One night I was trying to come up with something different to cook and I came up with this. My family absolutely loves it!!

4 boneless skinless chicken breasts
1 cup mayonnaise
1 (1 ounce) package ranch dressing mix
30 -40 Ritz crackers (about 1 sleeve)

Steps:

  • Preheat oven to 450°F.
  • Pour Ritz crackers into plastic bag and crush until they are all crumbs.
  • Mix mayonnaise with dry ranch dressing.
  • Coat chicken breasts in mayonnaise mixture first, and then in crushed crackers.
  • Bake for 20-30 minutes or until chicken is done throughout.

10.5 ounce can cream of chicken soup
2 cups sour cream
1 1/2 cups crushed Ritz Crackers
1/2 cup butter (melted)
6 boneless skinless chicken breasts
1 Tablespoon parsley (for garnish)

Steps:

  • Combine the soup and sour cream in a bowl and set aside.
  • In another bowl mix together cracker crumbs and melted butter.
  • Place chicken in slow cooker that has been sprayed lightly with non stick cooking spray.
  • Spoon the soup mixture over the chicken and sprinkle cracker crumbs on top.
  • Cover and cook on low for 6-7 hours or high for 4-5 hours.
  • Garnish with parsley before serving.

2 tablespoons vegetable oil
2 cups dry bread crumbs
1 cup ranch-style salad dressing (such as Hidden Valley® Original Ranch®)
4 skinless, boneless chicken breast halves - lightly pounded to an even thickness

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease baking sheet with vegetable oil.
  • Put bread crumbs and ranch dressing into separate bowls.
  • Dip chicken into ranch dressing and press into bread crumbs to coat. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Arrange onto prepared baking sheet.
  • Bake in preheated oven until no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

1 cup ritz crackers (crushed)
½ teaspoon garlic salt
black pepper (to taste)
2 eggs (beaten)
½ cup butter

Steps:

  • Preheat oven to 375 degrees.
  • In a small bowl, mix together crackers, garlic salt, and black pepper.
  • Dip each chicken breast in the beaten eggs, and then dredge in the cracker mixture, coating it completely.
  • Place each coated chicken breast in a 9x13 pan.
  • Cut the butter up into small pieces, and put them over the top of the chicken breasts.
  • Bake for 30-35 minutes, until chicken is cooked through.

I made this casserole recipe up and my kids love it! Chicken melds with lots of flavors like bacon, ranch, and Colby Jack to make a yummy feast for the whole family.

1 (12 ounce) package wide egg noodles
1 pound bacon
2 tablespoons olive oil
4 skinless, boneless chicken breasts, cubed
1 tablespoon lemon-pepper seasoning
1 (16 ounce) container fat-free sour cream
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
1 (1 ounce) package ranch dressing mix (such as Lipton® Recipe Secrets®)
1 ½ cups shredded Colby-Monterey Jack cheese
2 green onions, diced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
  • Meanwhile, place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble.
  • Heat oil in a skillet over medium-high heat. Place chicken in the hot skillet, sprinkle with lemon-pepper, and brown on all sides, 5 to 7 minutes. Remove with a slotted spoon and place in a 9x13-inch baking dish.
  • Combine 1/2 of the crumbled bacon, sour cream, soup, milk, and ranch dressing mix in a bowl and mix until blended. Pour over chicken, add drained egg noodles, and stir. Sprinkle remaining bacon on top, cover with Colby-Jack cheese, and top with green onions.
  • Bake in the preheated oven until cheese is melted and chicken is no longer pink in the center, about 30 minutes.
