1 rack baby back ribs
1 tablespoon olive oil
1 tablespoon liquid smoke flavoring
1 tablespoon brown sugar
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon chili powder
1 cup BBQ sauce

Steps:

  • Remove membrane from back of ribs and dry ribs with a paper towel. Cut rack into 4 pieces. Mix olive oil and liquid smoke in a small bowl and rub on both sides of the ribs.
  • Combine brown sugar, salt, pepper, garlic powder, onion powder and chili powder in a bowl. Season both sides of the ribs generously with seasoning mix. Let ribs rest for 30 minutes to enhance the flavor.
  • Preheat an air fryer to 375 degrees F (190 degrees C).
  • Place ribs bone-side down in the air fryer basket, making sure they are not touching; cook in batches if necessary.
  • Cook for 15 minutes. Flip ribs over (meat-side down) and cook an additional 10 minutes. Remove ribs from air fryer and brush bone-side of ribs with 1/2 cup BBQ sauce. Place basket back in the air fryer and cook for 5 minutes. Flip ribs over, brush meat-side with remaining 1/2 cup BBQ sauce; cook an additional 5 minutes or until desired char is achieved.

2 pounds pork back ribs
2 teaspoons salt
2 teaspoons black pepper
1/2 cup BBQ sauce

Steps:

  • Cut the rack of ribs in small sections such that they fit your air fryer basket.
  • Season all sides generously with salt and pepper.
  • Place the ribs with the meaty side down in the air fryer basket. Set the temperature to 400 degrees Fahrenheit and the timer to 20 minutes.
  • Flip the ribs over at the 10 minutes mark using a pair of tongs. Cook for the remaining 10 minutes. Use a meat thermometer to test for doneness. It should be at least 190 degrees Fahrenheit.
  • Brush the ribs with BBQ sauce and cook for 5 more minutes, still with the meaty side facing up, at the same temperature (400 degrees Fahrenheit).
  • Transfer the ribs onto a serving plate and let them rest for 5 minutes for the juices to redistribute through the meat. Brush with more BBQ sauce, if desired. Enjoy!

Give yourself a break by making this prime rib roast that's packed with flavor and couldn't be easier, thanks to the air fryer. We marinate the prime rib overnight in a simple mixture of salt, pepper and fresh garlic, then rub it generously with an herby compound butter before air frying. The result is a roast that's perfectly seasoned throughout, with the hot circulating air of the fryer providing a crisp, deep-brown crust that mimics the kind you would get from hours of roasting. Serve it with our simple horseradish cream sauce for a surprisingly easy holiday showstopper.

One 3 1/2- to 4-pound bone-in prime rib roast (2 bones)
5 large garlic cloves, 3 quartered lengthwise and 2 minced
Kosher salt and freshly ground black pepper
1 stick (8 tablespoons) unsalted butter, at room temperature
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh rosemary
1 tablespoon crushed pink peppercorn
1 cup sour cream
1/2 cup prepared horseradish, drained well
3 tablespoons finely chopped chives
Kosher salt and freshly ground black pepper

Steps:

  • Make the prime rib: Cut 4 evenly spaced small slits about 1/2-inch deep on the top of the roast with a paring knife. Push a piece of quartered garlic into each slit. Repeat on the other side of the roast. Make 2 slits on the ends of the roast and stuff with the remaining quartered garlic.
  • Combine 4 teaspoons salt and 1 teaspoon black pepper in a small bowl and stir to combine. Sprinkle all over the roast, pressing the mixture firmly onto the exterior and stuffing some into the slits. Refrigerate at least 8 hours and up to overnight.
  • When ready to cook, remove the prime rib from the refrigerator and let it sit at room temperature for 15 to 30 minutes. Stir the softened butter, thyme, rosemary, pink peppercorns and the 2 minced garlic cloves together in a small bowl until combined. Rub the butter all over the prime rib, coating it evenly.
  • Place the prime rib in a 6-quart air fryer and cook at 350 degrees F until deep brown and an instant-read thermometer registers 120 degrees F when inserted into the center of the roast for medium rare, flipping halfway through cooking time, 55 to 60 minutes (see Cook's Note). Transfer to a cutting board to rest for about 15 minutes.
  • Meanwhile, make the horseradish cream: Whisk together the sour cream, horseradish, chives and 1 1/4 teaspoons salt and several grinds of black pepper. Refrigerate until ready to serve.
  • Carve the roast into 1/2-inch-thick slices and serve it with the horseradish cream on the side.

FLORENCE'S FRIED SPARE RIBS

1 slab spare ribs
2 cups vinegar
2 cups lemon juice
2 teaspoons salt
1 tablespoon coarse ground pepper
Florence's Fried Chicken Seasoning, recipe follows
2 cups shortening
2 cups all-purpose flour
2 teaspoons salt
2 teaspoons butcher's grade pepper
1 tablespoon baking powder
1 tablespoon cornstarch

Steps:

  • Trim spare ribs by removing all silver skin. Cut off rib tips. Cut slab into individual ribs.
  • Soak ribs in vinegar in a bowl, covered and refrigerated, turning ribs once, for 15 minutes. Pour off vinegar and add lemon juice. Soak 30 minutes, covered and refrigerated. Rinse ribs with cold water and pat off excess water. Ribs should still be moist. Sprinkle ribs with salt and pepper, then cover in Florence's Fried Chicken Seasoning.
  • Heat shortening in a skillet over medium-high heat until melted.
  • Place ribs in skillet fleshy-side down. Cook until crispy, approximately 10 minutes. Turn and cook an additional 5 minutes.
  • Stir together the flour, salt, pepper, baking powder and cornstarch in a medium bowl.

We added a homemade garlic-herb butter to melt over the steak for a quick and flavorful weeknight dinner.

One 1-pound sirloin steak, about 1 inch thick
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter, at room temperature
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh chives
1 small clove garlic, finely grated
1/4 teaspoon crushed red pepper flakes

Steps:

  • Allow the steak to sit at room temperature for 30 minutes before cooking.
  • Preheat a 3.5-quart air fryer to 400 degrees F. Season the steak on both sides with a generous pinch of salt and several grinds of black pepper. Place the steak in the center of the air fryer basket and cook until desired doneness, about 10 minutes for medium-rare, 12 minutes for medium and 14 minutes for medium-well. Transfer the steak to a cutting board and allow to rest, about 10 minutes.
  • Meanwhile, mash together the butter, parsley, chives, garlic and crushed red pepper in a small bowl until combined. Slice the steak against the grain into 1/4-inch-thick pieces. Top with the garlic-herb butter.

Make sure you dip them in the warm barbeque sauce immediately after they are done cooking--they'll absorb more flavor while still hot.

3 teaspoons paprika
1 full rack St. Louis-style pork ribs, separated (2 1/2 to 3 pounds)
2 cups ketchup
1/3 cup apple cider vinegar
1/3 cup distilled white vinegar
1/3 cup packed dark brown sugar
2 tablespoons Worcestershire sauce
1 to 2 teaspoons hot sauce

Steps:

  • Whisk together 1 tablespoon salt, 2 tablespoons pepper and 1 teaspoon of the paprika in a large bowl until well combined. Add the ribs and toss to coat, pressing the seasoning into each rib.
  • Preheat a 3.5-quart air fryer to 350 degrees F. Transfer the ribs to the fryer basket and cook until the ribs are tender and golden brown, about 40 minutes.
  • Meanwhile, combine the ketchup, cider vinegar, white vinegar, brown sugar, Worcestershire, hot sauce, 2 teaspoons salt, 2 teaspoons pepper, 3/4 cup water and the remaining 2 teaspoons paprika in a medium saucepan. Cook over medium heat, stirring frequently, until the sugar is melted and the sauce is warmed through, about 2 minutes. Cover and keep warm over low heat.
  • Once the ribs are cooked, dip each one into the sauce, letting any excess run off. Serve with the remaining sauce on the side.

2 tablespoons toasted sesame seeds, plus more for sprinkling
4 large cloves garlic, pressed
1 cup soy sauce
2 tablespoons sherry
2 tablespoons honey
2 tablespoons sesame oil
2 tablespoons water
2 teaspoons fresh ginger, finely grated
1/2 cup chopped scallions (green and white parts, mixed), plus more green tips for sprinkling
1 tablespoon red chili flakes
6 pounds short ribs, cut into thin pieces, about 2 1/2 inches long

Steps:

  • Grind the sesame seeds in a coffee grinder until fine. Place the ground sesame seeds in a medium bowl and add the garlic, soy, sherry, honey, sesame oil, water, ginger, scallions, and red chili flakes; stir until thoroughly combined. Place the ribs in a large baking dish, pour the marinade over, and turn to coat. Cover and let marinate in the refrigerator for 2 to 3 hours.
  • Preheat the grill to medium-high. Remove the ribs from the marinade and grill on both sides until golden brown and crispy, about 15 minutes. Reduce the heat of the grill, close the cover, and grill until tender, about 15 minutes longer. Remove to a platter and sprinkle with sesame seeds and green onions.

6 cloves garlic coarsely chopped
4 racks pork ribs
2 tablespoons unsalted butter
1 large onion, finely diced
2 cloves garlic, finely diced
8 plum tomatoes, coarsely chopped
1/4 cup ketchup
1/2 cup water
2 tablespoons Dijon mustard
2 tablespoons dark brown sugar
2 tablespoons honey
1 teaspoon cayenne
1 tablespoon ancho chile powder
1 tablespoon paprika
1 tablespoon Worcestershire sauce
1/2 cup smooth peanut butter
1/4 cup soy sauce
1 tablespoon rice wine vinegar
1 tablespoon pureed canned chipotle
1/4 cup molasses
2 cups roasted peanuts, coarsely chopped
1/4 cup finely sliced green onion
1/4 teaspoon ground cinnamon
1 teaspoon finely grated ginger
1/2 teaspoon sugar

Steps:

  • For the Grilled Ribs: Preheat oven to 400 degrees F. Combine the soy sauce, water, ginger and garlic in a medium saucepan and bring to a boil. Turn off heat and let cool. Pour soy sauce mixture in bottom of pan. Place ribs on a rack in a large roasting dish. Bake ribs for 40 minutes, basting with sauce. Finish on grill to make marks.
  • For the Peanut-chipotle Sauce: In a large saucepan, over medium high heat, heat the butter and sweat the onion and garlic until translucent. Add the tomatoes, ketchup and water and simmer for 15 minutes. Add the next 7 ingredients and continue cooking for 20 minutes. Puree the mixture in a food processor, pour into a bowl and whisk in the peanut butter, soy sauce, vinegar and chipotle. Preheat grill. Remove ribs from marinade. Grill the ribs turning and brushing with the sauce until cooked through.
  • For the Peanut-Green Onion Relish: Combine all ingredients in a bowl. Serve immediately.
