1 (9 inch) prepared pie crust
12 slices bacon
1 cup shredded Swiss cheese
⅓ cup minced onion
4 eggs, beaten
2 cups light cream
¾ teaspoon salt
¼ teaspoon white sugar
⅛ teaspoon cayenne pepper

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place bacon in a large skillet, and fry over medium-high heat until crisp. Drain on paper towels, then chop coarsely. Sprinkle bacon, cheese and onion into pastry shell.
  • In a medium bowl, whisk together eggs, cream, salt, sugar and cayenne pepper. Pour mixture into pastry shell.
  • Bake 15 minutes in the preheated oven. Reduce heat to 300 degrees F (150 degrees C), and bake an additional 30 minutes, or until a knife inserted 1 inch from edge comes out clean. Allow quiche to sit 10 minutes before cutting into wedges.

3 eggs (or 2 eggs and 2 egg yolks)
whipping cream, half and half or milk
1/2 teaspoon salt
1 pinch pepper
1 pinch nutmeg
1/2-1 cup grated swiss cheese
1 -2 tablespoon butter, cut into pea-sized dots
8 inches pastry shells, partly cooked

Steps:

  • To partly bake the pastry shell:.
  • Bake in middle of oven at 400 degrees F. for 8-9 minutes.
  • For filling:.
  • Preheat oven to 375 degrees F. Place oven rack in upper third of oven.
  • Beat eggs.
  • Add enough cream (or milk or cream-milk combination) so that eggs and cream measure 1 1/2 cups total.
  • Add salt, nutmeg and pepper; mix through.
  • Stir in cheese. Check seasoning.
  • Pour into pastry shell and distribute butter pieces on top. Place on baking sheet.
  • Bake 25-30 minutes or til puffed and browned.
  • Slide quiche onto a hot platter and serve.

1 unbaked pastry shell (9 inches)
1 large onion, chopped
2 cups shredded Swiss cheese
1 tablespoon all-purpose flour

Steps:

  • Spread 1 tablespoon butter over bottom of pastry shell; set aside. In a skillet, saute onion in remaining butter until tender. Spread in pastry shell. Toss Swiss cheese with flour; sprinkle over onion. In a bowl, whisk the eggs, cream and salt. Pour evenly over cheese., Bake, uncovered, at 400° for 10 minutes. Reduce heat to 325°; bake 30-35 minutes longer or until a knife inserted in the center comes out clean. Let stand for 10 minutes before cutting.

4 tablespoons butter
2 tablespoons finely minced onions
1 lb fresh mushrooms, thinly sliced
1 1/2 teaspoons salt
1 teaspoon lemon juice
4 eggs
1 cup half-and-half (10% cream)
fresh ground pepper
1/16 teaspoon ground nutmeg
2 ounces grated swiss cheese
2 tablespoons butter, softened
1 cup sifted all-purpose flour
1/2 teaspoon salt
1/3 cup shortening
3 -4 tablespoons ice water

Steps:

  • For Pastry: Sift together the flour and salt.
  • Using a pastry blender, cut the shortening in until mixture resembles cornmeal.
  • Slowly sprinkle ice water over the top, while tossing the mixture up from the bottom of the bowl with a fork.
  • Gather the dough into a ball, using only enough water to hold the ball together.
  • Wrap ball in waxed paper and refrigerate for 20 minutes.
  • Remove from fridge and roll out into a circle which is 2 inches larger than the diameter of the pie pan being used.
  • Put dough into pan.
  • Place a piece of aluminum foil on the bottom and up the sides of the pie pan.
  • Fill with dry beans (this will stop the pastry from puffing up during baking).
  • Bake in preheated 450F degree oven, on lowest rack, for 12 minutes.
  • Take from oven and remove beans and foil (be careful, they will be hot).
  • Meanwhile, prepare filling: Melt butter, add onions and cook for 1 minute.
  • Stir in mushrooms, 1 tsp salt and lemon juice.
  • Cook, stirring occasionally, until mushrooms are done and all the liquid has evaporated.
  • Continue frying the mushrooms in the butter for about 1 minute.
  • In a large bowl, beat the eggs and cream together.
  • Add the remaining salt, pepper and nutmeg.
  • Stir in the mushrooms.
  • Pour into prepared pastry shell, sprinkle with swiss cheese and dot with softened butter.
  • Bake in preheated 350F degree oven for 35 minutes or until quiche is puffy and browned, and a knife inserted into center comes out clean.
  • Let sit for 10 minutes before serving.

1/3 cup whole milk
4 ounces ham steak, cut into small cubes (1 cup)
1/2 cup shredded Swiss (2 ounces)

Steps:

  • Preheat oven to 400 degrees, with racks in upper and lower thirds. On a rimmed baking sheet, toss together onion, oil, and thyme and spread in a single layer; season with salt and pepper.
  • Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Transfer to a 9-inch pie plate, fold overhang under, and crimp edge. (If dough breaks or cracks, patch holes with extra dough.) Line with parchment and fill with dried beans or pie weights. Place onion on top rack and dough on bottom rack; bake until onion is soft and crust is dry at edge and light golden, 15 to 18 minutes. Remove parchment and beans.
  • In a medium bowl, whisk together eggs and egg whites, milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Stir in onion, ham, and Swiss. Pour mixture into crust and bake on top rack until center is just set, about 25 minutes. Serve warm or at room temperature.

1 cup all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
8 slices bacon, crisply cooked, crumbled
1 cup shredded Swiss cheese (4 oz)
1/3 cup finely chopped onion
4 eggs
2 cups whipping (heavy) cream or half-and-half
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground red pepper (cayenne)
Additional crisply cooked crumbled bacon, if desired

Steps:

  • In medium bowl, mix flour and 1/2 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 425°F. Roll pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch quiche dish or glass pie plate. Fold pastry into fourths; place in quiche dish or pie plate. Unfold and ease into dish, pressing firmly against bottom and side.
  • Sprinkle bacon, cheese and onion in pastry-lined quiche dish. In large bowl, beat eggs slightly with fork or wire whisk. Beat in remaining ingredients. Pour into quiche dish.
  • Bake 15 minutes. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Sprinkle with additional bacon. Let stand 10 minutes before serving.
