RED BLISS POTATO SALAD WITH BLUE CHEESE, BACON, AND CHIVES
Reminiscent of baked potatoes topped with bacon and chives, this side dish envelops vibrant red potatoes in a tangy blue cheese and buttermilk dressing.

- Place potatoes and the salt in a medium saucepan. Cover with water, and bring to a simmer. Cook until a knife pierces through potatoes with little resistance, about 12 minutes. Drain, and let cool slightly. Halve potatoes.
- Meanwhile, mix blue cheese, buttermilk, vinegar, and mustard in a bowl until well combined.
- Combine potatoes, dressing, chives, and almost all of the bacon in a large bowl. Garnish with blue cheese, chives, and remaining bacon.
CREAMY BACON CHIVE HASSELBACK POTATOES RECIPE BY TASTY

- Preheat oven to 425°F (220°C).
- Using a sharp knife, make crosswise cuts in each potato, about ⅛ inch (3 mm) apart, stopping about ¼ inch (6 mm) from the bottom.
- Microwave your potatoes for 5 minutes per potato.
- Mix together melted butter, minced garlic, and minced parsley.
- Brush on the potato. Sprinkle with salt and pepper to taste.
- Insert 6-8 slices of bacon into the middle section of slots in the sliced potato.
- Transfer the potatoes to the oven and bake until the outsides are browned and crisp, about 30 minutes, basting with more butter if needed.
- In a sauce pan, combine the milk, cream cheese, salt, and pepper. Heat and stir until well-combined and smooth.
- Add in the chopped chives to the cream cheese sauce.
- Stir and pour over the crispy potatoes. Add extra chives for garnish.

- Preheat oven to 400 degrees F. Scrub the potatoes well and cut them in half. In a bowl combine the potatoes with the olive oil, garlic, salt and pepper, tossing to coat. Arrange the potatoes in a roasting pan in a single layer and sprinkle with 1/4 cup water. Roast the potatoes for 45 minutes or until the potatoes and garlic are tender and golden brown. In a serving bowl toss the potatoes and garlic with the Parmesan and parsley.;
BACON-ROSEMARY-RED BLISS HASH

- Put potatoes in a large pot and cover with water by at least 3 inches. Add salt and bring to a boil over high heat. Reduce heat and simmer potatoes until fork tender, about 25 minutes.
- Drain potatoes and return to pot to cool slightly. Roughly smash potatoes in pot with a masher or a large fork.
- Heat a large nonstick skillet over high heat. Add the bacon and cook until bacon is crispy and has given up most of its fat. Lower the heat to medium-high, add the rosemary and season with salt and pepper. Make sure bacon and rosemary are evenly distributed in the pan then add the potatoes.
- Pat down with a spatula so the potatoes are in an even layer. Season the top of the potatoes with salt and pepper.
- Cook until a nice brown crust has formed on the bottom, about 5 to 7 minutes. Use the spatula to flip the potatoes, cook until brown on the other side, about 5 minutes.
CHEESY RED BLISS GARLIC POTATOES
So Simple. So delicious. So Inexpensive. You can tweak this recipe in so many ways. I've added red pepper and onions. Left the cheese off for those crazy people that don't like cheese. Switched up spices. It's endless.

Steps:
- Slice Potatoes 1/4" thick and place in large plastic bag.
- Add seasoning packet, red pepper and parmesan cheese.
- Use enough olive oil to just coat potatoes and toss.
- Refrigerate an hour if possible.
- Place in casserole and bake 350 for 45 minutes.
- Add shredded cheddar or any good meltable cheese and place back in oven for 5-10 minutes. (if you like golden & harder cook a bit longer before adding cheese).
