Steps:
- Boil the potatoes about 20-30 minutes or until the fork not only can go through but they are very tender. Then drain the potatoes in a colander.
- Spread 2 tbsp of olive oil on a baking sheet so that it is completely covered, then arrange the potatoes on the cookie sheet so that they are evenly spaced.
- Use a potato masher or the bottom of a glass to smash each potato until it is about 1/2 inch thick. Then sprinkle the seasoning directly on top of each potato and finish by drizzling the remaining olive oil over each potato generously.
- Bake at 425˚F for 25-30 minutes or until the edges of the potatoes are browned and crispy. Serve hot and enjoy!

Total Time 1 hr 15 mins
- Place potatoes in a saucepan, and cover with water by 2 inches, add 1 1/2 teaspoons of the salt. Bring to a boil over high. Reduce heat to medium-high, and boil until fork tender, about 15 minutes. Preheat oven to 400°F.
- Drain potatoes well; let stand 5 minutes. Place potatoes on a single layer on a baking sheet lined with parchment paper. Using a potato masher or fork, gently press down on each potato to flatten, careful not to go all the way through. Allow steam and excess moisture to escape, about 3 minutes. Sprinkle each potato with pepper and remaining 1/2 teaspoon salt.
- Whisk together butter, oil, and ranch mix in a small bowl until well blended. Drizzle approximately 1/2 teaspoon butter mixture over each potato. Bake in preheated oven until edges of skin are golden and crisp, 25 to 30 minutes. Add your favorite toppings. Serve as an appetizer or a side dish.

- Place the potatoes into a large stockpot, add cold water to the pot to cover the potatoes plus an additional 2 inches of water. Bring to a boil and boil for 15-18 minutes, until fork-tender. If the skins split, that is okay.
- While the potatoes are drying, whisk together the butter and ranch seasoning in a small bowl, set aside.
- On the sheet tray, gently smash the potatoes. I like to use a potato masher to gently smash the potatoes. You could also use the bottom of a glass to achieve this. The thinner you can get them, the crispier they will get, but you still want them mostly intact
