Raspberry Mousse image

I make this raspberry mousse every year when raspberries are in season. You want to use ripe and sweet berries. Adjust sugar amount accordingly.

18 ounces fresh raspberries
7 tablespoons confectioners' sugar, or more as needed
4 tablespoons orange juice
1 (.25 ounce) package unflavored gelatin
1 ¾ cups heavy cream
2 tablespoons vanilla sugar
1 dash lemon juice

Steps:

  • Set a few raspberries aside for garnish. Combine remaining raspberries and confectioners' sugar in a bowl, mix, and set aside for 30 minutes. Pass raspberries through a sieve to strain out seeds. Discard seeds.
  • Pour orange juice into a small saucepan and sprinkle gelatin on top. Set aside for 1 minute. Heat over low temperature without boiling until gelatin is fully dissolved, about 3 minutes.
  • Remove from stove, allow to cool slightly and mix with raspberry puree.
  • Beat cream in a chilled glass or metal bowl using an electric mixer until frothy. Add vanilla sugar gradually, continuing to beat until soft peaks form. Fold whipped cream into raspberry puree. Stir in lemon juice and sweeten with more confectioners' sugar if desired. Cover and refrigerate for 2 hours. Garnish with raspberries.

2 cups fresh raspberries
1/2 cup sugar
1 tablespoon lemon juice
1-1/2 teaspoons unflavored gelatin
1/4 cup cold water
1 cup heavy whipping cream

Steps:

  • Place the raspberries in a food processor; cover and puree. Strain and discard seeds. Transfer puree to a large bowl. Stir in sugar and lemon juice; set aside. , In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Stir over low heat until gelatin is completely dissolved. Stir into raspberry mixture. Refrigerate until slightly thickened, about 1 hour. , Transfer gelatin mixture to a large bowl. Beat on high speed until foamy. Gradually add cream; beat until thickened, about 2 minutes. Spoon into dessert dishes. Cover and refrigerate until set, 1-2 hours.

3 eggs
1 cup of sugar
1 teaspoon vanilla
3/4 cup of flour
1 teaspoon bakingpowder
1/4 teaspoon salt
raspberry jam
Part 2
2 pounds of semi sweet chocolate
1 stick of sweet butter
3 eggs separeted
1 cup of raspberry liquor
2 cups heavy cream
2 cups of frozen or fresh raspberries
2 cups of heavy cream for garnish

Steps:

  • Part 1 Beat eggs on high speed, until very thick aboout 5 minutes. Beat in sugar gradually. Beat in water and vanilla on low speed. Add flour baking powder and salt gradually. Beat until smooth. Pour into a greased and paper lined pan. Bake until a toothpick inserted comes out clean. Immediately loosen cake from sides. Invert on a towel. Let cool, then spread raspberry jam. Roll up like a jelly roll wrap and freeze. Spray a 10 inch bowl with pam. Wrap in plastic wrap. Then cut frozen jelly roll into thin slices. Line inside of bowl. Place in freezer. Part 2 Melt chocolate and butter in a double boiler. Add the egg yolks and raspberry liquor to the melted chocolate. Mix well whip egg whites until soft peaks appear. Fold egg whites into chocolate. Wip heavy cream fold into chocolate mixture. Fold in rasberries. Pour into mold. Let freeze overnight unmold glaze with apricot jam melted. Whip heavy cream and garnish with whipped cream rosettes.

1/2 cup sugar
1 1/3 cup fresh raspberries
2 tablespoons raspberry-flavored vodka, or kirsch
2 cups fresh raspberries
1 envelope (2 1/4 teaspoons) unflavored gelatin
1/2 cup sugar
2 tablespoons light corn syrup
3 large egg whites
1 cup heavy cream
Prepared raspberry syrup, for serving
Mascarpone cheese, for serving

Steps:

  • To make the filling, combine sugar and 1/2 cup water in a small nonreactive, heavy saucepan, and bring to a boil over medium heat. Add 1 1/3 cups of the raspberries and return to a boil without stirring. Transfer to a small bowl and allow to cool completely. Add the vodka. Cover and refrigerate.
  • To make the mousse, puree the 2 cups of raspberries in a blender and set aside. Sprinkle the gelatin into 1/4 cup of cool water and set aside for 3 minutes. Pour 1/4 cup water, 1/2 cup sugar and the corn syrup into a small, heavy saucepan and place over medium-high heat. Insert a candy thermometer.
  • Meanwhile, place the egg whites into the bowl of a mixer and whip until they form soft peaks. When the sugar water has reached 250 degrees, pour it down the sides of the bowl (not directly onto the beaters) into the egg whites while continuing to whip. Add the gelatin mixture and continue to whip until the outside of the bowl is warm, but not hot, about 5 minutes, and the meringue is stiff and glossy.
  • Pour the heavy cream into a large mixing bowl and whisk until it forms soft peaks. Fold half of the raspberry puree into the whipped cream and the other half into the meringue, being careful not to deflate either mixture. Fold the meringue and whipped cream together until combined.
  • Place the mousse in a pastry bag with a large opening, and pipe the mousse into twelve nonreactive cup molds, filling them halfway. Spread the mousse up the sides of the mold. Place a spoonful of the filling into the center of each mold and top with more mousse. Place the molds in the refrigerator to set for at least 3 hours. To serve, drizzle each plate with raspberry syrup, and unmold the mousses in the center of each plate and serve with a dollop of mascarpone on the side.

Water, vegetable oil and eggs called for on brownie mix box
1 2/3 cups semisweet chocolate chips (10 oz)
1 1/4 cups whipping cream
1/3 cup red raspberry jelly
1 container Betty Crocker™ Rich & Creamy cream cheese frosting
1 tablespoon whipping cream
Fresh raspberries, if desired

Steps:

  • Heat oven to 350°F. Grease bottom only of 13x9-inch pan with cooking spray or shortening (for easier cutting, line pan with foil, then grease foil on bottom only of pan). Make brownies as directed on box for 13x9-inch pan. Cool completely, about 1 hour.
  • Reserve 1/4 cup chocolate chips for drizzle. In large microwavable bowl, place remaining chocolate chips and 1 1/4 cups whipping cream and jelly. Microwave uncovered on High 2 to 3 minutes, stirring once every minute, until chocolate is melted. Stir until mixture is smooth (jelly may not be totally melted). Refrigerate about 30 minutes or until slightly thickened.
  • Add frosting to chocolate mixture. Beat with electric mixer on high speed 1 to 2 minutes or until well blended and soft peaks form. Spread over cooled brownies, smoothing top.
  • In small microwavable bowl, microwave reserved 1/4 cup chocolate chips and 1 tablespoon whipping cream uncovered on High 30 to 45 seconds, stirring once, until mixture can be stirred smooth. Drizzle over frosting mixture. Refrigerate 1 to 2 hours or until set.
  • Cut into 12 squares; cut each square diagonally in half to make triangles. Garnish with raspberries.

Raspberries and cream with meringue all frozen together to make mushy fruity creamy heaven! I never can get it just like she does, but its still good none the same. The brandy works well in this and acts more like a flavouring as opposed to a tipple. Simply wonderous, by far the best way to serve raspberries. Thanks Mum!

250 ml double cream (heavy)
250 g raspberries (about 1 punnet)
100 g icing sugar (confectioners)
6 small meringues, roughly crushed
1 tablespoon brandy (optional)
1 teaspoon vanilla extract

Steps:

  • Whip the cream together with the icing sugar, brandy and vanilla.
  • Add the raspberries crushing some of them as they go in along with the meringues.
  • Mix lightly and put into a round pudding dish lined with plenty of cling film that is well overlapping the sides (don't worry if it isn't neat) and freeze overnight.
  • Remove from freezer at least 15 minutes before serving.
  • Turn out onto a plate and remove the cling film (quickly dip bowl into hot water and dry off before inverting if you're having trouble getting the bomb out of the dish) and enjoy!
  • Wish you made double.

  • Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom of 8-inch square pan with shortening or cooking spray. Make and bake brownies as directed on box. Cool completely on cooling rack, about 1 1/2 hours.
  • In medium microwavable bowl, place 3/4 cup chocolate chips, 2/3 cup whipping cream and raspberry jelly. Microwave uncovered on High 1 to 2 minutes, stirring once every 30 seconds, until chocolate is melted. Stir until mixture is smooth (there may still be a little undissolved jam). 2 tablespoons white sugar
2 tablespoons orange liqueur
1 ¾ cups heavy whipping cream
6 ounces white chocolate, chopped
1 drop red food coloring

Steps:

  • Process berries in a blender or food processor until smooth. Strain mixture into a small bowl, and discard seeds. Add the sugar and liqueur, and stir until sugar dissolves. Makes 1 cup of sauce.
  • In a heavy saucepan on low heat, warm 1/4 cup of the cream and the white chocolate, stirring constantly until chocolate melts. Let mixture cool until it is lukewarm. Stir in 1 tablespoon of raspberry sauce, and the food coloring. Transfer to a large bowl.
  • In a medium bowl, whip remaining 1 1/2 cup cream to soft peaks. Fold into melted chocolate mixture, one-third at a time, until no streaks remain.
