HOMEMADE CHILI SEASONING POPCORN
Popcorn as good as the theater's, with a kick! Salty, spicy and a little smoky. All you need is a large pot or metal bowl. I use a large 2 gallon metal bowl. Omit the chili powders if you don't like it spicy.

Steps:
- Heat canola oil in a large pot over medium-high heat; add 1 popcorn kernel to the hot oil. The oil is ready when the kernel pops.
- Pour popcorn kernels into the hot oil; season with half the popcorn salt. Stir to coat. Cover the pot with a sheet of aluminum foil. Poke about 10 holes into the aluminum foil using a knife. Cook popcorn until all the kernels are popped, 5 to 10 minutes. Remove pot from heat; sprinkle popcorn with remaining popcorn salt, garlic powder, onion powder, cayenne pepper, chipotle chile pepper, and ancho chile pepper. Toss to evenly coat.

RED HOT CHILI AND SESAME OIL POPCORN
I got a little creative one day and came up with this variation on my favorite snack, and I've made it frequently since. I make this on the stove top in an ordinary pan, but you could use an old-fashioned stove top popper. Don't use a Teflon coated pan or one with a shiny interior that you want to keep pretty.

Steps:
- Put vegetable and sesame oils in a large pot with a lid, and begin to heat on high heat.
- When the oil is warmed, but not yet hot, add the unpopped popcorn, and immediately shake red hot chili oil onto the popcorn kernels.
- Cover the pan and begin shaking immediately, holding the lid down and protecting your hands with potholders. Shake the pan until the popping slows. (I like to slightly raise the pan off the burner, shake the pan in a swirling motion, set it back down, then about two seconds later pick it up and shake it again, and so on.).
- Transfer the popped corn to a bowl right away and salt to taste.

SWEET SESAME FIVE-SPICE POPCORN

- Using a pair of kitchen shears, cut all of the chiles into 1/2-inch pieces. Toast chiles in a dry wok or saucepan over medium heat, stirring and shaking constantly, until fragrant and lightly darkened in color, about 2 minutes.
- Transfer toasted chiles to the bowl of a food processor or mortar and pestle, and pulse or pound until the chiles break into 1/8- to 1/4-inch pieces that resemble store-bought red-pepper flakes or flaky sea salt. (Be careful not to overprocess.) Transfer the chile flakes to a heat-proof mixing bowl.
- Combine oil, garlic, ginger, Sichuan peppercorns, star anise, cumin and fennel seeds in a small saucepan. Heat over low heat until gently bubbling, then cook for 10 minutes, adjusting heat to maintain the barest of bubbling.
- Set a fine-mesh strainer over the bowl with the chiles. Pour the hot oil through strainer over the chiles. Discard solids. Stir sugar, sesame seeds, salt and MSG, if using, into oil mixture until combined. Allow to cool, transfer to a sealed container, and let rest at room temperature overnight before using. You can store chile oil in a cool, dark pantry for a few weeks, or indefinitely in the refrigerator.
HOT CHILI OIL
This is the hot oil you sometimes get in Chinese restaurants to drizzle in your soups, dumplings etc. at the table. I use it on EVERYTHING. even ice cream! Its best to make this OUTSIDE. The fumes can be wicked.

- Put the dried peppers in a dry frypan and set stovetop heat on high. (I use a camping stove outside) .
- Toast, roast, stir and toss the peppers until they get dark in areas but are still basically red and they become very AROMATIC.
- Let them cool a bit and then put them in a food processor with the oil.
- Process for a few moments.
- Pour into a nice container and keep it on your table.
- It will be gone in no time--.

- Heat oil and a few popcorn kernels in a large, heavy-bottomed pot over high heat. When kernels pop, add remaining kernels and cover. Remove from heat; let stand 30 seconds. Return to heat and cook, shaking pot frequently, until popping stops, 1 to 2 minutes. Toss with desired seasonings (adding more to taste), transfer to a bowl, and serve immediately.
- SEA SALT-PEPPER: Stir together salt and pepper.
- CHILI-LIME: Combine chili powder, cumin, salt, and lime zest in a large bowl. Add hot popcorn, and squeeze juice from 1 large lime wedge into bowl. Toss until evenly coated.
- SESAME-PEPPER: Grind sesame seeds, salt, and pepper in a spice grinder until seeds are coarsely ground. Toss hot popcorn with butter until evenly coated, then toss with sesame mixture.
- PECORINO-ROSEMARY: Stir together cheese and rosemary.
- SMOKED PAPRIKA: Season with salt to taste, then add paprika.
- SPICY-SWEET: Combine sugar, salt, garam masala, and cayenne pepper in a small bowl. Toss hot popcorn with butter until evenly coated, then toss with brown-sugar mixture.
