- Heat oil in a medium size saucepan. Stir in cabbage and onion; fry until wilted. Stir in apple and water, salt and pepper. Cover and simmer about 25 minutes.

My German grandmother passed this recipe down to my mother, who gave it to me. I remember eating it as a small child. This vegetable dish can be made quickly and goes great with roast pork or barbecued ribs, potatoes and biscuits.

- In a large Dutch oven or heavy pot, melt butter over medium. Add onion and apple; cook, stirring, until onion softens, 4 to 6 minutes. Stir in red cabbage and season with salt and pepper. Add vinegar, sugar, and water. Bring to a boil; reduce to a simmer, cover, and cook until cabbage is tender, 20 to 25 minutes. Season with salt, pepper, and sugar.

GRILLED APPLE AND CABBAGE SAUERKRAUT
Steps:
- Place the shredded cabbage in a large, heat-proof mixing bowl. In a medium saucepan, combine the vinegar, sugar, pickling spice, 2 teaspoons salt and 1 1/2 cups water. Bring to a boil, stirring to dissolve the sugar and salt, then pour the mixture over the cabbage. Set a plate on top of the cabbage to weight it down. Refrigerate and leave to pickle for 4 hours.
- Preheat a grill or grill pan to high. Quarter the apples and cut out the cores. Toss the apples in a bowl with the lemon juice and olive oil and season with salt and pepper. Grill the apples for 1 minute on each side to achieve nice grill marks. Set the apples aside to cool, then cut them into dice.
- When the cabbage is ready, drain it well and return it to the bowl. Fold in the grilled apples and serve.

- Melt butter in a large pan. Add sugar and stir until it has a light caramel color, about 5 minutes. Add onion and apples; cook and stir until the onions start to soften, about 5 minutes. Add cabbage and cook until heated through, about 5 minutes.

- Sterilize any equipment you will be using for fermentation, especially the jars (we prefer using mason jars or these Weck Jars that hold about 850 ml). It is extremely important that everything is sterilized to allow for proper fermentation. Do so easily by pouring boiling water over clean jars and lids and drying completely. Let jars come back to room temperature before adding ingredients.
- Add finely grated cabbage (we used our mandolin) to a large mixing bowl and top with sea salt. Wash hands thoroughly and massage cabbage for 10 minutes. The cabbage should start softening, shrinking in volume, and releasing water. Continue massaging until this happens.
- Add radish, apple, ginger, and garlic and massage once more with clean hands for 4-5 minutes until thoroughly combined. Then taste test and adjust flavor, adding more salt for saltiness, grated ginger for more zing, or garlic for more intense garlic flavor.
- Use your clean hands to put the sauerkraut mixture into your sterilized jars and press down firmly to pack. There should be enough liquid from the massaging to rise up and cover the vegetables. If this doesn't happen, top with filtered water until covered (it is unlikely that you will need to add water).

- To prepare the sauerkraut, begin by thinly shredding the cabbage, using a mandolin. Alternatively, slice very thinly, using a knife. Cut the apple in small pieces too.
- Combine the cabbage, apple and salt in a bowl and and gently massage into the cabbage. The salt will help the cabbage to soften and release liquid. This liquid will actually become the brine solution that the sauerkraut will ferment in.
- Transfer the cabbage and the liquid to a jar or other non-reactive container. Tap the jar to release some of the air bubbles. If needed, add a bit more Brine Solution (see below), so that once weighted, the cabbage will be completely submerged.
- Cover the weighted container with a clean towel or cloth to allow the fermentation process to begin. You can also buy special lids that will allow the carbon dioxide to escape.
