Ingredients

2 lbs thickly sliced smoked pork, picnic shoulder
1 1/3 cups apple juice
1/3 cup packed brown sugar
3/4 teaspoon dry mustard

Steps:

Put ham slices in a single layer in a roast pan with a cover.
Combine apple juice, brown sugar, and dry mustard.
Pour over ham.
Bake, covered, at 350F for about 2 hours, or until liquid reduces to approximately 1/2 - 1 cup.
Turn ham slices occasionally during cooking time.

SPICY HAM SLICE/STEAK

I'm not a big ham fan but I just LOVE this dish. Easy to do, very forgiving - you can substitute different kinds of juice or soda. Ham steaks freeze well and thaw fast so it's good for a week night. Fairly economical if you get the ham on sale. I love to have it with orange rice where I substitute about a half a cup of OJ for water with plain old white or even brown rice, and a nice green salad. Enjoy!

Ingredients

1 slice ham steak
1/2 cup orange juice (apricot or pineapple work well, too, so does Tang!)
1/2 cup ginger ale (or Sprite, 7-Up or a cola drink)
1/2 cup packed brown sugar (I usually use light)
1 teaspoon dry mustard
1 teaspoon red wine vinegar
1 tablespoon oil
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger

Steps:

Prick ham slice with a fork all over to make holes and slash the edges so it won't curl during baking.
Place in baking dish just big enough to hold slice.
Mix all other ingredients together well and pour over ham.
Marinate at least 30 minutes but can be longer (some times I do it in a baggie overnight).
Put in 350* oven, bake for about 30 minutes. Mmmm!

These yummy sliders are a huge hit with the family and with the folks at our local church when we bring these to brunch! Feel free to play around with the fillings....sometimes we make these with sliced turkey and cheddar cheese. I also use spicy brown mustard at times instead of plain yellow mustard. Have fun and enjoy!

2 pkg king hawaiian rolls
1 pkg thin sliced deli ham
1-2 pkg swiss cheese, sliced
POPPY SEED TOPPING
1 stick butter, melted
1 tsp worcestershire sauce
1 1/2 Tbsp mustard
1 Tbsp dried minced onion
1 Tbsp poppy seeds

Steps:

1. Cut the top off rolls and set aside. Place a slice of ham and a slice of Swiss inside of each roll. Replace tops. Place them into a large baking dish or heavy cookie sheet tightly together.
2. In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly
3. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm.

1/4 cup packed brown sugar
1-1/2 teaspoons all-purpose flour
1/2 teaspoon ground mustard
2 tablespoons ginger ale
1 tablespoon cider vinegar
2 boneless fully cooked ham slices (1/2 to 3/4 pound and 1/2 inch thick)

Steps:

In a skillet, combine the brown sugar, flour, mustard, ginger ale and vinegar. Bring to a boil over low heat; cook and stir for 2 minutes or until sugar is dissolved and sauce is thickened. Add ham slices and heat through.
