the racks of lamb with salt and pepper, place in a roasting pan and roast 20 to 25 minutes for medium-rare to rare. Remove the racks from the oven and let rest 10 minutes.
  • Force the sauce mixture through a fine sieve. Season with salt and pepper, and add the remaining tablespoon of balsamic vinegar. Place in a small saucepan to reheat.
  • Carve the racks and serve with the warm sauce. Garnish each portion with a sprig of rosemary.

1/2 cup honey
1/2 cup cherry preserves
2 teaspoons olive oil
1 teaspoon lime juice

Steps:

  • Place lamb on a greased foil-lined baking sheet. Drape a piece of heavy-duty foil over bones to prevent overbrowning. In a small bowl, combine the honey, preserves, oil and lime juice. Set aside 1/2 cup. Spoon half of the remaining glaze over lamb. , Broil 4-6 in. from the heat for 10-12 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting once with remaining glaze. , Remove lamb from the oven and loosely cover with foil. 2 racks of lamb, with 4 cutlets
1/3 cup olive oil
1 lemon, juice and rind of
2 garlic cloves, crushed
salt and pepper
1/4 cup dark honey
1 lemon, juice of (3 good squeezes)
fennel seed

Steps:

  • Combine marinade ingredients and add lamb. Marinade for 2 hours.
  • Drain lamb and score fat with diamond pattern.
  • Place on a cake rack inside a baking dish, this stops the racks from sitting in fat.
  • Warm the honey and lemon juice together.
  • Brush onto lamb fat and sprinkle with fennel seeds.
