- Heat a skillet over medium high heat. Add oil and onion and saute 2 minutes. Add cabbage and turn in pan, sauteing it until it wilts, 3 to 5 minutes. Add vinegar to the pan and turn the cabbage in it. Sprinkle sugar over the cabbage and turn again. Season with mustard seed, salt and pepper and reduce heat a bit. Let cabbage continue to cook 10 minutes or until ready to serve, stirring occasionally.

- Preheat oven to 450 degrees. Cut cabbage into 12 wedges; remove thick core and discard. Pull wedges apart; toss on a large rimmed baking sheet with oil, 2 teaspoons salt, and 1/4 teaspoon pepper.
- Cover sheet tightly with foil. Bake until cabbage is crisp-tender, about 20 minutes.
- Remove foil; continue cooking, tossing occasionally, until tender and browned in spots, 20 to 25 minutes more. Toss with vinegar.

- Melt butter or margarine in a heavy large pot over medium-high heat. Add onion, allspice, and nutmeg; toss for 1 minute. Add cabbage and apricots. Saute until well coated, about 2 minutes. Add apricot preserves and vinegar. Toss until juices are reduced to glaze and cabbage is crisp-tender, about 6 minutes. Season with salt and pepper. Store, covered, in the refrigerator if making ahead.

- In a large frying pan, heat olive oil over medium heat. Add onion and cook 3-5 minutes, until soft.
- Add red cabbage to pan and cook, tossing, for 2-3 minutes, until color turns bright and cabbage is coated in oil.
- Cover and cook 6-8 minutes, until cabbage is crisp tender. Stir in olives and vinegar. Season to taste with salt and pepper.

RED CABBAGE SALAD WITH FETA CHEESE AND OLIVES
This is a really morish salad, rich in flavour. It is great served with just about anything! And an all time favourite of many to whom I have served it too. Also a good salad to prepare in advance - infact it's better if it is - (the 'older' it gets, the better it gets!!!!)

- Combine all salad ingredients together- one or two at a time- EXCEPT the Cherry Tomatoes and toss WELL.
- Combine all DRESSING ingredients together in jar or bottle and shake well, and taste.
- Drizzle dressing a little at a time over salad, and toss well to coat the salad evenly.
- Add the halved Cherry Tomatos last.

- Heat oil in heavy large pot over medium-high heat. Add onion and garlic; sauté until beginning to brown, about 8 minutes. Add cabbage and caraway seeds; sprinkle with salt and pepper. Toss until cabbage is wilted, about 4 minutes. Add broth. Cover, reduce heat to low, and simmer 15 minutes. Add vinegar.
