Somebody gave my mom this recipe back in the 1950's, I believe. She made it every Christmas and everyone we knew loved it because it didn't have that "weird stuff" in it. Now, when I make it, I mold it in those small loaf pans and I get the same reaction! Hope you enjoy it as much as we always have!! Cooking time is refrigeration time. We use red and green cherries and yellow (or natural) pineapple

1 (12 ounce) can evaporated milk (Carnation or Pet)
16 ounces marshmallows
2 cups candied cherries, halved
4 slices candied pineapple, diced
3 cups pecans, chopped
1 (16 ounce) box fig-filled cookies, chopped
1 (12 ounce) box dates, chopped
1 teaspoon allspice
1 teaspoon ground cinnamon
1 (16 ounce) box graham crackers, finely crushed
1 (16 ounce) box dark raisins

Steps:

  • Heat milk and marshmallows to boiling point. Stir.
  • In a large bowl, mix well the cherries, pineapple, pecans, fig newtons, dates, spices, graham cracker crumbs and raisins.
  • Pour hot milk and marshmallows into dry ingredients. Mix well and pack into containers.
  • Let stand in refrigerator for 3 days before turning out.
  • Unmolding is easier if you line container(s) with waxed paper.

This is a recipe that my mom made every Christmas. It's a great alternative to baked fruit cakes and stays moist. Never dry. Tastes very much like the Claxton's fruitcakes that you can buy in the grocery store. I wanted to post this to save and found it as a newspaper clipping in my grandmother's recipe box. My grandmother had pinned it to a card with her cost estimate to make. I don't know how old the recipe is but given that a 1 pd of pecans was listed as 1.05, I assume it's pretty old! Total cost for cake was listed as $3.04. Hope you enjoy! It's been a holiday favorite in our family for years!

1/2 lb candied cherry (combo of red and green look best)
1/2 lb candied pineapple
1 lb chopped nuts (your choice)
1 lb raisins
1 orange, juice of
6 tablespoons apple juice
1 lb graham cracker crumbs, rolled and crushed fine

Steps:

  • Combine all ingredients and mix well.
  • Pack into a loaf pan lined with waxed paper.
  • Cover pan tightly with plastic wrap.
  • Can be stored in refrigerator for several weeks.

1 cup golden raisins
1 cup currants
1/2 cup sun dried cranberries
1/2 cup sun dried blueberries
1/2 cup sun dried cherries
1/2 cup dried apricots, chopped
Zest of one lemon, chopped coarsely
Zest of one orange, chopped coarsely
1/4 cup candied ginger, chopped
1 cup gold rum
1 cup sugar
5 ounces unsalted butter (1 1/4 sticks)
1 cup unfiltered apple juice
4 whole cloves, ground
6 allspice berries, ground
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 3/4 cups all purpose flour
1 1/2 teaspoons salt
1 teaspoon baking soda
1 teaspoon baking powder
2 eggs
1/4 to 1/2 cup toasted pecans, broken
Brandy for basting and/or spritzing

Steps:

  • Combine dried fruits, candied ginger and both zests. Add rum and macerate overnight, or microwave for 5 minutes to re-hydrate fruit.
  • Place fruit and liquid in a non-reactive pot with the sugar, butter, apple juice and spices. Bring mixture to a boil stirring often, then reduce heat and simmer for 5 to 10 minutes. Remove from heat and cool for at least 15 minutes. (Batter can be completed up to this point, then covered and refrigerated for up to 2 days. Bring to room temperature before completing cake.)
  • Heat oven to 325 degrees.
  • Combine dry ingredients and sift into fruit mixture. Quickly bring batter together with a large wooden spoon, then stir in eggs one at a time until completely integrated, then fold in nuts. Spoon into a 10-inch non-stick loaf pan and bake for 1 hour. Check for doneness by inserting toothpick into the middle of the cake. If it comes out clean, it's done. If not, bake another 10 minutes, and check again.
  • Remove cake from oven and place on cooling rack or trivet. Baste or spritz top with brandy and allow to cool completely before turning out from pan.
  • When cake is completely cooled, seal in a tight sealing, food safe container. Every 2 to 3 days, feel the cake and if dry, spritz with brandy. The cake's flavor will enhance considerably over the next two weeks. If you decide to give the cake as a gift, be sure to tell the recipient that they are very lucky indeed.

1/2 pound candied cherries
1/2 pound candied pineapple slices
1 pound walnuts, pecans or combination of both
1 pound vanilla wafers
1/4 pound raisins
2 large eggs
1/2 cup sugar
1/4 teaspoon salt
1 can (5 ounces) evaporated milk

Steps:

  • Set aside four whole cherries, two pineapple slices and 16 pecan or walnut halves. Chop remaining fruit and nuts. Crush vanilla wafers; combine the chopped fruit, nuts and raisins and set aside. , In a bowl, beat eggs well. Stir in sugar, salt and milk. Combine wafer/nut mixture with egg mixture. Pack into a waxed paper-lined 10-in. tube pan. Decorate top with reserved whole fruit and nuts. Bake at 325° for 45 minutes. Let stand 10 minutes. Run a sharp knife around edge; turn cake out of pan, then back over again so decorations are on top. Cake can be made ahead and frozen; taste improves with age.

1 cup chopped pecans
1 cup chopped walnuts
1 cup chopped raisins
1 (4 ounce) jar maraschino cherries, drained and chopped
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) package vanilla wafers, crushed

Steps:

  • In a medium bowl, stir together the pecans, raisins, walnuts, cherries, condensed milk and vanilla wafers. Dough will be very thick, you will need to use your hands.
  • Form dough into a ring shape on top of a dinner plate. Wrap in many layers of plastic wrap and/or aluminum foil. Allow to age in the refrigerator for at least a week. The flavors will have a chance to blend and all of the milk will be absorbed into the cake.

Butter the bottom and side of each foil covered loaf pan with butter. Do not skimp on this part.   • Place graham crackers in the bowl of a food processor and blitz until they become fine crumbs. Place crumbs in a large mixing bowl. Drain maraschino cherries, reserving 1 tablespoon of the juice. Slice each cherry in half and add to the graham cracker crumbs along with the reserved cherry juice.
  • Add the pecans, currants, dates, apricots, dried cherries, and crystalized ginger. Stir well to coat all of the ingredients in graham cracker crumbs. Add the rum extract and sweetened condensed milk. Use a sturdy spoon to stir mixture until everything is well combined. Transfer to prepared loaf pan and press the top down firmly to evenly pack mixture into the pan. Cover in plastic wrap and refrigerate overnight.
  • Remove pan from refrigerator, and use a warm wet rag to rub the outside of the pan. Invert the loaf out of the pan onto a serving platter.
