- Preheat the oven to 375 degrees F. Light coat a 9-inch pie dish with cooking spray.
- In a large bowl, combine the eggs, egg whites, water, cottage cheese, salt and pepper. Whisk vigorously to break up the cottage cheese. Stir in the dill and chives.
- Pour the egg mixture into the prepared pie dish. Sprinkle the smoked salmon goat cheese throughout the egg mixture.
- Bake until the egg is just set and a small, sharp knife inserted in the center comes out clean, about 35 minutes.
- Let the quiche rest for 5 minutes, then cut into 6 wedges. Serve.

- Combine all crust ingredients except butter and buttermilk in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in enough buttermilk with fork until flour is just moistened. Shape dough into ball; flatten slightly. Wrap in plastic food wrap; refrigerate 30 minutes.
- Heat oven to 375°F.
- Roll out dough on lightly floured surface into 12-inch circle. Fold into quarters. Carefully place pastry into ungreased 9-inch glass pie pan. Unfold pastry, pressing firmly against bottom and sides of pie pan. Trim crust to 1/2 inch from edge. Crimp or flute edge. Bake 10 minutes.
- Combine all filling ingredients except salmon in bowl; beat with whisk until well mixed. Sprinkle salmon over crust. Pour egg mixture over salmon. Bake 35-40 minutes or until center is just set. Cool at least 15 minutes.
- Combine cream cheese and dill in bowl; beat at medium speed until smooth. Place into piping bag or plastic food bag with corner cut off. Pipe around edges of quiche. Garnish with arugula, tomato, red onion or capers, as desired.

- On a lightly floured surface, unroll crust. Transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond edge of plate; flute edges., In a small bowl, combine cheese and flour. Transfer to crust., In a large skillet, saute tomatoes and onion in oil just until tender. Remove from the heat; stir in salmon. Spoon over cheese mixture., In a small bowl, whisk the eggs, milk and salt. Pour into crust. Bake at 350° for 35-40 minutes or until a knife inserted in the center comes out clean. Let stand for 15 minutes before cutting. Freeze option: Securely wrap and freeze cooled quiche in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Unwrap quiche; reheat in oven until heated through and a thermometer inserted in center reads 165°.

SMOKED SALMON QUICHE
Steps:
- Preheat oven to 375 degrees. Line pie dish with crust. (I took the frozen pie crust, removed it from the tin and put it in my 9 inch pie plate). In a medium fry pan, melt butter and saute shallots and leeks, just until the leeks begin to soften. Set aside. In a medium bowl, using a whisk, blend whipping cream, eggs, salt, and pepper. Add in salmon, cheese, leek mixture and chives, and mix well. Pour egg mixture into the pie crust, spreading evenly. Bake for 40-50 minutes until quiche is puffed and lightly browned, and knifetest comes out clean. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Press pie crust pastry into a pie dish.
- Bake in the preheated oven until lightly golden, 10 to 12 minutes.
- Arrange salmon into the baked pie crust to cover evenly. Spread cream cheese over over salmon layer using your hands. Sprinkle dill over cream cheese layer.
- Beat eggs, milk, salt, and pepper together in a bowl; pour over cream cheese layer just below crust edge. Sprinkle mozzarella cheese over egg layer.
- Bake in the preheated oven until quiche is set and middle has risen, 40 to 50 minutes. Cool for 5 minutes before slicing.

- Preheat the oven to 375° F. Lightly flour a work surface and roll out the puff pastry. Trim the pastry into a circle so the pastry goes up the sides of a pie tin or baking pan. Trim any excess so it's flush with the top of the sides. - Preheat oven to gas mark 6/200ºC (180ºC in a fan oven). Roll out pastry on a lightly floured board. Carefully line tin, letting pastry hang over edge. Chill for 20 mins if time, then trim.

- Preheat oven to moderately hot 210°C/190°C gas. Place flour, butter and thyme in food processor. Using pulse action, press button for 30 seconds or until mixture is fine and crumbly.
