ONE-POT CHEESY TORTELLINI AND SAUSAGE

Steps:
- In 12-inch skillet, cook sliced sausage, onion and garlic 5 to 7 minutes or until onion softens and sausage starts to brown.
- Stir in sauce, tomatoes, chicken broth and tortellini. Cover and simmer 8 to 10 minutes, stirring occasionally, until tortellini is cooked.
- Remove from heat; sprinkle with cheese and basil. Serve when cheese has melted.

TORTELLINI ALFREDO
This Tortellini Alfredo recipe takes less than 30 minutes to make with sauce that's restaurant quality! It's easy to add broccoli or leftover chicken for a dinner that your family will love.

- Melt the butter in a large saucepan over medium heat. Add the garlic and cook for one minute.
- Whisk in the flour. Gradually add the half and half, whisking constantly.
- Bring the sauce to a gentle boil, then reduce heat to low.
- Slowly sprinkle in the cheeses, continuing to whisk. It will continue to thicken as it simmers.
- Bring a pot of water to a boil and add the broccoli. Cook for 2 minutes.
- Add the tortellini and cook for 4 minutes. (Confirm cooking time on package.)
- Drain the tortellini and broccoli and add to the Alfredo sauce, stir to combine.
- Garnish with parsley and serve!

- In a large, heavy-bottomed stock pot, brown the sausage over medium heat, breaking apart as it cooks. Drain the excess grease -- optional, but I prefer a less greasy broth.
- Finely chop the onion and garlic and stir them into the cooking sausage. Cook 3-4 minutes, stirring occasinoally, until fragrant.
- Pour the broth and tomatoes, stir, and bring to a simmer.
- Stir in the tortellini and cook together for about 3-4 minutes (fresh tortellini cooks very quickly, but if you're using frozen, just cook according to the directions on the package).
- Just before you're ready to serve, stir in the baby spinach and cook together just until it's gently wilted. You can do this one or two handfuls at a time, if that fits better in your pot.
- Season to taste with salt, pepper and crushed red pepper, if using. Divide the soup into bowls and sprinkle with fresh parsley.

- Start by bringing a large pan/pot of water to a boil then add in the refrigerated Tortellini, turn the heat down to medium and boil for 7-8 minutes or according to package instructions. Once cooked remove the tortellini from the heat. Then strain the tortellini and toss in a bowl with 1 tsp of olive oil, set aside.
- In the same pan/pot add 1 tsp of butter and the minced garlic. Saute for 1-2 minutes till fragrant then add in the spinach, fresh baby tomatoes and the chicken stock. Simmer on medium heat till the spinach is wilted.
- Add back in the cooked tortellini, 1/2 of the monterey jack cheese and season pepper. Toss to coat and drizzle the juice from a whole lemon over everything. Turn off the heat and toss once more before serving~ once served add the remaining cheese on top and drizzle with a bit more lemon juice. Enjoy!
