RED PEPPER, HAM & CHEESE TART
A sheet of ready-rolled puff pastry makes this tart easy as pie

Steps:
- Heat oven to 220C/200C fan/gas 7. Unroll the pastry onto a baking sheet and score a border 1cm from the edge. Prick inside the border with a fork and spread with the sundried tomato paste. Bake for 12-15 mins.
- Squash down the puffed-up pastry inside the scored rim, then top with the ham, cheese, peppers and olives. Sprinkle with oregano and bake for 10-12 mins more until the base is nice and crisp. Scatter with rocket leaves and serve.

HAM AND CHEESE PUFF TART
Envelop the makings of a ham and cheese sandwich in puff pastry to create a pretty tart elegant enough for a dinner party, but practical for lunch too.

- On a floured work surface, roll each sheet puff pastry to a 10-by-13-inch rectangle. Transfer to 2 parchment-lined baking sheets and refrigerate. In a small saucepan, melt butter over medium. Add flour; cook, stirring, until golden, 1 minute. Whisking constantly, add milk and simmer. Stir until thickened, 5 minutes. Season with salt, pepper, and pinch of nutmeg. Pour sauce into a bowl and let cool 30 minutes.
- Preheat oven to 400 degrees, with rack in lower third. Arrange ham evenly on 1 pastry sheet, leaving a 3/4-inch border; top with cheese and sauce. Brush pastry border with egg; top with second pastry sheet. Fold bottom edges over top and press to seal. Brush top with egg and cut vents in tart. Bake until browned and puffed, 30 minutes. Serve warm or at room temperature.

- In a small bowl, beat the cream cheese, onion dip, milk, mustard and orange zest until blended. Stir in the ham. , Split each biscuit into thirds; press into lightly greased miniature muffin cups. Spoon a scant tablespoonful of ham mixture into each cup; sprinkle with paprika. Bake at 375° for 12-17 minutes or until golden brown. Serve warm.

I am fast becoming hooked on quichés and breakfast casseroles. My tastes have changed so much since becoming a member of recipezaar. Things I would never eat before I love now. I guess I just needed to try them.

Steps:
- Mix ham, bell pepper, green onion, cheese and flour; toss all ingredients lightly.
- Mix half-and-half gently into eggs.
- Still gently; fold ham mixture into egg mixture.
- Pour this mixture into unbaked pie shell.
- Bake 10 minutes at 425 degrees, and then lower heat to 325 degrees and bake 20 minutes more or till done.
ROASTED RED PEPPER, HAM AND PARSLEY TORTE
This is a beautiful molded torte, great for parties, poolside or orther. It makes a beautiful centerpiece, for any season! I get more requests for this, so I make up a few little recipe cards and place them under the plate that the dip is in! At least I know where they are and I don't have to leave the room! The flavors are delish, and I'm sure you'll agree with me! You can make this up to 1 day ahead to let the flavors set. I did not add in the chilling time or the overnight chilling time..

Steps:
- Place 1/2 cup butter,3oz. cream cheese, 4oz. chopped ham,1 tablespoons wine and white pepper. Process until smooth. Remove to small bowl, cover and chill.
- In processor, process another 1/2 cup butter, 3 oz. cream cheese, the parsley, green onion, 1 tablespoons wine, and white pepper. Remove to small bowl; cover and chill.
- Process remaining butter, cream cheese, the red peppers, remaining wine, white pepper to taste, until smooth; remove to small bowl, cover and chill.
- Line a glass 2-qt. bowl or 9-inch pie plate with plstic wrap. Sprinkle in cubed ham. Spread the ham mixture, spread the red peppers, mix and top with a layer of the parsley mix. Cover and chill over night.
- Unmold onto serving plate; let sit at room temperature for an hour before serving.
