Better than takeout, Thai coconut red curry with prawns is easy, quick, and full of so much flavour! Cook this perfect weeknight dinner in just 15 minutes!

1 tablespoon vegetable oil
2 tablespoons Thai red curry paste
1 (400 ml) can of coconut milk, regular or lite
1 tablespoon dried lemongrass
1 tablespoon brown sugar
12-15 prawns, deveined
1-2 cups snap peas (or green beans)
1 red bell pepper, seeded and thinly sliced
1 green bell pepper, seeded and thinly sliced
1-2 tablespoons Thai fish sauce
1 tablespoon fresh lime juice
1 cup fresh basil leaves
lime wedges (optional, for serving)

Steps:

  • Heat vegetable oil in a large pan or wok on medium heat. Add the red curry paste and cook for 30 seconds.
  • Stir in coconut milk, lemongrass and brown sugar. Stir to combine. Cover and cook for 5 minutes.
  • Add the prawns, snap peas (or green beans), and bell peppers. Cook uncovered for 4-5 minutes until prawns are cooked.
  • Take the wok off heat and add the fish sauce, lime juice and basil leaves. Let it rest for 5 minutes and serve with rice or noodles, and lime wedges on the side.

1 tbsp Olive Oil
1 kg Medium Green Prawns, peeled, deveined, leaving tails intact
3 tbsp AYAM™ Thai Red Curry Paste
270ml AYAM™ Pure Coconut Cream
2 tbsp Fresh Lime Juice
1 tbsp Grated Palm Sugar
2 Kaffir Lime Leaves (options)
1/4 cup Water
1/2 cup Fresh Coriander Leaves

Steps:

  • Heat 1 tablespoon olive oil in a frying pan over a high heat. Add 1kg medium green prawns, peeled, deveined, leaving tails intact and cook for 2-3 minutes or until cooked through. Transfer to a plate and set aside.Reduce the heat to medium. Add 3 tablespoons of AYAM™ Thai Red Curry Paste, 270ml AYAM™ Pure Coconut Cream, 2 tablespoons fresh lime juice, 1 tablespoon grated palm sugar, 2 kaffir lime leaves (optional) and 1/4 cup (60ml) water to the pan. Cook for 5 minutes.Add prawns, stir until heated. Stir in 1/2 cup fresh coriander leaves. Serve with steamed rice.

1 tbsp vegetable oil
1 onion, chopped
1 tsp fresh root ginger
1-2 tsp Thai red curry paste (we used Sharwood's)
400g can chopped tomatoes
50g sachet coconut cream
400g raw frozen prawns
coriander, chopped, to serve (optional)

Steps:

  • Heat the oil in a medium saucepan. Tip in the onion and ginger, then cook for a few mins until softened. Stir in the curry paste, then cook for 1 min more. Pour over the chopped tomatoes and coconut cream. Bring to the boil, then leave to simmer for 5 mins, adding a little boiling water if the mixture gets too thick.
  • Tip in the prawns, then cook for 5-10 mins more, depending on how large they are. Serve alongside some plain rice and sprinkle with a little chopped coriander, if you like.

  • To cook the rice, bring a large pot of water to boil. Add the rinsed rice and continue boiling for 30 minutes, reducing heat as necessary to prevent overflow. Remove from heat, drain the rice and return the rice to pot. Cover and let the rice rest for 10 minutes or longer, until you’re ready to serve. Just before serving, season the rice to taste with salt and fluff it with a fork.
  • To make the curry, warm a large skillet with deep sides over medium heat. Once it’s hot, add the oil. Add the onion and a sprinkle of salt and cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes. Add the ginger and garlic and cook until fragrant, about 30 seconds, while stirring continuously.
  • Add the bell peppers and carrots. Cook until the bell peppers are fork-tender, 3 to 5 more minutes, stirring occasionally. Then add the curry paste and cook, stirring often, for 2 minutes.
  • Add the coconut milk, water, kale and sugar, and stir to combine. Bring the mixture to a simmer over medium heat. Reduce heat as necessary to maintain a gentle simmer and cook until the peppers, carrots and kale have softened to your liking, about 5 to 10 minutes, stirring occasionally.
