RASPBERRY CREAM PIE

Steps:
- Preheat the oven to 350 degrees F.
- To make the crust, crush the cookies in a food processor (or smash in a ziptop bag with a rolling pin). Stir in the melted butter until combined. Pour into a regular pie pan and press the crumbs all over the pan and up the sides. Bake just long enough for it to set, 3 to 4 minutes. Let cool completely.
- Put the raspberries on a plate or in an empty pan. Smash them with a fork, then sprinkle on the sugar. Stir together and allow to sit for 15 minutes.
- In the bowl of an electric mixer, combine the raspberry yogurt with the instant vanilla pudding mix (just the powder itself). Beat on low until combined, about 1 minute. Pour in the heavy cream and whip on low for 30 seconds. Stop the mixer and scrape down the bowl with a rubber spatula. Turn the mixer on medium-high speed and beat until thick, about 2 minutes.
- Turn off the mixer, then fold in the raspberries until just combined. Pour into the cooled crust and spread evenly. Freeze until very firm, about 2 hours. Cut into slices and top each slice with cookie crumbs, dollops of whipped cream and extra raspberries.
APPLE-RASPBERRY WAFFLES

- Preheat waffle iron.
- Sift flour and baking powder into a mixing bowl and add salt. Separate eggs. Mix yolks with milk and add to dry ingredients. Mix together until just blended.
- Add the apple pieces and raspberries and stir in the melted butter. Beat the egg whites with a whisk until stiff but not dry and fold into the batter. Lightly butter or spray the grids of your waffle iron if necessary. And brush or spray them again only if subsequent waffles stick.
- Spoon batter out onto waffle iron (about half a cup for each waffle). Close lid and bake until browned and crisp. Serve at once. Top with maple syrup, served at the table.
EASY RASPBERRY CREAM PIE RECIPE BY TASTY

- On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°. , Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack. , In a large bowl, beat cream cheese, sugar and salt until smooth. Fold in cream. - Bring crushed raspberries and water to a simmer in a saucepan. Simmer for 2 to 3 minutes. Strain and return 1 cup liquid to the pan.
- Whisk sugar, cornstarch, and salt together in a small bowl. Add to the 1 cup liquid, whisking to combine. Bring to a boil over medium heat and cook, whisking constantly, until thick and clear, about 1 minute. Remove from heat and cool slightly, 10 to 15 minutes. Stir in lemon juice.
- Heap fresh raspberries into pie shell. Pour glaze over top. Chill until set, 1 to 2 hours.

- Preheat oven to 200ÃÂðC/fan 180ÃÂðC/Gas 6. Using Forged Cutlery Utility Knife, cut waffles into 2.5-cm pieces; set aside. Coarsely chop white chocolate on Cutting Board using Food Chopper. Place half of waffles into Deep Dish Baker. Sprinkle with half of chopped white chocolate and half of raspberries; repeat layers.
- Place baker in microwave oven. Microwave, uncovered, on HIGH 3 minutes or until raspberries are defrosted.
- Combine caster sugar and flour in Classic Batter Bowl; add soured cream, eggs and vanilla extract. Whisk until well blended using Stainless Whisk. Spoon mixture evenly over top of raspberries using Small Mix 'N Scraper(R).
- Bake 30-35 minutes or until golden brown and set in centre. Remove from oven; cool 10 minutes. Sprinkle with sifted icing sugar. Serve with ice cream, if desired.
RASPBERRY PECAN WAFFLES
Using ingredients for the RSC#11, I came up with a terrific way to serve breakfast! Must admit we had these for dinner too. The pecans and raspberry give these waffles a nice flavor - different than the ordinary waffles! Enjoy --V

- Mix together raspberries, sugar, cornstarch, minute tapioca and water. Mix and let sit while you make your pie crust. (See double crust recipes on this site if you do not have a recipe).
- Put berries in bottom crust, and put 4 - 1 tablespoon pats of butter on top. Put on top crust and crimp edges. Make slits in the crust to allow the steam to escape.
- Bake at 425 degrees F (220 degrees C) for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for 45 minutes.

- Preheat the oven to 350. Thaw or prepare the pie crust according to the package directions. Melt the jam, and let it cool while you assemble the pie.
- In a medium sized mixing bowl, combine the sugar, flour, and salt with a fork to sift. Add the eggs and stir. Add the butter and melted jam, and stir. Stir in the chocolate chips, then pour into the pie crust.
- Bake on a cookie sheet (to prevent oven splillage) for 45 minutes, or until the top has firmed. Let cool before serving. You may also serve it chilled.
