PINEAPPLE PORK CHOPS
A very easy and delicious way to cook pork chops with a sweet, but not too sweet, sauce. I recommend serving the pork chops with white rice since the sauce is also excellent on the rice.

Steps:
- Heat the olive oil in a skillet over medium heat, and brown the pork chops about 5 minutes on each side. Remove chops from the skillet, and set aside.
- Mix the chicken broth, soy sauce and vinegar into the skillet, and bring to a boil. Return the pork chops to the skillet, reduce heat, and simmer 20 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove chops from the skillet, reserving broth mixture, and set aside.
- In a bowl, blend the brown sugar, cornstarch, and pineapple juice. Mix into the skillet with the chicken broth mixture. Bring to a boil. Serve with the cooked pork chops.

SHREDDED PORK AND PINEAPPLE TACOS

- For the slow-cooker shredded pork: Combine the tomato sauce, chili powder, brown sugar, coriander and cumin in the base of your slow cooker. Stir to combine and distribute the spices evenly. Sprinkle the pork with salt and pepper and place it in the slow cooker. Using tongs, turn the pork to coat it evenly in the sauce. Add in the garlic and onions, stir again. Place the lid on the slow cooker and cook until the pork is tender and beginning to fall apart, on low 8 to 10 hours or on high 4 to 6 hours. Transfer the pork to a serving bowl. Allow to cool slightly, and then shred using 2 forks, removing any excess fat. Skim any excess fat off of the sauce remaining in the slow cooker. Stir in the lime juice and season with salt and pepper. Add the shredded pork back into the slow cooker and mix it with the sauce that was created during the cooking. You can store the pork in its sauce for 3 to 4 days.
- For the pickled red onions: In a small saucepan over medium-high heat, bring the lime juice, sugar, vinegar and jalapeno to a simmer, stirring occasionally until the sugar dissolves, about 2 minutes. In a separate bowl, add the sliced onions and pour the vinegar mixture over the onions. Cover with plastic wrap and let cool for about 20 minutes. Discard the liquid before using.
- For the tacos: Assemble the tacos using the warm tortillas and half of the shredded pork (about 1 1/2 pounds). Top with the pineapple, cilantro, cabbage, cheese, Pickled Red Onions and a squeeze of lime juice. Season with salt. Reserve the remaining pork for another use. Serve alongside guacamole and pico de gallo, if desired.
RED-BRAISED PORK WITH FRESH PINEAPPLE
"Wonderful!" was the comment scribbled in the margin of this recipe when my friend and colleague, Donna Adams, tested it. The dish improves if prepared ahead of time and reheated. The pork freezes very well, but the pineapple does not, so add the fruit just before serving. You must use fresh pineapple, as the acidity of the fresh fruit provides the balance needed in the sauce. Serve this dish with white rice.

- In a carbon-steel, stainless-steel, or coated aluminum wok, heat the oil over high heat until just smoking. Add the pork in three batches and brown on all sides. Remove the meat to a plate. Add the ginger and scallions, and stir-fry for 30 seconds. Return the pork to the pan. Reduce the heat to medium and add the tangerine peel, five-spice powder, sherry, soy sauce, sugar, and water.
- Bring to a boil, reduce the heat to low, then cover and simmer for 30 minutes. The dish may be prepared up to this point and frozen. Add the pineapple chunks and continue cooking for another 15 to 20 minutes, until the meat is tender when pricked with a fork. Using a slotted spoon, remove the pork and pineapple to a serving platter. Add the cornstarch mixture to the sauce, bring to a boil, and cook for 1 minute, until the sauce thickens. Pour the sauce over the pork and serve.
PORK WITH GREEN PEPPERS & PINEAPPLE
This is a fairly simple stir fry dish. This could probably be adapted to different tastes quite easily such as different vegetables and/or meat. Prep time does not include marinating time.

- Slice pork thinly (meat is easier to slice when partly frozen).
- Combine soy sauce& 1 tbls.
- cornstarch in a bowl.
- Marinate pork in this mixture at least 15 minutes but an hour or more is better.
- Mix remaining 1 tbls. cornstarch with sugar& 1/2 cup pineapple juice, set aside.
- Heat oil in large skillet or wok.
- Add pork to skilled& stir fry until done, time depends on sizes of pork pieces but it should only take a few minutes.
- Add pineapple juice mixture to meat& blend thoroughly, remove from pan.
- Stir fry green pepper, carrots& pineapple chunks for about 3 minutes.
- Return meat& juice mixture to pan, stir just until heated through.

PINEAPPLE PORK

- Trim the tenderloin of external fat and cut into inch-thick slices.
- Mince the garlic and combine in bowl large enough to hold meat, with red pepper flakes, vinegar and brown sugar. Add the meat and turn to coat both sides with marinade. Set aside while preparing the rest of the meal.
- Place the meat and marinade in a small skillet and cook over medium-high heat, turning meat once or twice, until the liquid has almost completely evaporated.
- Cut up enough pineapple, in very small pieces, to make 1 cup. Add, with juices, to the pork and continue cooking until the pork is done, a total of about 10 minutes.

GRANDMA'S HONG SHAU ROU (RED BRAISED PORK)
I have been reading about this traditional Chinese dish on the Internet and found there are many different versions of it. Some are spicy, incorporating chile and ginger. Others have the spices of star anise, cinnamon, and lots of garlic added too. The recipe my grandma passed on to us here is the garlicky one. Garnish with some chopped spring onions or cilantro and serve with steamed white rice or buns. I like to serve a side dish of pickled cucumber slices with the pork and this tanginess brings another dimension to the dish. Chi Fan (time to eat)!

- Bring a pot of water to a boil; add pork belly. Cook until pork belly softens, about 5 minutes. Drain and cool pork until easily handled, 5 to 10 minutes. Cut into 2-inch chunks.
- Heat vegetable oil in a large pot over medium-low heat. Add cinnamon stick and star anise; fry until fragrant, about 30 seconds. Stir in pork belly, light soy sauce, Shaoxing wine, dark soy sauce, sugar, and garlic. Reduce heat to very low and simmer, stirring occasionally and adding water if sauce reduces too quickly, until pork is tender, about 50 minutes.

SLOW-COOKED RED BRAISED PORK BELLY
This is one of the most common Chinese household dishes. You almost never find this dish in restaurants because it takes a long time to cook and because it is gloriously fatty. Serve with steamed rice and your choice of vegetable.

- Fill a large pot with water and bring to a boil. Add pork belly; cook until starting to soften, about 5 minutes. Drain.
- Heat vegetable oil and brown sugar in a wok or large skillet over medium heat until sugar is melted. Add pork; cook until browned on all sides, about 2 minutes. Add dark soy sauce; cook and stir until flavors combine, about 5 minutes.
- Transfer pork mixture to a slow cooker. Add rice wine, light soy sauce, scallions, ginger, and star anise. Pour in enough water to just cover the pork.
- Cook on Low until pork is tender, about 6 hours. Add diced chicken substitute, hard-boiled eggs, and more water to cover.
- Cook on Low until eggs absorb cooking liquid, rotating halfway through, about 1 hour more.
