Lesotho, officially the Kingdom of Lesotho, is a landlocked country, completely surrounded by its only neighbouring country, South Africa. The friendly baristas brew Rooibos tea very, very strong - they actually have a special fine grind that can be run through an espresso machine. The tea comes out a deep red, so dark it's almost black. You can use any Rooibos tea, I used tea bags. I will be looking for the loose leaf so I can make this again. Rooibos tea has an added bonus, it's caffeine free! And it doesn't get bitter if you simmer it or let it steep a long time.

1/4 cup rooibos tea, brewed double to triple strength
1/2 cup of steamed almond milk (or milk of choice)
honey, to taste
ground cinnamon, to taste

Steps:

  • Brew tea double to triple strength or you can simmer on the stove for even more strength. I used 4-5 Rooibos tea bags to 2 cup of water.
  • Add honey to taste.
  • Top with steamed milk. I just heated up almond milk till hot and bubbly.
  • Sprinkle in a dusting of cinnamon, or more to taste.
  • Serve immediately and enjoy.

ROOIBOS CHAI SYRUP(SOUTH AFRICA)

Easy to make and you just add a teaspoon(or more to taste) to hot water for an instant great chai tea. You could actually takeit with you when you go to a restaurant, ask for hot water(or milk) and add your own syrup! From Health Food Lover.

2 tablespoons red rooibos tea leaves
1 tablespoon vanilla extract, split open (or 1 vanilla bean) (optional)
1 cinnamon stick
2 teaspoons cinnamon
1 teaspoon ginger powder
3 cardamom pods, split and crushed
2 cups cold water
1/2 cup raw honey

Steps:

  • To make the chai syrup:.
  • Combine all ingredients in a saucepan and cover with a lid. Simmer on medium-low for 1/2 hour to 1 hour or until the mixture reduces to a syrup(mine was not real syrupy, I simmered 1 hour). Then strain the mixture through a fine sieve (discarding solids) into a clean jar with a lid and store in the refrigerator.
  • How to use the chai syrup:.
  • Simply mix 1 teaspoon to up to 1 tablespoon of the chai syrup into hot milk(I use almond milk) and serve. Or mix in a teaspoon to a tablespoon of the syrup into hot water for a great chai tea.

This is a traditional South African braai (bbq) dish that can also be prepared using venison or beef. This dish is best if meat and vegetables are allowed to marinate overnight before grilling.

1 cup plain yogurt
2 teaspoons curry powder
1 tablespoon white sugar
1 tablespoon vegetable oil
1 large onion
1 cup cubed lamb stew meat
12 ounces dried apricots
8 kabob skewers

Steps:

  • Make the sauce by mixing together the yogurt, curry powder, sugar and oil in a small bowl. Taste and adjust seasonings to your liking.
  • Peel and cut the onion into 1 inch cubes. Thread skewers alternating lamb cubes, onion dried apricot halves. Place them into a large resealable bag and pour in the sauce. Make sure the kabobs are evenly well coated. Refrigerate and allow to marinate overnight or for at least 8 hours.
  • Preheat grill to medium heat and lightly oil grate.
  • Grill the kabobs over medium coals for 8 to 10 minutes on each side, or to your desired doneness.

1 lb carrot, peeled and medium grated
2 green cardamom pods
1 dried hot chili pepper
1 tablespoon fresh ginger, minced
1 garlic clove, minced
1 teaspoon sea salt
1 1/2 cups sugar
1/2 cup water
3/4 cup distilled white vinegar

Steps:

  • Remove the seeds from the cardamom pods and grind them into a powder in a spice mill along with the dried chile.
  • Place all the ingredients except the vinegar in a 3-quart nonreactive saucepan, bring to a boil, and cook, stirring occasionally, for 30 minutes.
  • Add the vinegar, lower the heat, and cook for an additional 30 minutes, or until thick. Be sure to stir well so that the sambal doesn't stick to the bottom of the saucepan.
  • When the sambal is a thick paste, spoon it out of the saucepan into a bowl. Cover it with plastic wrap and refrigerate for at least 1 hour.
  • Serve chilled with curries and grilled meats.

2 cups orange lentils (rinsed and picked through for no twigs or stones)
1/2 teaspoon salt
1/4 cup vegetable oil
1 large sweet onion, chopped
1 inch piece fresh ginger, grated
3 garlic cloves, crushed
1 teaspoon coriander powder
1 teaspoon turmeric
1 teaspoon cumin seed, crushed
1 teaspoon cardamom seed, crushed
1/4 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
1 cup fresh tomato, diced peeled

Steps:

  • Dissolve salt in enough boiling water to cover lentils. Add lentils.
  • and cook until tender about 20 minutes. Drain and mash with potato masher.
  • Heat oil in a pan and fry onions and garlic until onions are golden.
  • Add remaining ingredients and simmer for a few minutes. Stir in lentils and heat until thick. Serve hot.

2 onions, finely chopped
2 lbs lean ground beef
1 slice bread
1 cup milk, used 1/2 cup at a time
1 tablespoon curry powder
1 1/2 tablespoons sugar
1/2 cup raisins
3 tablespoons chutney
2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon turmeric
2 tablespoons vinegar or 2 tablespoons lemon juice
6 almonds, quartered
4 bay leaves or 1 lemon, zest of
1 egg

Steps:

  • Preheat oven to 350°F.
  • Saute the beef with onions until meat is browned.
  • Soak the bread in half the milk; then mash the slice with a fork.
  • Combine all the ingredients (except the remaining milk and egg).
  • Spread mixture into a greased casserole and bake for 1 hour.
  • Beat the egg with the remaining ½ cup of milk and pour over the casserole.
  • Return to oven for another 30 minutes.
