- Heat up a wok with 1 teaspoon oil. Once the oil is heated, transfer the rice noodles into the wok and do a few quick stirs before adding the sweet soy sauce. Use the spatula to stir the noodles vigorously to spread the sweet soy sauce evenly. Stir-fry for about 3 to 5 minutes or until the noodles somewhat clump together and slightly burned. Transfer and set aside.
- Add 2 teaspoons oil into the work and heat it up. Saute the garlic until light brown or aromatic before adding shrimp, fish cake and chicken. Stir-fry the ingredients a few times until half cooked before adding the preserved bean sauce. Stir a few more times before adding the water, seasonings, and vegetables. Bring the sauce to boil and then thickens it with the corn starch water. As soon as the sauce is thick and gooey, turn off the heat.
- On a serving plate, place a portion of the fried rice noodles on top and then pour the sauce onto the noodles. Divide the chicken, fish cake, shrimp and vegetables evenly. Add a few slices of pickled green chilies and a couple dashes of white pepper powder before serving.

- Make the Rad Na sauce: Combine the first 4 ingredients in a small pot and bring to the boil. Reduce heat and simmer 5 minutes. Set aside. (Keeps in the refrigerator for up to 1 week.)
- Heat a skillet or wok until smoking hot. Add the canola oil and heat again until smoking. Add the shrimp and let cook on one side for about a minute and a half. Flip the shrimp, cook for another minute, and then transfer to a plate — the shrimp should still look slightly uncooked (they’ll continue cooking as they sit and they’ll finish cooking at the end when they are tossed with all of the hot ingredients).
- Let the oil heat up again, another 20 seconds or so, then add the eggs. Stir vigorously to break up the egg as they cook.
- Add the noodles, crushed pepper, and Rad Na Sauce. Stir to combine and coat noodles. When noodles are hot and coated with the sauce, add most of the scallions, most of the sprouts, and most of the peanuts. Return the shrimp to the pan, stir well to combine and coat all of the ingredients with the sauce and remove from heat.

- Get everything ready. Peel the shrimp and devein. Cut the prepared squid into bite sized pieces, Slice the carrots into bitesized slices. Slice the mushrooms. Quarter the corn lengthwise. Shape the kale and reduce the leafy green part by folding together along the central leaf spine and cut at an angle from top to bottom as shown in the video. Mix the potato starch with the cold water in readiness. Measure and set out seasonings.
