RED CURRANT CAKE
A very simple and rustic cake with a moist center and a crumbly topping. Red Currant Cake is an easy and gorgeous summer dessert! Easily prepared with fresh currants during harvesting season, or with frozen currants throughout the winter months!

- Preheat oven to 375 degrees. Prepare a 9 inch spring-form cake pan by greasing it with butter. Set aside.
- In a large mixing bowl, using a hand-held mixer, beat together the sugar and butter until light and fluffy (about 3-4 minutes.)
- Add the eggs, vanilla extract, and milk. Beat into the sugar and butter mixture until just incorporated. Set aside.
- In a separate bowl, sift together the flour, baking powder, and salt. Add this mixture to the wet ingredients and beat until just mixed together.
- Add the red currants and fold into the batter with a rubber spatula.
- Pour into prepared spring-form cake pan and set aside.
- Add all ingredients (with the exception of the red currants) to a bowl and mix together with your hands, pressing the butter into the other ingredients until a crumbly mixture has formed.
- Loosely crumble this mixture over the cake.
- Top with the remaining 1/4 cup red currants. (Optional)
- Bake for 1 hour or until a toothpick inserted into the center of the cake comes out clean.
- Once you remove the cake from the oven, it is very important to leave the cake in the pan. Place the pan onto a wire cooling rack. Leave the cake to cool for 30 minutes. Remove the cake from the pan and allow to fully cool before serving.

- To Make Dough: In a medium bowl, sift together flour and baking powder. Mix in butter, sugar, egg yolks and lemon zest until mixture forms dough. Let rest in cool place for 30 minutes.
- Preheat oven to 325 degrees F (165 degrees C). Roll out dough and put into a springform pan.
- Bake in oven for 25 minutes, or until golden yellow.
- To Make Filling: In a medium bowl, beat egg whites until stiff. Gradually stir in sugar and cornstarch; beat for 5 minutes. Fold currants into mixture and pour into pie crust.
- Bake in oven for 10 minutes, or until top is lightly browned.

- Preheat the oven to 325 degrees. In a medium bowl, sift together the flour, baking powder, and salt. Set aside. Butter a 9-by-5-inch loaf pan; set aside.
- In a small saucepan, heat the cream over medium heat. Stir in molasses. In a medium bowl, cream the butter until light and fluffy. Gradually add the sugar. Beat in the eggs, one at a time, beating to combine after each addition. Stir in the cream mixture, then the currants. Add the dry ingredients and beat to combine.
- Pour into prepared pan, and bake until a knife inserted in the center comes out clean, about 1 hour 15 minutes.

- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and orange zest. Combine the flour, baking powder and salt; add to the creamed mixture just until blended. Fold in currants. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 20-25 minutes or a toothpick inserted in the center comes out clean. GERMAN RED CURRANT CAKE (JOHANNISBEERKUCHEN)

- To make the yeast dough, warm the milk to around 35°C/ 95°F. The milk should not be too hot as otherwise the yeast will not rise. Mix the yeast and the sugar into the milk and leave to rest for about 10 minutes. After that you should see little bubbles forming on the surface.
- Now add the milk mixture to the flour, egg yolk, salt, nuts and butter. Using a stand or hand mixer with the dough hook attachment, knead the mixture to a smooth yeast dough.
- Cover the bowl and leave to rest for at least 30 minutes.
- In the meantime, prepare the red currant topping. Mix the butter, confectioners/ icing sugar and vanilla sugar (or extract) until it starts to smooth cream.
- Wash the red currants and remove them from their stems. The easiest way is to do that with a fork (see picture)
- Prepare a tart or shallow pie dish (27 cm or 10 inch diameter) by greasing it with butter. Sprinkle the form with breadcrumbs (this will prevent the cake sticking later).
- With a rolling pin, roll the dough out to the size of the dish. Make sure to remember that you need to cover the edges of the tart form too. About 3-4 mm thick. Place the dough into the cake form and leave to rest for a further 10 minutes.
- With your index fingers make little indentations into the dough (see pictures). Fill the little holes with the vanilla , butter mixture. You can fill it with a spoon, or to be more precise you can use a piping bag. Now spread the red currant berries evenly on top of the cake base.
- Bake the cake in a preheated oven at 160°C/ 320°F (fan setting) for around 30 - 35 minutes. The exact baking time varies by oven. To check if your cake is done, stick a skewer into the cake. If it comes out clean, it is done.
- Leave the cake to cool down a little before serving.

While visiting my daughter in Germany, we were given a basketful of fresh red currants, a sweet-tart berry, and tried this recipe on a whim. It was wonderful! The currants kept their fresh flavor and the pie/cake was a perfect base. Back home, I'm going to try the same recipe with fresh strawberries, then fresh blueberries, then fresh raspberries...
