1 sheet puff pastry (1/2 a box)
1 wheel Brie cheese
1/3 cup raspberry preserves
1 egg (mixed with one tablespoon of water)

Steps:

  • Preheat the oven to 400 degrees.
  • Open the sheet of puff pastry onto a large cutting board.
  • Using a rolling pin, roll the puff pastry to a 1/4" thickness.
  • Place the wheel of brie in the middle of the puff pastry.
  • Add the raspberry preserves on top of the brie.
  • Gently fold over the brie to cover it completely.
  • Move the brie wheel to a baking sheet.
  • Brush on the egg/water mixture.
  • Wipe away any egg collected under the brie on the baking sheet.
  • Bake for 35-40 minutes or until golden brown.
  • Allow to cool for five minutes before serving.

One 17 1/2-ounce wheel firm Brie (6-inch diameter)
Two 3-ounce jars sun-dried tomatoes packed in oil, drained and chopped (2/3 cup)
1/4 cup dry white wine
1/4 teaspoon crushed red pepper flakes
1 small clove garlic, finely grated
10 ounces linguine
1/4 cup chopped fresh basil leaves

Steps:

  • Preheat the oven to 400 degrees F. Bring a large pot of salted water to a boil. Using a paring knife, score a 1/4-inch border around the edges of the top of the Brie about 1/4-inch deep. Carefully slice off the top rind in one piece using a chef's knife and staying within the border to make a lid; set the top aside.
  • Place the Brie in an 8-inch cast-iron skillet and top the center with the sun-dried tomatoes, wine, red pepper, garlic and 1/2 teaspoon salt. Cover with the reserved top rind. Bake just until the cheese is melted and bubbling, 18 to 20 minutes.
  • Meanwhile, during the last 10 minutes of baking, cook the pasta according to the package directions. Reserve 1/2 cup of the pasta water. Drain.
  • Remove the top rind from the Brie. Sprinkle the basil over the melted cheese and gently stir to combine. Using tongs, gently toss a quarter of the pasta in the center of the melted cheese until coated and transfer to a plate. Repeat with the remaining 3 portions of pasta. If the cheese sauce thickens, stir in some pasta water, a tablespoon at a time.

4 skinless, boneless chicken breast halves
salt and black pepper to taste
1 teaspoon dried oregano, or to taste
8 ounces Brie cheese

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Pour the beer or wine into a glass baking dish large enough to lay out the chicken. Season the chicken with salt, pepper and oregano on both sides, and place in the dish.
  • Bake for 35 to 40 minutes in the preheated oven, or until juices run clear. While chicken is baking, slice Brie with the rind into 1/4 inch thick slices. When chicken is done, place slices of Brie over the top. Return to the oven for 3 to 5 minutes, until cheese is melted. Voila, chicken with Brie sauce is complete!

¼ cup water
2 tablespoons dried oregano
2 teaspoons ground black pepper
1 teaspoon salt

2 large mushrooms, sliced
1 clove garlic, chopped
¼ cup grated Parmesan cheese, divided
2 slices prosciutto
4 ounces Brie cheese, cut into 1/4-inch slices

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour white wine and water into a 9x13-inch baking dish.
  • Mix oregano, black pepper, and salt together in a bowl; massage oregano mixture onto both sides of chicken breasts. Arrange coated chicken breasts in the baking dish; sprinkle with red pepper flakes.
  • Bake chicken in the preheated oven for 25 minutes. Place tomatoes, mushrooms, and garlic around the chicken breasts; sprinkle 2 tablespoons Parmesan cheese over chicken and vegetables. 4 thick chicken breasts
4 strips bacon
1/4 lb brie
1/2 lb broccoli florets(frozen or fresh), chopped
1/2 lb rice noodles
4 tsp. honey
lime juice
Raspberry gravy:
4 Tbsp butter
4 Tbsp rice flour (or tapioca flour, or other gluten-free thickener)
2-3 cups half-n-half
1/4 cup raspberry preserves
1/4 cup chopped walnuts
2 Tbsp honey
Salt

Steps:

  • Preheat the oven to 375 degrees. Fry bacon until crispy, crumble and set aside. Choose thick chicken breasts and slice a hole in the center being careful not to slice all the way through. Cut brie into thin chunks and stuff into the chicken along with bacon crumbles. Use olive oil to grease a baking pan and place chicken inside. Dribble honey and lime juice over the chicken and bake for 1 hour. While that cooks, boil water for the rice noodles (they only take about ten minutes once the water boils). Add a tiny bit of olive oil so the noodles don't stick together. In a saucepan, create a roux by melting 4 Tbsp butter, then adding 4 Tbsp rice flour until thoroughly blended (still over the heat). Slowly add the half-n-half to thicken the gravy. Once thickened, blend in the copped walnuts, raspberry preserves and honey. Salt to taste. The broccoli can be microwaved or steamed in a pot. I usually microwave it with a tsp of water and some butter.

2 large boneless skinless chicken breasts
1 (14 1/2 ounce) bag frozen raspberries (or fresh if berries look desirable)
5 ounces brie cheese, wedge
1/2 cup lightly toasted walnuts (chopped)
1 (17 1/3 ounce) package frozen puff pastry
1/4 cup olive oil
3 garlic cloves (mashed)
1 tablespoon rosemary
salt and pepper
1 tablespoon olive oil
1/3 cup water
1/3 cup sugar (or to taste)

Steps:

  • Pound each chicken breast to 1/2 inch thickness. Marinate the chicken in the olive oil, rosemary and garlic for 20- 60 minutes.
  • Preheat the oven to 400°F (or the recommended baking temperature for the dough). Heat a skillet over medium heat and sauté chicken in 1 tablespoon olive oil until lightly browned on both sides or just cooked through.
  • Drain chicken on paper towels and allow to rest.
  • Season to taste with salt and pepper.
  • Allow puff pastry to thaw at room temperature as directed on package.
  • Over medium-high heat combine the water, sugar and raspberries.
  • Bring to a boil and simmer uncovered until desired consistency.
  • Lay one sheet of puff pastry on a non-stick baking sheet.
  • Place one piece of chicken in the center.
  • Cover the chicken with 1/2 the brie and the desired amount of raspberries.
  • Top with walnuts.
  • Fold the pastry over the chicken.
  • Wet fingers in cool water if pastry is dry or will not hold position.
  • Bake at recommended puff pastry baking time (400°F) until pastry is golden brown.
  • This takes approximately 35 minutes.

4 rainbow carrots, peeled
2 sheets puff pastry, thawed
1 wheel brie cheese
¾ cup raspberry jam
1 large egg, beaten
1 teaspoon honey
5 slices almond, sliced
cracker, for serving

Steps:

  • Line a baking sheet with parchment paper.
  • Cut the carrots to the lengths of fingers; roughly 2 inches (5 cm) for the thumb, 3 inches (8 cm) for the pointer and ring fingers, 3½ inches (8 cm) for the middle finger and 2½ inches (5 cm) for the pinky. Use a vegetable peeler to round the tops slightly. (Use the same carrot for the thumb and pinky fingers).
  • Place a sheet of puff pastry on the prepared baking sheet and arrange the Brie wheel and carrots in the center to form a right hand. Top the Brie with the raspberry jam.
  • Brush the outline of the hand with the beaten egg and place the other sheet of puff pastry on top, pressing the pastry sheets together around the "hand" to seal. Using a paring knife, cut out the outline of the hand and remove the excess dough. Brush all over with egg wash. Use the knife to create small incisions to reflect knuckles and fingernails. Chill the puff pastry hand in the freezer for at least 30 minutes, up to 1 hour.
  • Preheat the oven to 400°F (200°C).
  • Transfer the hand to the oven and bake for 30 minutes, until the pastry is puffed and golden brown.
  • Carefully transfer the hand to a platter. Using a small spoon, add a small dab of honey to top of each finger. Press the almonds onto each finger as fingernails. Use a paring knife to cut into the hand in a few places so the jam starts to seep out.
  • Serve immediately with crackers alongside.
  • Enjoy!
