Categories     baking     breakfast     main dish

Time 35m

Yield 16 servings

Number Of Ingredients 16

3 c. Flour
1/3 c. Sugar
3 tsp. Baking Powder
1/4 tsp. Salt
2 sticks Cold Butter, Cut Into Pieces
1 c. Heavy Cream
1/4 c. Milk
1 whole Egg
1 tsp. Vanilla
2 tbsp. Strawberry Preserves
2 drops Red Food Coloring (optional)
1/2 c. Chopped Strawberries
1/2 c. Blueberries
4 tbsp. Butter, Melted
4 c. Powdered Sugar, Sifted
1/4 c. Milk, More If Needed For Thinning

Steps:

  • Preheat the oven to 350 degrees.Combine the flour, sugar, baking powder, and salt in a large bowl. Add the butter and use a pastry cutter to cut them together until they resemble coarse crumbs. In a pitcher, mix together the cream, milk, egg, vanilla, strawberry preserves, and red food coloring.Pour the wet ingredients into the dry ingredients and mix them together until they're halfway combined. Add 3/4 of the berries and stir until mixed. Add the remaining berries and stir until everything is combined. Turn out the dough onto a floured surface and press it into a rectangle that's about 16 inches tall by about 6 inches wide. Using a floured pizza cutter or knife, cut it in half from top to bottom, then make 3 to 4 cuts across. Cut each square into two triangles. Transfer the scones to a baking sheet lined with a baking mat. Bake for 20 minutes or until done. Remove to a cooling rack and allow them to cool completely. To make the glaze, whisk together the melted butter, powdered sugar, and milk until smooth and somewhat thick. Place the racks of scones over baking sheets to catch the excess, then use a spoon to drizzle the glaze all over the scones. Allow the glaze to set before serving.

These scones are a celebration of blueberries. A little almond and rye flour in the batter adds a deep nutty and slightly savory flavor to keep the sweetness in check and lets the berries shine through.

Provided by Food Network Kitchen

Categories     dessert

Time 1h20m

Yield 8 blueberry scones

Number Of Ingredients 14

1 cup all-purpose flour, plus more for dusting
1 cup rye flour (preferably medium rye)
1/4 cup almond flour
2 tablespoons turbinado sugar, plus more for sprinkling
1 tablespoon baking powder
1/2 teaspoon salt
4 tablespoons cold unsalted butter, cut into small pieces
1/2 teaspoon finely grated lemon zest
1 cup fresh blueberries
1/4 cup dried blueberries
3/4 cup plain whole-milk yogurt (not Greek), stirred
1 large egg
1/2 cup confectioners' sugar
1 tablespoon unsweetened blueberry juice

Steps:

  • Preheat the oven to 425˚ F. Line a rimmed baking sheet with parchment paper. Whisk the three flours, turbinado sugar, baking powder and salt in a large bowl. Add the butter and lemon zest and work the butter into the flour with your fingers until it is in pea-size pieces. Add the fresh and dried blueberries and toss well.
  • Make a well in the center of the flour mixture. Whisk the yogurt and egg in a small bowl, then pour into the well. Stir with a fork until all the flour is moistened, then knead with your hands until the dough comes together.
  • Turn out the dough onto a floured surface and pat into a 7-inch round. Cut into 8 wedges; arrange 1 to 2 inches apart on the baking sheet. Sprinkle with turbinado sugar.
  • Bake the scones until they puff up and are set and golden, about 25 minutes. Let cool 5 minutes on the pan, then transfer to a rack to cool completely.
  • Whisk the confectioners' sugar and blueberry juice in a small bowl until thick and smooth. Drizzle over the scones. Let stand until the glaze sets, about 20 minutes.

LEMON-ROSEMARY SCONES

Lemon-Rosemary Scones image

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 1h50m

Yield 24 scones

Number Of Ingredients 11

3 cups all-purpose flour, plus more for flouring
2/3 cup granulated sugar
1 tablespoon plus 1 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) cold unsalted butter, cut into pieces
1 cup heavy cream
1 egg
2 lemons
Leaves from 2 rosemary sprigs (or 4 if they're small sprigs), finely minced
5 cups powdered sugar
1/2 cup whole milk, plus more if needed for thinning

Steps:

  • Preheat the oven to 350 degree F. Line 2 baking sheets with parchment paper or silicone liners.
  • Place the flour, granulated sugar, baking powder and salt into a sifter or fine-mesh strainer, then sift the mixture into a large bowl until it's all combined. Throw the butter pieces into the bowl and use a pastry cutter to cut the butter into the dry ingredients.
  • Measure the cream in a spouted measuring cup and crack in an egg. Zest one of the lemons and add the zest to the cream. Add half of the rosemary to the mixture. Whisk together, then drizzle it into the flour-butter mixture, stirring gently with a fork until combined and a dough forms.
  • Turn the dough onto a floured surface and lightly press it together until it forms a rough rectangle. Use a rolling pin to roll into a rectangle about 1/2 inch to 3/4 inch thick. Use your hands to help with the forming if necessary. The final rectangle should be about 18 inches by about 10 inches.
  • Use a knife to trim the dough into a symmetrical rectangle, then cut the rectangle into 12 symmetrical square/rectangular pieces. Next, cut each piece in half diagonally to form smaller triangles. Transfer the triangles to the prepared baking sheets. Bake until just barely golden brown, about 18 minutes, then allow to cool completely.
  • While the scones are cooling, make the glaze: Combine the powdered sugar and milk in a large bowl. Add the juice of the lemon you zested and whisk the mixture together. Zest the second lemon and add the zest to the bowl. Add the rest of the rosemary and whisk it until it's all combined. Add a little extra milk if it needs thinning.
  • Position a cooling rack over a baking sheet. When the scones are completely cooled, drop them one by one into the glaze. Flip them over to coat. Transfer them to the cooling rack to allow the excess glaze to drip off. Allow the glaze to set completely before serving.
  • The scones will last for several days in an airtight container.
