1 cup fresh or frozen cranberries
1 cup unsweetened apple juice
1/2 cup fresh or frozen raspberries, thawed
1/4 to 1/2 cup sugar
1-1/2 teaspoons lemon juice
1/8 teaspoon ground cinnamon
1 cup half-and-half cream, divided
1-1/2 teaspoons cornstarch
Whipped cream and additional raspberries, optional

Steps:

  • In a large saucepan, bring cranberries and apple juice to a boil. Reduce heat and simmer, uncovered, for 10 minutes. Press through a sieve; return to the pan. Press the raspberries through the sieve; discard skins and seeds. Add to cranberry mixture; bring to a boil. Stir in the sugar, lemon juice and cinnamon; remove from the heat., Cool for 4 minutes. Stir 1/2 cup soup into 3/4 cup cream. Return all to pan; bring to a gentle boil. Mix cornstarch with remaining cream until smooth; gradually stir into soup. Cook and stir for 2 minutes or until thickened. Serve hot or chilled. Serve with whipped cream and additional raspberries if desired.

1 teaspoon vegetable oil, or as needed
1 cup white sugar
1 (16 ounce) can jellied cranberry sauce
3 (3 ounce) packages raspberry-flavored Jell-O® mix
½ cup chopped walnuts
1 cup white sugar for rolling

Steps:

  • Line an 8x8-inch pan with waxed paper; coat the paper with vegetable oil.
  • Combine 1 cup sugar, jellied cranberry sauce, and raspberry Jell-O® mix in a saucepan over medium heat, stirring until sugar and gelatin have dissolved. Bring to a boil, reduce heat to low, and simmer 20 minutes, stirring often. Mix walnuts into candy.
  • Pour candy into prepared pan and let set at room temperature overnight. Cut candy into squares and roll squares in sugar. Place sugared candies onto waxed paper to set.

4 to 6 stalks rhubarb (1 pound), thinly sliced

Steps:

2 tablespoons butter
1/2 cup roughly chopped onions
1/2 cup roughly chopped celery
1/4 cup roughly chopped carrots
2 1/2 cups chicken broth
1 small dried hot red pepper
1 bay leaf
Freshly ground black pepper to taste
1 12-ounce bag cranberries
3 cups cider
Sour cream to garnish, if desired

Steps:

  • In a heavy soup kettle, melt the butter. Gently saute the chopped onions, celery and carrots until the vegetables are soft. Add the chicken broth. Rinse the hot pepper under running water to remove the seeds and inner white membrane. Add to the broth, together with the bay leaf and several grinds of pepper.
  • Rinse the cranberries and pick them over to remove any that are spoiled. Roughly chop the berries on a wooden board or process them briefly in a food processor. Add to the broth and let simmer gently over low heat until the cranberries are soft and disintegrating into the broth.
  • Add the cider to the broth. Mix well and simmer gently for 10 minutes. Serve hot, garnished with sour cream if desired. The soup may also be prepared ahead of time and reheated before serving.

1 cup water
3 cups fresh cranberries
1 cup fresh raspberries
1 teaspoon vanilla extract

Steps:

  • In a saucepan, combine ALL ingredients.
  • Bring to a simmer and cook for 10 minutes, stirring frequently.
  • After 10 minutes, mash up berries using a potato masher or fork or something to mash up the berries. You can mash up all the berries, some, or none, depending on how chunky you like your cranberry sauce.
  • Once mashed cook for 5 more minutes.
  • Allow mixture to cool completely.
  • Serve Chilled.
  • Store in an air tight container up to 5 days.

3 cups water
1 1/2 cups granulated sugar
2 cinnamon sticks
1/4 teaspoon ground cloves
4 cups fresh cranberries
2 tablespoons fresh lemon juice
1 tablespoon orange zest, minced
1/8 cup sour cream

Steps:

  • In a r4-quart sucepan, mix water, sugar, cinnamon sticks & cloves.
  • Bring to boil over high heat, then add cranberries & return to a boil.
  • Reduce heat & cook until cranberries pop, about 5 minutes.
  • Remove from heat & stir in lemon juice & orange zest.
  • Cool to room temperature, then chill about 4 hours in the refrigerator.
  • When ready to serve, top each bowl of soup with a dollop of sour cream.
  • Refrigerate any leftovers.

4 cups cranberries
4 cups apple juice
2 cups raspberries
1/4 cup sugar
2 tablespoons lemon juice
1/2 teaspoon cinnamon
2 cups light cream
2 tablespoons cornstarch

Steps:

  • Washt eh cranberries.
  • Heat the cranberries in the apple juice; simmer for 10 minutes.
  • Press through a sieve.
  • Press the raspberries through the same sieve.
  • Discard what remains in the sieve and return to a boil.
  • Blend in the sugar, lemon juice and cinnamon.
  • Add 1-1/2 cups cream.
  • Mix the cornstarch with teh remaining cream.
  • Add to soup; simmer for 5 minutes.
  • Serve hot or cold.

1 cup dried cranberries
1/2 cup cream sherry
6 tablespoons butter
1 large Spanish onion, peeled and diced
2 celery ribs, diced
5 carrots, peeled and sliced
3 (16 ounce) cans pumpkin
8 cups chicken stock or 8 cups vegetable stock
3 tablespoons dark brown sugar
1/2 cup pure maple syrup
1/4 teaspoon ground nutmeg
1 cup heavy cream
salt and pepper, to taste

Steps:

  • Place the cranberries in a glass or ceramic bowl and add sherry. Cover the bowl and let the cranberries soak at least 2 hours or overnight.
  • In a stockpot, melt the butter over medium heat. Add the onion, celery and carrots and saute 5 minutes.
  • Add the pumpkin, stock, brown sugar, maple syrup and nutmeg and bring to a boil.
  • Reduce the heat to medium and simmer 30 minutes.
  • Remove from heat and puree or blend until creamy.
  • Add the cream and the cranberries with the soaking liquid.
  • Season with salt and pepper and stir well.
