Time 40m

Number Of Ingredients 10

2 puff pastry sheet
8 oz cream cheese
6 tbsp ricotta cheese
4 tbsp sugar
1 tsp lemon juice
1/2 cup raspberry jam
1 Egg + 1 tbsp water (for egg wash)
Glaze:
1 tbsp milk
1/2 cup powdered sugar

Steps:

  • Combine cream cheese, ricotta, sugar, and lemon juice with a handheld mixer.
  • Place the thawed puff pastry out onto a sheet of floured parchment paper. Roll it out lengthwise about 2 inches.
  • Cut the top corners off and begin cutting strips diagonally down the sides of the pastry. You should end up with about 10 strips on each side. Once you reach the bottom strip, cut off the remaining flaps.
  • Place the filling in the middle third of each puff pastry sheet. Then pipe out an even layer of raspberry jam on top of the filling (1/4 cup per danish ).
  • To make the braid, begin crossing over each strip, alternating between sides. Every time you pull a strip over to the opposite side, gently pinch it down. Before you cross over last strips, fold in the bottom middle flap.
  • Brush both danishes with egg wash. Bake at 400 degrees Fahrenheit for 20 minute or until golden brown.
  • Make the glaze by combining the milk and powdered sugar. Once the danish is completely cool, drizzle the glaze over it.

RASPBERRY CREAM CHEESE DANISH

Raspberry Cream Cheese Danish image

Sweet, flakey, buttery puff pastries filled with raspberry swirled cream cheese!

Provided by Julie

Time 40m

Yield 16

Number Of Ingredients 11

1 puff pastry sheet (usually come 2 per box in the frozen section)
4 ounces cream cheese
1/4 cup sugar
1/2 teaspoon vanilla extract
1 tablespoon heavy cream
2 tablespoons raspberry jam
1 egg plus 1 tablespoon water
sparkling sugar (optional)
1 cup powdered sugar
1-2 tablespoons water
1/4 teaspoon almond extract

Steps:

  • Preheat oven to 400 degrees.
  • Lay frozen puff pastry sheet on a clean work surface and allow to thaw for 10 minutes.
  • While you are waiting for it to thaw, you can make the cream cheese filling. Using an electric mixer, beat the sugar into the cream cheese. Add the heavy cream and vanilla and mix until smooth. Set aside.
  • Unfold the puff pastry and cut it into four equal parts. When you unfold it, sometimes it will break on the creases which is fine. Then cut your four parts into quarters, so you have 16 rectangles or squares.
  • With a sharp knife, score an inner rectangle as shown. You don't want to cut all the way through. This helps the puff pastry rise around the filling, and creates a little wall so the filling doesn't escape.
  • Place about 1 teaspoon of the filling onto the center of each puff pastry. Top with a few small dots of the jam, and swirl it around with a toothpick. Don't worry about being precise with your swirling because you really won't be able to tell after baking.
  • In a small bowl, beat the egg with 1 tablespoon of water and brush only the edges with a pastry brush. This adds a pretty sheen to the finished pastry. Sprinkle the edges with the sparkling sugar if desired.
  • Bake for 13-14 minutes. They will puff up, and the edges should be golden. Remove from the oven and transfer to a cooling rack. Allow them to cool completely before drizzling with icing.

DANISH ALMOND PUFF

Danish Almond Puff image

My mom used to make this Almond Puff every year for Christmas. It is very elegant and pretty--and surprisingly easy to make. I almost always have every ingredient already in my cupboard. I made it myself for the first time and my husband loved it. I'm planning to make it for his mom when she comes to visit. This is a fun one to share.

RASPBERRY DANISH

Raspberry Danish image

Raspberries give a tartness to this Danish that balances well with the creaminess of the cream cheese. The cream cheese is studded with aromatic cardamom and orange zest. The puff and toasted almonds give it some texture and nuttiness.

Provided by Laura Kanya

Categories     Danishes

Time 2h45m

Yield 16

Number Of Ingredients 15

1 tablespoon white sugar
1 teaspoon cornstarch
⅛ teaspoon salt
2 cups fresh raspberries, divided
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar, divided
6 tablespoons heavy cream, divided
2 teaspoons finely grated orange zest
⅛ teaspoon ground cardamom
⅛ teaspoon almond extract
2 sheets frozen puff pastry sheets, thawed
¼ cup all-purpose flour, or as needed
1 large egg
1 tablespoon water
¼ cup toasted sliced almonds

Steps:

  • Whisk together white sugar, cornstarch, and salt in a small saucepan. Stir in 1 cup of the raspberries and cook over medium-low heat, stirring occasionally and mashing raspberries with a wooden spoon, until raspberries break down and sauce thickens, about 4 minutes. Remove from saucepan to a medium bowl and cool, stirring occasionally, for 10 minutes.
  • Meanwhile, beat cream cheese, 1/4 cup powdered sugar, 1 tablespoon heavy cream, orange zest, cardamom, and almond extract with an electric mixer on medium speed in a medium bowl until smooth, about 1 minute. Cover and chill until ready to use.
  • Place 1 puff pastry sheet on a floured piece of parchment paper. Roll into a 12x9-inch rectangle. Cut 10 to 12 (3 inches long and 1 inch thick) diagonal strips on each side, about 1 inch apart, leaving center 3 inches of pastry uncut. Spread 1/2 cup of the cream cheese filling in center (uncut) section of pastry, leaving a 1/2-inch border at the top and bottom. Top with 3 tablespoons of the raspberry mixture, and spread raspberry mixture gently over cream cheese layer. Sprinkle with 1/2 cup raspberries.
  • Whisk together egg and water in a small bowl. Brush exposed pastry lightly with egg mixture. Fold strips over filling, alternating each side to resemble a twist or a braid. Fold the bottom ends up to seal the filling inside. Repeat with the remaining sheet of puff pastry and the rest of the filling. Brush outside of each pastry with egg wash.
  • Transfer pastries, on parchment, to separate baking sheets. Freeze until pastry is firm, about 1 hour. (To make ahead, wrap Danish in parchment and then plastic wrap; freeze up to 1 month.)
  • While pastries freeze, preheat the oven to 400 degrees F (200 degrees C) with racks in upper and lower third of oven.
  • Bake in the preheated oven until golden brown and puffed, rotating position of baking sheets in oven halfway through, 30 to 35 minutes. Cool on baking sheets for 30 minutes.
  • Meanwhile, whisk together remaining 5 tablespoons cream and 3/4 cup powdered sugar in a medium bowl. Drizzle over Danish and sprinkle with sliced almonds.

RASPBERRY ALMOND PUFF PASTRY DANISH

Raspberry Almond Puff Pastry Danish image

Raspberry almond puff pastry Danish is an easy homemade Danish recipe that's not too sweet, with a rich cream cheese filling and the perfect flaky crust. Breakfast just got a whole lot more interesting!

Provided by Sue Moran

Categories     Breakfast

Time 40m

Number Of Ingredients 15

1 large egg
2 Tbsp all purpose flour
2 Tbsp granulated sugar
pinch salt
1 Tbsp lemon juice
1/2 tsp almond extract
8 ounces cream cheese, room temperature
1 sheet frozen puff pastry, thawed
milk for brushing
2/3 cup raspberry jam or preserves
1 cup confectioner's sugar
2 Tbsp water, approximately, to thin
1/4 tsp almond extract
pinch salt
1/4 cup sliced almonds, lightly toasted

Steps:

  • Preheat oven to 400F.
  • Whisk the egg in a small mixing bowl until smooth. Add the flour, sugar, and salt, and whisk until smooth. Add the lemon juice and almond extract, whisk to combine, and then add the cream cheese, whisking until smooth. If you have some very teeny tiny lumps even after whisking in the cream cheese, don't worry, these won't be apparent once the filling is baked. Set aside.
  • Gently unfold and roll out your sheet of puff pastry just to flatten and smooth it. Cut it into two rectangles, about 10 inches by 5 inches.
  • Gently score around the edge of each rectangle, about 3/4" in from the edges. This will create a frame of pastry that will rise around the filling as it bakes.
  • Very lightly brush the edges of the pastry with milk and bake for 15 minutes. The whole thing should get very puffy.
  • Remove from the oven, and gently press down the center portion of the rectangles to form an indentation for the filling to go. You don't need to press down very hard, and no need to press it all the way to the bottom, because the filling will weigh it down during baking.
  • Divide the cream cheese mixture evenly between the two pastry rectangles, and use the back of a spoon to gently spread it evenly.
  • With about 4-5 spoonfuls on each pastry, dollop the raspberry jam across the top of the cream cheese filling. Use the back of a spoon to spread it out very gently.
  • Bake the pastries for about 15 minutes, until the pastry is a deep golden brown and the cheese mixture is set in the middle. I tented mine with foil after the first 5 minutes to prevent excess browning.
  • Remove from the oven and allow the pastries to cool before glazing.
  • To make the glaze, whisk together the confectioner's sugar, water, almond extract, and salt until smooth. Drizzle over the cooled pastries, and immediately top with the sliced almonds. Wait until the glaze has set to slice and serve.
