1 tablespoon oil
1 medium jalapeno pepper, seeds removed and minced
2 medium poblano peppers, chopped
1 large onion, chopped
4 garlic cloves, minced
Kosher salt and freshly ground black pepper
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon ancho chili powder
6 cups low-sodium chicken broth
2 limes, juiced, plus lime wedges, for serving
3 large zucchini, peeled and diced
1 rotisserie chicken, skin removed and meat shredded (about 3-4 cups)
1/4 cup chopped cilantro leaves, plus more for garnish
1 avocado, sliced

Steps:

  • Add the oil to a large 6-quart Dutch oven and heat it over medium-high heat. Add the peppers, onions, and garlic and sauté until soft and fragrant, about 5 minutes.
  • Season the vegetables with salt, and pepper, to taste. Add the cumin, coriander, and chili powder and continue to sauté for 1 more minute to toast the spices. Stir in the chicken broth, lime juice, zucchini, and shredded chicken. Simmer for 20 minutes.
  • After 20 minutes of simmering, taste for seasoning, and adjust if necessary.
  • Serve the chili in individual bowls topped with avocado slices and chopped cilantro.

4 chicken breasts (large, shredded)
1 tbsp Butter
½ onion (chopped)
2 cups Chicken broth
10 oz diced tomatoes (canned, undrained)
2 oz tomato paste
1 tbsp Chili powder
1 tbsp Cumin
1/2 tbsp Garlic powder
1 jalapeno pepper (chopped (optional))
4 oz Cream cheese
Salt and pepper (to taste)

Steps:

  • Prepare chicken by boiling chicken breasts in water or broth on stovetop for 10-12 minutes, just barely covered in liquid. Once the meat is no longer pink, remove from fluid and shred with two forks. This same technique can also be used with a pressure cooker at pressure for 5 minutes with a natural release, or a slow cooker for 4-6 hours. Whatever's clever for you! Rotisserie chicken meat can be substituted for the breasts as well.
  • In a large stockpot, melt the butter over medium-high heat. Add the onion and cook until translucent.
  • Add the shredded chicken, chicken broth, diced tomatoes, tomato paste, chili powder, cumin, garlic powder, and jalapeno to the pot and combine by gently stirring over the burner. Bring to a boil, then drop it down to a simmer over medium-low heat and cover for 10 minutes.
  • Cut cream cheese into small, 1-inch chunks.
  • Remove lid and mix in the cream cheese. Increase the heat back up to medium-high and continue to stir until the cream cheese is completely blended in. Remove from heat and season with salt and pepper to taste.
  • Eat as-is or garnish with toppings of your choice. I love cilantro and Monterey jack cheese for ooey gooey goodness.

1 tablespoon butter
1 medium onion, finely chopped

2 pounds boneless beef chuck, pork shoulder, lamb shoulder or chicken (thigh) meat, cut into 1-inch cubes
5 garlic cloves, peeled and lightly crushed
1 large onion, peeled and quartered
2 dried guajillo chiles, seeds and stems removed
2 dried ancho chiles, seeds and stems removed
2 bay leaves
1 tablespoon ground cumin
Salt and freshly ground black pepper
Cayenne

Steps:

  • In a large pot or Dutch oven, combine all the ingredients except the cayenne. Add water to cover, and bring to a boil, skimming off any foam that comes to the surface. Partly cover, and adjust the heat so that the mixture bubbles steadily; cook until the meat is very tender, 1 to 2 hours
  • Transfer the meat to a bowl, and let it cool, then shred it with your fingers. Discard the bay leaves, and transfer the garlic, onion and chiles to a blender along with a splash of the cooking liquid. Blend until smooth. Add the sauce to the meat, and toss. Taste and adjust the seasoning, adding a little cayenne if you want it spicier; you may want to overseason the meat slightly if you're using it as a filling. Use, or store in the fridge for up to a week, or in the freezer for up to a few months.

1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
1/4 cup tomato sauce (from 8-oz can)
2 tablespoons white wine vinegar

1/2 teaspoon sugar
1/2 teaspoon dried oregano leaves, if desired
1 tablespoon vegetable oil
1 clove garlic, finely chopped

Few drops fresh lime juice, if desired

2 cups shredded cooked chicken breast
10 soft corn tortillas (6 or 7 inch)

Steps:

  • In blender, place chile, adobo sauce, onion, 2 cloves garlic, the broth, tomatoes, tomato sauce, vinegar, chicken bouillon granules, 1/2 teaspoon sugar and the oregano. Cover; blend until smooth.
  • In 3-quart saucepan, heat oil over medium-high heat. Add 1 clove garlic; cook and stir 1 minute. Stir in tomato mixture. Cook 6 to 10 minutes, stirring occasionally, until hot. Stir in lime juice and 1/2 teaspoon sugar. Stir in chicken; cook over medium-low heat about 15 minutes, stirring occasionally, until mixture thickens.
  • Meanwhile, heat tortillas as directed on package. Spoon about 1/3-cup chicken mixture down center of each warm tortilla. Fold each taco in half over filling. Serve immediately.

4 dried New Mexico red chilies*, stemmed and seeded (wear rubber gloves)
1 small onion (about 1/4 pound), halved
3 large garlic cloves
2 tablespoons raisins
1 1/2 teaspoons salt
For chicken:
2 tablespoons nonfat plain yogurt
2 large garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1/2 teaspoon ground cumin
four 5-ounce skinless boneless chicken breast halves
1 teaspoon vegetable oil
1 tablespoon coarsely grated Münster

Steps:

  • Preheat oven to 400°F.
  • Make red chili sauce:
  • In a saucepan simmer chilies, onion, and garlic in water to cover 20 minutes and with a slotted spoon transfer to a blender. Add 1/2 cup cooking liquid, raisins, and salt and blend until smooth. Sauce may be made 1 week ahead and chilled, covered.
  • Make chicken:
  • While chilies are simmering, in a bowl stir together yogurt, garlic paste, cumin, and salt to taste. Add chicken and coat with marinade. Marinate chicken, covered and chilled, at least 15 minutes and up to 1 day.
  • In a 10-inch non-stick skillet heat oil over moderately high heat until hot but not smoking. Add chicken with marinade clinging to it, skinned sides down, and sauté 1 minute on each side, or until golden-brown patches appear.
  • Add chili sauce to skillet and bring to a simmer, uncovered, scraping up any brown bits. Transfer chicken mixture to a shallow baking pan just large enough to hold chicken in one layer and bake, covered, 15 minutes. Remove cover and sprinkle Münster over chicken. Remove pan from oven and let stand 1 minute to melt cheese.
