Categories     Dessert

Number Of Ingredients 16

2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
1/2 cup butter, (softened)
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
2 cups red currants
1/4 cup butter, (softened)
1/4 cup brown sugar, (lightly packed)
1/4 cup sugar
1/4 cup all purpose flour
1/2 cup quick oats
1/2 teaspoon ground cinnamon
1/4 cup red currants, (optional)

Steps:

  • Preheat oven to 375 degrees. Prepare a 9 inch spring-form cake pan by greasing it with butter. Set aside.
  • In a large mixing bowl, using a hand-held mixer, beat together the sugar and butter until light and fluffy (about 3-4 minutes.)
  • Add the eggs, vanilla extract, and milk. Beat into the sugar and butter mixture until just incorporated. Set aside.
  • In a separate bowl, sift together the flour, baking powder, and salt. Add this mixture to the wet ingredients and beat until just mixed together.
  • Add the red currants and fold into the batter with a rubber spatula.
  • Pour into prepared spring-form cake pan and set aside.
  • Add all ingredients (with the exception of the red currants) to a bowl and mix together with your hands, pressing the butter into the other ingredients until a crumbly mixture has formed.
  • Loosely crumble this mixture over the cake.
  • Top with the remaining 1/4 cup red currants. (Optional)
  • Bake for 1 hour or until a toothpick inserted into the center of the cake comes out clean.
  • Once you remove the cake from the oven, it is very important to leave the cake in the pan. Place the pan onto a wire cooling rack. Leave the cake to cool for 30 minutes. Remove the cake from the pan and allow to fully cool before serving.

GERMAN RED CURRANT CAKE (JOHANNISBEERKUCHEN)

German Red Currant Cake (Johannisbeerkuchen) image

A traditional German red currant cake that is made with fresh red currants on yeast with hazelnut base

Provided by Marita

Categories     Cake     Dessert

Time 1h25m

Number Of Ingredients 12

100 ml milk (3.4 fl oz at room temperature )
7 g instant yeast (2 tsp or 1 sachet)
20 g sugar (0.7 oz)
200 g flour (7 oz (Germany type 405, UK plain flour, US pastry flour) )
1 egg yolk (from a large egg )
1 pinch of salt
20 g butter (0.7 oz (at room temperature))
35 g ground hazelnuts (1.2 oz (alternatively use ground almonds) )
20 g breadcrumbs (0.7 oz)
30 g icing / confectioners sugar
2 tsp vanilla sugar ((you can substitute this with 1 tsp vanilla extract) )
250 g red currants (9 oz )

Steps:

  • To make the yeast dough, warm the milk to around 35°C/ 95°F. The milk should not be too hot as otherwise the yeast will not rise. Mix the yeast and the sugar into the milk and leave to rest for about 10 minutes. After that you should see little bubbles forming on the surface.
  • Now add the milk mixture to the flour, egg yolk, salt, nuts and butter. Using a stand or hand mixer with the dough hook attachment, knead the mixture to a smooth yeast dough.
  • Cover the bowl and leave to rest for at least 30 minutes.
  • In the meantime, prepare the red currant topping. Mix the butter, confectioners/ icing sugar and vanilla sugar (or extract) until it starts to smooth cream.
  • Wash the red currants and remove them from their stems. The easiest way is to do that with a fork (see picture)
  • Prepare a tart or shallow pie dish (27 cm or 10 inch diameter) by greasing it with butter. Sprinkle the form with breadcrumbs (this will prevent the cake sticking later).
  • With a rolling pin, roll the dough out to the size of the dish. Make sure to remember that you need to cover the edges of the tart form too. About 3-4 mm thick. Place the dough into the cake form and leave to rest for a further 10 minutes.
  • With your index fingers make little indentations into the dough (see pictures). Fill the little holes with the vanilla , butter mixture. You can fill it with a spoon, or to be more precise you can use a piping bag. Now spread the red currant berries evenly on top of the cake base.
  • Bake the cake in a preheated oven at 160°C/ 320°F (fan setting) for around 30 - 35 minutes. The exact baking time varies by oven. To check if your cake is done, stick a skewer into the cake. If it comes out clean, it is done.
  • Leave the cake to cool down a little before serving.

RED CURRANT PIE (OR IS IT CAKE?)

Red Currant Pie (Or is It Cake?) image

While visiting my daughter in Germany, we were given a basketful of fresh red currants, a sweet-tart berry, and tried this recipe on a whim. It was wonderful! The currants kept their fresh flavor and the pie/cake was a perfect base. Back home, I'm going to try the same recipe with fresh strawberries, then fresh blueberries, then fresh raspberries...

  • Place the red currants into a bowl. Sprinkle with the sugar, mix carefully and let stand until ready to use. They will release some juices during this time.
  • Place the flour and sugar in a food processor. Pulse to combine. Cut the cold butter into small pieces and add them to the food processor together with the egg. Process shortly until the mixture resembles breadcrumbs. Turn the dough onto the working surface and knead very briefly to form a smooth ball. Wrap in cling film/plastic wrap and refrigerate for one hour.
  • Preheat the oven to 180 degrees Celsius/ 350 degrees Fahrenheit. Grease a large baking tray of about 30x40 cm/ 12x15 inches. Sprinkle it evenly with the dried breadcrumbs. Place some lumps of pastry on the working surface and roll them roughly in batches. Place them in the tray and press them together with your fingers in an even layer to cover the tray. Lightly flour your fingers, if necessary.
