Categories     Entrees     Main Courses

Time 3h30m

Number Of Ingredients 12

5 pounds corned beef brisket with seasoning packet
10 small red potatoes (washed, quartered)
5 carrots (peeled, cut into 2-inch pieces)
1 cabbage (sliced)
1-2 tablespoons olive oil
Salt and pepper (to taste)
1/2 cup orange juice
3/4 cup packed brown sugar
2 tablespoons water or corned beef juice
1 teaspoon whole grain mustard
1/4 cup bourbon
1 tablespoon cornstarch

Steps:

  • Place brisket in a large stockpot. Cover with water and add seasoning packet.
  • Bring pot to a boil, then simmer for about 3 hours until meat is tender. Reserve 2 tablespoons of the cooking liquid for the glaze. When meat is done, remove from the pot and discard the cooking liquid.
  • In a small saucepan, combine orange juice, brown sugar, corned beef juice, mustard, and bourbon.
  • Whisk in cornstarch until smooth. Bring to a boil and cook until glaze has thickened, about 1-2 minutes.
  • Preheat the oven to 350 degrees.
  • Arrange vegetables in a single layer on a roasting pan. Drizzle with olive oil. Sprinkle with salt and pepper.
  • Place the corned beef in the roasting pan on top of the vegetables. Apply glaze liberally over the top of the entire corned beef.
  • Place corned beef and vegetables in the oven. Glaze the corned beef every 10 minutes for 30 minutes .
  • Remove the corned beef from the oven and set on the counter to rest for 15 minutes.
  • Turn on the broiler and continue to roast the vegetables until they start to brown, about 5-10 minutes.
  • Slice the corned beef against the grain. Serve over roasted vegetables. Drizzle with the glaze.

CORNED BEEF WITH BOURBON-MOLASSES GLAZE

Corned Beef with Bourbon-Molasses Glaze image

Get into the spirit of St. Paddy's Day with Andrew Zimmern's crazy-easy version of corned beef with a sticky bourbon-molasses glaze. (If you want to cure the meat for this recipe yourself, we've got instructions for that, too! Another easy project if you have the time-about a week-and room in your fridge.) The results are out of this world.

Provided by Andrew Zimmern

Categories     main-dish

Time 3h30m

Yield 8 servings

Number Of Ingredients 26

1 whole beef brisket, 10?12 lbs.
cold water
1/3 cup paprika
1/2 cup brown sugar
3 bay leaves
1 tablespoon ground allspice
2 tablespoons black peppercorns
2 tablespoons granulated garlic
1/4 cup pickling spice
2/3 cup Prague powder pink curing salt, available online
8 cups beef stock, plus more as necessary, to fully cover beef
1 stick cinnamon
1 teaspoon mustard seed
8 black peppercorns
2 bay leaves
1 corned beef brisket, 4?5 lbs., from corned beef brisket recipe, or store-bought
1/4 cup molasses
1 teaspoon dry mustard
1/4 cup bourbon
1 cup brown sugar
4 tablespoons unsalted butter
8 Kaiser rolls
1/2 cup mayonnaise
2 tablespoons sweet pickle relish
3 tablespoons chili sauce, preferably Heinz brand
kosher salt

Steps:

  • Corning the beef (optional): Lay the brisket on a flat surface. Feel where the fat is thickest, and use a sharp knife to trim off about half of the fat. Discard the fat. Square the meat off by trimming the edges so it cures and cooks evenly. You should be left with a brisket that's about 4-5 pounds. (Note: This recipe calls for half of a whole brisket. Save the trimmed meat for another recipe, such as Edward Lee's Korean-Style Texas Chili.)
  • Place the trimmed brisket into a non-reactive container. Pour in enough cold water to cover by one inch. Add paprika, brown sugar, bay leaves, allspice, peppercorns, granulated garlic, pickling spice, and Prague powder. Use your hand to stir the ingredients into the water, and gently move the brisket around in the liquid to help dissolve the sugar. Let the meat rest fat side up in the curing mixture. Cover container with the lid and refrigerate, 7-8 days.
  • Corned beef: Pour broth into a stockpot; add cinnamon, mustard seed, peppercorns, and bay leaves. Pull the corned beef brisket out of the curing solution and rinse with cold water. (Note: Alternatively, start by rinsing pickling spices off a 4- to 5-lb. store-bought corned beef.) Place the corned beef into the pot and bring to a boil over high heat. Cover, reduce to a simmer, and cook until spoon-tender, or to an internal temperature of 175 F, about 2-3 hours. (Alternatively, you can place the meat in a 275 degrees F oven for the same length of time.)
  • Preheat broiler. Remove corned beef from cooking liquid, pat dry on a dish towel, and place on a rimmed baking sheet. If you're cooking the nose portion of the brisket, trim off the top for even glazing. Combine molasses, mustard powder, bourbon, and brown sugar in a bowl to make the glaze; stir until all of the ingredients are thoroughly combined. Pour ⅓ of the glaze on top of the corned beef, distributing evenly. Place the corned beef 6 inches under broiler for about 1 minute. Remove and pour on half the remaining glaze. Place under the broiler for 30-40 seconds. Remove and pour the rest of the glaze onto the corned beef and broil another 30-40 seconds.
  • Assembly: Remove corned beef from oven and let rest on a cutting board while preparing the buns, about 10 minutes (reserving the drippings in the pan). In a skillet, heat 1 tablespoon of butter over medium heat until it's foaming. Add 1-2 buns, cut side down, and cook until light brown and toasted, 30 seconds. Continue with remaining butter and buns until all are toasted. Meanwhile, make Thousand Island dressing: Combine mayonnaise, relish, and chili sauce in a bowl; season to taste with salt and stir. Slice corned beef at an angle, against the grain. Place on a serving platter and drizzle with reserved drippings from the pan. To make a sandwich, layer corned beef on griddled buns and top with a dollop of dressing.

Yield 8

Number Of Ingredients 5

1 (5-lb./2- and- 1/4-kg.) corned beef, first cut
3 tablespoons Haddar Dijon Mustard
3 tablespoons packed dark brown sugar
1/2 cup red currant jam (you can sub with pomegranate or raspberry)
2 teaspoons Boondocks Spice Project American Whiskey or other bourbon

Steps:

  • Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
  • Rinse and pat corned beef dry. Lay in the center of a long piece of aluminum foil (at least 30 inches). Smear Dijon mustard over the entire top of the meat. Sprinkle brown sugar evenly over the mustard.
  • Bring the edges of the foil together and seal, leaving space between the meat and the foil for a tent effect. Seal the sides well.
  • Transfer the meat to a baking pan. Bake for two and a half hours (if using a smaller corned beef, bake for just two hours). Remove from oven.
  • Open the foil carefully so you don't get burned by escaping steam. There will be a lot of liquid surrounding the meat. Save this for serving.
  • Raise oven temperature to broil. Combine the jelly and bourbon. Smear over the entire top of the meat.
  • Broil four to five minutes on the middle rack of the oven. Cool for 15 minutes and slice. When serving, drizzle with some of the reserved liquid.

WHOLE ROASTED BEEF TENDERLOIN WITH A GREEN PEPPERCORN BUTTER

Whole Roasted Beef Tenderloin With a Green Peppercorn Butter image

I know there are many recipes out there for a whole roasted beef tenderloin. I myself have several recipes, and I love them all. But this is always a favorite and very basic. You will have to purchase green peppercorns packed in water (Whole Foods or most specialty markets carry these, but some local grocers carry them as well) and the tenderloin itself which will be expensive, but it is worth it - this is just a classic simple dish. Besides, if you are going to buy an expensive cut of beef for a special occasion ... you want to treat it with respect and not cover up the flavor. It is five (5) ingredients for the marinade/rub; then pan seared in butter and oil and finished in the oven. A simple finish with a green peppercorn butter. It is perfectly elegant. This isn't an every day dish, but great for a holiday or special occasion. And if you don't want to make as much, simply cut the recipe in half. Prep time does not include the marinade time.

Time 30m

Yield 8-10 Slices of tenderloin, 8-10 serving(s)

Number Of Ingredients 17

4 -5 lbs whole beef tenderloin
1 tablespoon black peppercorns, crushed (not ground)
1 tablespoon kosher salt
1 tablespoon Dijon mustard
1 tablespoon minced garlic
1 1/2 tablespoons olive oil
1 tablespoon olive oil (to sear the tenderloin)
1 tablespoon butter (to sear the tenderloin)
1/2 cup unsalted butter
1 tablespoon drained green peppercorn, rough chopped (they usually come packed in a brine or water, available at specialty food stores)
1 shallot, minced very fine
1 teaspoon fresh lemon juice
1/2 teaspoon Dijon mustard (no yellow mustard)
1/4 teaspoon Worcestershire sauce
1/4 cup fresh parsley, fine chopped
gorgonzola, crumbles
onion rings, very thin sliced and fried

Steps:

  • Marinade/Rub -- In a small bowl, add the black peppercorns (crushed) not ground. To crush my peppercorns I put them in a small baggie and use a meat mallet or rolling pin and just hit them until they are roughly crushed. Add the salt, dijon mustard, garlic, olive oil and mix well. Take this mixture and rub all over the meat very well. Put the meat in a glass not metal pan and cover with plastic wrap and let marinate all day. At least 4 hours, but I have even let it go overnight and it tasted great.
  • Butter -- In a small bowl, add the butter, green peppercorns drained and rough chopped, shallot, lemon juice, dijon mustard, worcestershire and parsley. Mix well. Then spread on a small piece of parchment paper or plastic wrap. Wrap it up and form in a small log shape. Refrigerate until firm. The butter will be cut in small rounds and added to each slice of beef when served.
  • Steak -- Three things to remember. First, always let the beef come to room temperature before cooking. Second, the ends are always thinner, so I fold them in and then tie them with a piece of kitchen twine to make the ends approximately the same size as the rest of the tenderloin. If you didn't wrap the ends in, they would be well done while the rest of the tenderloin was still raw. And third, the key is a good pan sear in a heavy pan on the stove. On medium high to high heat (cast iron or oven proof pan) heat up the butter and oil and pan sear the room temperature tenderloin until brown on each side. Not too long - just long enough to a nice crust.
  • Once your tenderloin is golden brown, remove from the heat and transfer to the oven; 450 degrees for about 8-10 minutes. Trust me - there is NO MAGIC time. Everyone's oven, pans and meat are different. There isn't that perfect time that works every time and even when I cook this recipe, each time it is a bit different and it should be, that is normal. I have 2 tenderloins in the freezer. One is flatter and the other thicker, both the same weight. And it is common sense that they will take different times to cook, so just remember that using a thermometer is really the only way to test and to make sure the meat is cooked to the right temperature.
  • After 8-10 minutes check the temperature using a meat thermometer; and I take 2 readings to make sure you get an accurate read. Remove the tenderloin just before your tenderloin reaches that perfect temperature as the tenderloin once removed will continue to cook as it rests. I remove at these temperatures as the meat will usually go up 3-5 degrees as it rests. So, 120 for rare; 130 for medium rare; 140 for medium; and 150 for medium well to well.
  • Once the beef reaches the correct temperature, remove from the oven and from the pan, cover with foil and let rest 10-15 minutes before slicing.
  • Serve -- Slice the tenderloin and serve with a slice of the chilled peppercorn butter. It will melt and drizzle all over the steak.
  • Garnish -- If you want, a few crumbles of gorgonzola cheese are a nice touch, just a few. Or another favorite is just a few very thin fried onion rings.
