BEER BREAD:
Nonstick cooking spray
3 cups all purpose flour
2 tablespoons sugar
1 teaspoon salt
1 tablespoon baking powder
1 (12-ounce) bottle beer (I used Sam Adams Winter Lager)
2 tablespoons honey, at room temperature
1/2 cup margarine, melted
HERB DIP:
8 ounces fat free cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
Fresh or dried dill, to taste
Fresh or dried parsley, to taste
Fresh or dried chives, to taste

Steps:

  • BEER BREAD: Preheat oven to 350°F. and spray a 9x5-inch bread pan with cooking spray. In a large bowl whisk together the flour, sugar, salt and baking powder. Add beer and honey. Using a wooden spoon, mix the beer and the honey into the dry ingredients. Continue mixing until you have a sticky batter. Place it in the bottom of the prepared bread pan. Melt margarine in the microwave on a low setting and pour it over the top of the dough. You can use a pastry brush to spread it out over top of the bread. Bake 60 minutes until the top becomes crusty and golden brown. A toothpick inserted into the middle should come out clean. Cool 5 minutes or completely, slice and serve with Creamy Herb Dip HERB DIP: While the bread is baking you can make the dip. In a mixer bowl with the paddle attachment combine softened cream cheese, sour cream and mayonnaise. Add herbs, mixing well and tasting between additions until you get the flavor you want. Set aside until the bread is done.

1 crusty bread round
2 tablespoons olive oil
1 clove garlic, pressed
1 teaspoon red pepper flakes
1/2 cup shredded Parmesan
1/4 cup (4 tablespoons) salted butter
1 large yellow onion, sliced thin
2 cloves garlic, minced
1 teaspoon red pepper flakes
1/4 cup all-purpose flour
1 cup milk
6 ounces light beer
2 heaping tablespoons grainy mustard
1 cup grated Cheddar
1/2 cup grated fontina cheese
1/2 cup grated mozzarella
Pretzel rods
2 large carrots, cut into sticks
4 stalks celery, cut into sticks

Steps:

  • For the bread bowl: Preheat the oven to 375 degrees F.
  • Remove the top quarter of the bread round, then cut it into cubes and set aside. Using a knife, cut out the interior of the bread round, leaving it hollow. Cube the removed bread and set aside.
  • Mix together the olive oil, garlic and red pepper flakes in a small bowl. Brush the outside and inside of the bread bowl with the oil mix. Place the bread bowl on a sheet pan and sprinkle the inside with the Parmesan. Toss the cubed bread in the remaining oil and place on the sheet pan next to the bread bowl. Bake until crisp, 15 to 18 minutes.
  • For the beer cheese: Meanwhile, add the butter to a large saucepan or high-sided skillet over a medium heat. When the butter has melted, add the onions, garlic and red pepper flakes, then cook until the onions are golden, 8 to 10 minutes. Sprinkle over the flour and stir to combine. Slowly pour in the milk and beer a little at a time, whisking until smooth after each addition. Add the mustard and cheeses and stir until smooth.
  • Pour into the crisp bread bowl and serve alongside the bread cubes, pretzel rods, carrots and celery.

  • In a large bowl, combine the flour, sugar, baking powder, salt and pepper. Stir in beer just until moistened. Fold in cheese and onions. Transfer to four greased 5-3/4x3x2-in. loaf pans. Brush with 2 tablespoons butter., Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Brush tops with remaining butter., Remove loaves to a cutting board; cut each into six slices. Place cut side down on ungreased baking sheets. Broil 4 in. from the heat for 2-3 minutes on each side or until toasted. Remove to wire racks to cool., In small bowl, combine tomatoes and water. Let stand for 5 minutes; drain. In a large bowl, combine the sour cream, mayonnaise, cheese, mushrooms, onions, pepper flakes and tomatoes. Transfer to a greased 1-qt. baking dish. Be sure to use a sheet pan on the shelf below the pan to catch any excess butter that may drip during cooking.

  • Preheat oven to 375 degrees.
  • Mix dry ingredients and beer.
  • Pour into a greased loaf pan.

  • UPDATED NOTES: This recipe makes a very hearty bread with a crunchy, buttery crust. If you prefer a softer crust (like a traditional bread) mix the butter into the batter instead of pouring it over the top.
  • Sifting flour for bread recipes is a must-do. Most people just scoop the 1 cup measure in the flour canister and level it off.
