2 cups freshly grated Cheddar cheese
2 cups freshly grated Monterrey Jack cheese
4 ounces (about 1/2 a package) cream cheese, softened
2/3 cup sour cream
2 (16 ounce) cans refried beans
1 (1 ounce) package of taco seasoning
1 tablespoon hot sauce
2 green onions, thinly sliced (optional)

Steps:

  • Preheat the oven to 350° and have ready an 8"x8" square baking dish. Mix together the Cheddar and Monterrey Jack Cheese and set aside.
  • Add the cream cheese and sour cream to a large bowl and stir to combine with a wooden spoon or handheld mixer on medium speed. Add the refried beans, half of the cheese mixture, taco seasoning, and hot sauce to the bowl, and stir (or mix on low) until well combined.
  • Transfer the bean dip to the baking dish and top with the remaining cheese. Bake for 20 minutes, uncovered. Top with green onion garnish (if using), serve, and enjoy!

1 Tablespoon chili powder
1/4 teaspoon ground cumin

Steps:

  • Preheat oven to 375 degrees F.

1 tablespoon taco seasoning
1 ½ cups shredded cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees. Spray a 9 x 9 inch baking pan or similiar sized casserole dish with cooking spray and set aside.
  • In a large bowl, combine beans, cream cheese, Rotel, taco seasoning, and one cup of cheddar cheese. Mix to combine using a handheld mixer if necessary. Pour into baking dish and use a spatula to spread evenly. Sprinkle on remaining cheese.
  • Bake, uncovered, for 25 minutes until dip is warmed through and bubbly. Serve with chips.

This recipe was posted on athriftymom.com, and I doubled the recipe (except the quantity of cheese I left the same as posted). Some of the portions weren't listed exactly so feel free to adjust to your liking or add more cheese. I must confess, I added a litte sour cream, salsa, taco seasoning mix, and cheese to the refried beans. Then I did another layer of salsa. If you're not a salsa fan, you'll probably want to use less. I also used chives instead of green onions because that's what I had. This is good as a dip, but I also thought it was good inside taco shells for lunch or dinner. Tortillas would also work well.
